    TOFU SCRAMBLE WITH

    SPICY ZUCCHINI

    The secret to this vegan alternative to scrambled eggs might surprise you. Marmite, a food spreadmade from yeast extract, is an optional ingredient, but dont dismiss it until you try itwhat a differenceit makes when it meets tofu! (Vegemite works too.) Marmite is high in B vitamins and packs an unmistakable hit of umami, just the trick for amping up the somewhat timid avours of zucchini and tofu. Wedidnt include a quantity for the Marmite because its too sticky to measure conventionally. Just sticka clean fork into the jar and coat the tines about halfway, then press the fork into the scramble and letthe heat melt the Marmite as you stir. This recipe works really well as a lling for breakfast burritos.

    MAKES SERVINGS

    1 tablespoon olive oil1 cup zucchini, cubedKosher salt and fresh cracked black

    pepper6 to 8 cherry tomatoes, halved2 tablespoons chopped roasted red bell

    pepper (store-bought is ne)

    teaspoon hot pepper akes (or totaste)

    1 cup crumbled medium-rm tofuMarmite optional (see headnote)

    Heat the oil in a frying pan over medium-high heat (see Tip). Drop in the zucchini. Season with saltand pepper to taste. Saut the zucchini until browned, about 4 minutes. Transfer the cooked zucchinito a plate.To the hot pan, add the tomatoes, red pepper and hot pepper flakes and saut for 1 minute. Add thetofu and stir to combine. Stir in the Marmite (if using) and the cooked zucchini. Serve immediately.

    Tip: The key to cooking delicious zucchini is a hot pan so the cubes brown quickly before theyovercook. Think of it like searing meat for a stew.
