Dear Reader, It’s time to bring out the picnic basket and get ready
for those summer outings. Planning is half the fun, especially when
food is involved. Our goal with the Today’s Kidney Diet series is
to help you discover the great tastes for every season and occasion
while adding healthy proteins, and keeping phosphorus, potassium
and sodium within your targets. In this cookbook, we’ve pulled
together some of our favorite picnic recipes for you to try. Plan a
day in the park, by a lake or at the beach with Picnic Potato
Salad; Lisa’s Awesome Burgers; Grill Thyme Corn on the Cob;
lemonade made with our Lemonade Base; and many other recipes. We
hope these recipes inspire you to plan more outdoor fun with family
and friends this summer.

Chicken and Summer Vegetable Kebabs Portions: 6 Serving size: 1
large kebab or 2 small kebabs

1. To make the marinade, measure the peach jam into a small
microwave-safe bowl and heat for 10 to 15 seconds to liquefy. Add
the olive oil, lemon juice, Mrs. Dash herb seasoning and salt. Stir
until well blended. 2. Rinse the chicken thighs and pat dry with a
paper towel. Cut each thigh into 4 pieces and place in a zip-top
bag. 3. Add 3 tablespoons of marinade to the chicken pieces.
(Reserve 2 tablespoons of marinade to use on the vegetables.) Seal
the zip-top bag and refrigerate to marinate.
4. Cut the vegetables into bite- sized pieces for the kebabs
(zucchini: 8 slices; yellow squash: 8 slices; red pepper: 16
pieces; onion: varies). Place them in a medium bowl and add the
reserved marinade. Stir to coat the vegetable pieces. 5. Thread the
vegetables and chicken pieces onto skewers (4 large or 8 small
skewers). 6. Heat the grill to medium heat. Place the skewers on
the grill and cook covered for 12 to 15 minutes. Turn the skewers
two or three times to cook evenly.
Preparation
• 1 tablespoon peach jam • 2 tablespoons olive oil • 2 tablespoons
lemon juice • 1 teaspoon Mrs. Dash® herb seasoning blend • 1/4
teaspoon salt
• 1 pound boneless, skinless chicken thighs • 1 medium zucchini • 1
medium yellow summer squash • 1 red bell pepper • 1 medium

Lisa's Awesome Burgers
Recipe submitted by DaVita dietitian Lisa from New York.
Ingredients
1. Preheat the grill. 2. Finely chop the onion. 3. In a large bowl,
combine
the ground beef, onion, egg and Mrs. Dash seasoning until all the
ingredients are mixed throughout.
4. Divide ground beef mixture into 4 equal size patties.
5. Grill to the desired temperature and doneness.
6. Serve on hamburger buns. Add red onion, thin tomato slice and
lettuce if desired.

Ingredients • 2 pounds rainbow trout fillets • 1 tablespoon cooking
oil • 1/2 teaspoon salt
• 1 teaspoon salt-free lemon pepper • 1/2 teaspoon paprika
1. Preheat the grill on high heat. 2. Spray or brush the fillet
side of the trout fillets lightly with oil. Combine the seasonings
in a small bowl. Sprinkle evenly over the fillets.
3. Place the trout directly on the grill, fillet side down. Cook
for 4 minutes. Spray or brush the skin lightly with oil. Turn the
fillets over and cook until the fish flakes easily with a fork,
about 3 to 5 minutes.

4 Food Safety Tips for Summer Picnics 1. Practice proper handling:
Wash your hands frequently or use hand sanitizer. 2. Watch your
time/temps: Bacteria grows in food between 40° F to 140° F. Don't
allow food to remain in this zone for more than two hours. Carry
food in a cooler. 3. Mind your meats: Marinate meat in the
refrigerator, throw away excess marinade and thaw frozen meat in
the refrigerator or microwave. 4. Cover it up: Keep food covered to
avoid insects, as they may carry bacteria.

Picnic Potato Salad
1. Boil the eggs until they are hard-cooked. 2. To reduce the
potassium in the potatoes, peel the potatoes, cut them into small
pieces, cover them with water and bring them to a boil. Discard the
water and add fresh water. (Skip this part if a low-potassium diet
is not required.) Boil the potatoes until they’re tender but still
firm when punctured with a fork. 3. While the potatoes are cooking,
finely chop the celery, onion and bell pepper. Peel and chop the
hard-boiled eggs.
4. Drain the potatoes and place them in a bowl. Add the vegetables
and chopped eggs. Do not stir. 5. Mix the salad dressing
ingredients together; add them to the potatoes and toss gently. Top
with fresh chopped dill. 6. Cover and chill until ready to
serve.

1/2 red bell pepper

Preparation 1. Finely chop the garlic. Chop the onion and zucchini.
Shred the carrots. 2. In a large skillet, heat the olive oil over
medium heat. Sauté the garlic, onion, zucchini and carrots for 5
minutes. 3. Add the curry powder, chicken broth and salt. Bring to
a boil.
4. Add the orzo pasta and stir until the mixture returns to a boil.
Cover and reduce the heat to a simmer. Cook, stirring occasionally
for about 10 minutes until the liquid is absorbed and the pasta is
al dente. 5. Add the cheese, chopped parsley and frozen peas. Heat
until the vegetables are hot, adding a bit more broth if necessary
to maintain creaminess. Add pepper to taste.
Ingredients • 1 garlic clove • 1 small onion • 1 small zucchini •
1/2 cup carrots • 2 tablespoons olive oil • 1 teaspoon curry powder
• 3 cups low-sodium chicken broth
• 1/4 teaspoon salt • 1 cup orzo pasta, uncooked • 1/4 cup grated

Grill Thyme Corn on the Cob Portions: 4 Serving size: 1/2 ear of
corn

Ingredients • 2 tablespoons olive oil • 1 tablespoon grated
Parmesan cheese • 1/2 teaspoon dried thyme
• 1/4 teaspoon black pepper • 4 half-ear size frozen corn on the
cob
1. Mix the oil, cheese, thyme and black pepper in a shallow bowl.
2. Place the corn in the oil mixture and roll to thoroughly coat
the corn. 3. Place all four pieces of the corn in the center of a
heavy duty aluminum foil sheet. Pour any oil left in the bowl over
the corn. Top the corn with 2 ice cubes.
4. Double fold the top and ends of the foil to make a packet,
leaving room for heat to circulate. 5. Place the foil packet on the
grill over medium heat and cook for 20 minutes, turning once during
cooking.

Ingredients • 2-1/2 cups water • 1-1/4 cups sugar or granular sugar
substitute • 1/2 teaspoon finely shredded lemon or lime peel
• 1-1/4 cups fresh lemon or lime juice • ice cubes
1. In a medium saucepan, stir the water and sugar or sugar
substitute over medium heat until the sugar is dissolved. Remove
from the heat; cool for 20 minutes. 2. Add the citrus peel and
juice to the sugar mixture. Pour into a jar or pitcher; cover and
chill. This will keep for up to three days.
3. For each glass of lemonade or limeade, combine 3 ounces of base
and 3 ounces of water in an ice-filled glass. Stir and sip slowly
to enjoy. Freeze the leftover base in ice cube trays and add to
beverages instead of ice.

Watermelon Summer Cooler Portions: 2 Serving size: 3/4 cup

Ingredients • 1 cup crushed ice • 1 cup seedless watermelon cubes •
2 teaspoons lime juice
• 1 tablespoon sugar • 2 small watermelon wedges for garnish
1. Place all the ingredients except for the garnish wedges in a
blender and blend for 30 seconds.
2. Pour into two small glasses, garnish with wedges and
enjoy!

Red, White and Blue Pie Portions: 8 Serving size: 1/8 pie

1. To make the filling, beat the cream cheese and preserves with
until smooth with an electric mixer on medium speed.
2. Fold the whipped topping into the cream cheese mixture.
3. Spread the filling evenly over the bottom of the graham cracker
crust.
4. Arrange the blueberries around outer ring of pie. Layer the
raspberries around the inner ring of the pie.
5. Chill for at least 30 minutes. 6. Before serving, finish
decorating with a dollop of whipped topping in the center and a
raspberry or strawberry on top.
