Gluten-Free Puffed Oven Pancake

Portions: 4 Serving size: 1/4 pancake

1. Preheat the oven to 400° F.2. Place the butter in a 10-inch

ovenproof skillet or glass pie plate. Place in the oven for 3 to 5 minutes or until the butter melts.

3. In a medium mixing bowl, use a wire whisk or rotary beater to beat the eggs until combined. Add the rice flour, rice milk and salt. Beat until smooth.

4. Remove the skillet or pie plate from the oven. Immediately pour the batter into the hot pan. Bake for 25 to 30 minutes until the pancake is puffed and well browned. Check the middle to be sure the pancake is done.

5. Transfer the pancake to a serving plate and cut into 4 portions. Serve warm. Add toppings of choice. Suggested toppings include blueberries, raspberries, sliced peaches, sliced strawberries or applesauce. If desired, sprinkle the pancake with powdered sugar or top it with whipped cream or syrup.

1. Preheat the oven to 400° F.2. Peel and core the apple. Thinly

slice the apple and onion.3. Beat the eggs with milk, water

and pepper in a small bowl; set aside.

4. Over medium heat, melt the butter in a small, ovenproof skillet.

5. Add the onion and apple to the skillet and sauté until the onion becomes translucent, about 5 to 6 minutes.

6. Spread out the onion and apple mixture evenly in the skillet and sprinkle cheddar cheese over it.

7. Pour the egg mixture evenly into the skillet and cook over medium heat until the edges begin to set. Transfer the skillet to the oven and bake until the center is firmly set, approximately 10 to 12 minutes.

8. Cut the omelet in half and slide each half onto an individual plate. Serve immediately.

Artichoke Relish on Toasted PitaPortions: 16 Serving size: 2 tablespoons of relish on 2 pita wedges

Recipe submitted by DaVita dietitian Carol from Alabama.

1. Drain and chop the artichoke hearts and pimento. Thinly slice the green onions and mince the garlic clove.

2. Combine the artichokes, pimentos, green onions, Parmesan cheese, garlic, lemon juice, olive oil and pepper in a bowl, and mix well.

3. Cover and chill for 8 hours or overnight.

4. Preheat the oven to 350° F.

5. Split pita rounds open. Cut each half into quarters.

6. Place the pita wedges on a baking sheet, smooth side down and spray with cooking spray. Bake for 8 minutes or until lightly browned.

7. Cool the pita wedges and set aside in an airtight container until ready to serve.

8. Top each pita wedge with 1 tablespoon of Artichoke Relish.

1. Place the sour cream, cranberry sauce, nutmeg and ginger in a food processor and process until well mixed. Remove to a small bowl.

2. Cut the pineapple into bite-size pieces. Cut the apples and pears into 12 slices each. Toss the apple and pear slices with lemon juice to prevent browning.

3. Arrange the fruit on a platter with the dip bowl in the middle. Chill until ready to serve.

Crab-Stuffed Shrimp

Portions: 4 Serving size: 3 shrimp

1. Preheat the oven to 450° F.2. Finely chop the crab meat,

celery, parsley, onion and bell pepper.

3. In a bowl mix together the crab, bread crumbs, 3 tablespoons melted butter, celery, parsley, onion and bell pepper; set aside.

4. Spray a baking sheet with non-stick cooking spray.

5. Wash and devein the shrimp, and pat dry. (Frozen, deveined jumbo shrimp may be substituted—thaw before making recipe.)

6. Use a sharp knife to cut a 1/2“-deep pocket in the inner curved side of shrimp from the tail along the center, leaving 1/2” at end. Do not cut through the back of shrimp. Use your finger to widen the pocket.

7. Use about 2-1/2 tablespoons of the crab mixture per shrimp. Place the crab in the shrimp pocket and distribute to fill. Place the shrimp on a baking sheet. Repeat, preparing all the shrimp.

8. Brush the shrimp with melted butter. Bake for 10 to 12 minutes. Do not overcook.

9. Serve with a side dish of melted, unsalted butter if desired.

Ingredients

Roasted TurkeyPortions: 8 plus leftovers Serving size: 3 ounces

Recipe submitted by the DaVita dietitian team.

1. If frozen, thaw the turkey in the refrigerator for three days before roasting. Check plastic wrap on the turkey to determine cooking time.

2. Preheat the oven to 425° F. Remove the neck and giblet bag from the cavity of the turkey. Rinse the turkey with cold water, and then pat it dry with clean paper towels.

3. Using several fingers, loosen the skin from the turkey breast and drumsticks. Rub poultry seasoning onto the turkey flesh under skin. Place the parsley, sage, rosemary and thyme sprigs between the turkey skin and flesh.

4. Place a meat thermometer in the fleshy part of the thigh, without touching the bone.

5. Coat the turkey with melted butter (or oil) and place it breast side up in a roasting pan on a rack. Cover it loosely with aluminum foil. Cook for 30 minutes, and then reduce the heat to 325° F.

6. Begin basting the turkey every 15 to 20 minutes with the giblet stock and pan juices. During the last 30 minutes, remove the foil from the roasting pan. Cook for 3 to 4 hours until the meat thermometer registers 165° F.

7. Let the turkey rest for 30 minutes before carving.

• 1 tablespoon crushed or coarsely ground black peppercorns

• 6 pork loin chops, 4 ounces each

• 2 tablespoons olive oil

• 1/4 cup trans-fat free margarine

• 5 garlic cloves • 1 cup green and red bell

peppers• 1/2 cup apple juice

1. Press peppercorns into both sides of the pork chops.

2. Heat the oil, margarine and whole garlic cloves in a large skillet over medium heat, stirring frequently.

3. Add the pork chops and cook uncovered for 5 to 6 minutes.

4. Dice the bell peppers. Add the bell peppers and apple juice to the pork chops.

5. Cover and simmer for another 5 to 6 minutes or until the pork is thoroughly cooked.

Ingredients

Green Chili Stew Portions: 6 Serving size: 3/4 cup stew, 1 tortilla

Recipe submitted by DaVita dietitian Kara from Arizona.

1. In a large zip-top plastic bag combine the flour, garlic powder and black pepper; mix well.

2. Cut the pork into bite-size cubes. Place the pork in the bag and shake to coat well with the flour mixture.

3. Heat the olive oil in a large skillet and brown the pork pieces.

4. Drain the chili peppers and dice. Mince the garlic clove.

5. Place the browned pork, chili peppers, garlic and chicken broth into a slow cooker. Cook for 10 hours on low heat.

6. Place 3/4 cup of the stew on a tortilla and roll it burrito-style. As an alternative to burrito-style, serve stew in a bowl with a tortilla, bread or low-salt crackers.

7. Shred the lettuce and chop the cilantro. Top each serving with 1 tablespoon sour cream, lettuce and cilantro.

1. Chop the onion and celery; thinly slice the carrots and mince the garlic cloves.

2. In a large pot heat 1 tablespoon of olive oil over medium heat and sauté the onion, celery, carrots and garlic until tender. Remove from the pot and set aside.

3. Add the turkey and remaining olive oil to pot and cook until the crumbles are no longer pink.

4. Add the sautéed vegetables and remaining ingredients to the pot and stir.

5. Reduce heat to a simmer and cook for 1 hour. Stir occasionally to prevent the ingredients from sticking to the pot.

6. Remove the bay leaves and serve the chili over the rice or with low-sodium crackers. If desired, add red chili pepper flakes.

(Note: Pumpkin replaces tomatoes and tomato sauce in this recipe. Follow the recommended portion size to keep the potassium within an acceptable range for a low-potassium kidney diet.)

Ratatouille Portions: 16 Serving size: 1/2 cup

Recipe submitted by DaVita dietitian Robin from Connecticut.

1. Dice the onion, squash, eggplant, carrots and peppers. Mince the garlic cloves. Add the olive oil to large skillet, with the garlic, herbs, black pepper and carrots.

2. Cook for 2 minutes, and then add the rest of the vegetables, except the tomatoes.

3. Sauté well and stir frequently, 10 to 15 minutes or until the vegetables are semi-tender.

4. Add the tomatoes and Parmesan cheese, and mix well.

5. Simmer covered for approximately 1/2 hour. Serve hot.

Anise and Orange Biscotti Portions: 18 Serving size: 2 cookies

1. Preheat the oven to 350° F. Line a large cookie sheet with parchment paper.

2. Mix the first five dry ingredients in a large bowl and stir well.

3. Place the egg, oil and extract in a small bowl and beat until frothy, either by hand with a whisk or with an electric mixer for about 30 seconds.

4. Pour the liquid mixture into dry ingredients. Mix with a wooden spoon until the dough is mixed. Or, you can use a low speed on a mixer for about 1 minute.

5. Place the dough on a lightly floured board and shape it into a ball. Cut it in half.

6. Roll each half into a log that’s approximately 12“ long. Flatten the top slightly.

7. Place the dough on a cookie sheet and bake until it’s lightly golden, approximately 15 to 20 minutes.

8. Remove it from oven. Use a bread knife or other serrated knife, and slice at approximately 3/4” intervals to get 18 biscotti per half of the dough.

9. Place the sliced biscotti back on a cookie sheet with the cut side up and bake until lightly golden, approximately 5 minutes. Remove from the oven, turn the biscotti over and bake for 5 minutes. Remove from the oven and cool on a rack.

1. Preheat the oven to 350° F. Set the butter and cream cheese out to soften.

2. In a medium bowl combine the flour, sugar and baking powder.

3. In a large bowl combine the butter, cream cheese and vanilla; beat until light and fluffy.

4. Add the dry ingredients to the cream cheese mixture and blend well. Form the dough into a ball, wrap and chill for 2 hours.

5. There are two ways to roll out the dough. Method #1: Roll chilled dough to 1/4“ thickness on lightly floured surface. Cut cookies out with a 1-1/2” round cutter. Place 2” apart on an ungreased cookie sheet. Press center of each cookie slightly with

your thumb and fill center with 1/2 teaspoon jam befor baking. Method #2: Roll chilled dough to 1/8” thickness on lightly floured surface. Cut cookies out with a 2” fluted cookie cutter. Cut a small hole in the middle of half of the cookies. Sandwich the cookies together and fill the hole with jam before baking. Place 2” apart on ungreased cookie sheet. (Makes 24 cookies, serving size is 1 cookie.)6. Bake for 10 to 12 minutes.

Gingerbread Apple Cobbler Portions: 8 Serving size: 3/4 cup or 1/8 cobbler

1. Preheat the oven to 350° F.2. Peel and chop the apples.

Combine the apples, brown sugar, lemon juice, 1 cup water and 1/2 teaspoon cinnamon in a medium saucepan. Cover and cook until the apples are tender.

3. Mix the cornstarch and 1 tablespoon of water together and stir into the hot apple mixture. Continue cooking until the mixture thickens. Pour the apple mixture into a 1-1/2 quart casserole dish and set aside.

4. Add 1 tablespoon of vinegar to the milk and stir. Set aside.

5. Beat together the sugar, egg, milk mixture, molasses, corn syrup and oil.

6. In a separate bowl, stir together the flour, baking soda, baking powder, ginger and remaining 1/4 teaspoon cinnamon. Add to the beaten egg and milk mixture, and beat until smooth.

7. Pour the gingerbread mixture over the apples in the casserole dish. Bake for 30 minutes.

8. Serve warm with 1 tablespoon of whipped dessert topping or whipped cream.
