    CHNG 1: TNG QUAN NGUYN LIU MA

    1.1. Gii thiu v nguyn liu

    Ma l tn gi

    chung ca mt s loi

    trong chi ma

    (Saccharum), bn cnh

    duyn hi Min Trung v Ty nguyn; ng Nam b v ng bng Sng Cu long.

    1.2.2. ngha kinh t ca c cu ging ma sn xut

    Trong thc t ca i sng, rt kh c th chn c ging ma gi l l

    * Ging Comus (Aramboo x Q813)

    1.2.5. Mt s yu t nh hng n nng sut ma ng

    * Nhit : ma l loi cy nhit i nn i hi iu kin m rt cao.

    Nhit thch hp cho s sinh trng ca cy ma l 15-260C. Ging ma nhit i

    sinh trng chm khi nhit di 21 0C, ngng sinh trng khi nhit 130C v

    di 50C th cy s cht. Nhit thch hp cho thi k ma chn t 15-200C. T l

    ng trong ma thng t mc cao nht cho cc vng c kh hu lc a v

    vng cao.

    Thnh phn ho hc trung bnh khi ma chn dao ng trong khong sau

    Trong ng saccaroza l thnh phn quan trng nhtca cy ma v l sn

    phm ca qu trnh sn xut ng.

    1.4. Tnh cht l ho ca mt s thnh phn quan trng

    1.4.1. ng saccaroza

    Cng thc phn t C12H22O11 , cu to t hai loi ng n l glucoza v

    fructoza. Trng lng phn t 342,3 vC.

    Tnh cht l hc

    - Tn ti dng tinh th, trong sut, khng mu.

    - T trng 1,5879g/cm3, nhit nng chy 186 1880C.- ho tan:

    Tan tt trong nc, ho tan tng khi nhit tng.

    Trong dung dch ng khng tinh khit ho tan cn ph thuc

    fructoza ) th ngt hn dung dch ng saccaroza tinh khit. V glucoza + fructoza

    c ngt bng (74+173)/2 > 100 ( ngt ca saccaroza).

    (u tin tng chm sau tng ln rt nhanh); T l nghch vi nhit ; nghal khi tng nhit th nht gim.

    - Tc dng ca axit:

    Di tc dng xc tc ca axit, ng saccaroza b thu phn thnh glucoza

    v fructoza theo phn ng:

    - Tc dng ca kim:

    Saccaroza c tnh cht nh mt axit yu

    Trong mi trng kim nhit cao hoc nu kim m c khng cn

    nhit cao, saccaroza b phn hu thnh aldehyt, axeton, axit hu c v cc

    tp cht c mu vng nu. Mi trng c pH cng ln th saccaroza b phn

    hu cng nhiu.

    V d: Khi un si trong 1 gi ,nu dung dch ng saccaroza c:

    pH = 8 - 9 th saccaroza b phn hu 0,05%

    pH = 12 th saccaroza b phn hu 0,5%

    Cc phn ng phn hu v to sacarat gy nh hng xu n sn xut dolm tng tn tht ng v nht ca dung dch.

    - Tc dng ca nhit :

    Di tc dng ca nhit >2000C saccaroza mt nc to thnh cc cht

    caramen c mu t vng n nu en. Tu theo nhit khc nhau cho cc

    loi caramen khc nhau; khi ng b mt 10% nc gi l caramenlan; mt

    15% nc gi l caramenlen; 25% lng nc gi l caramenlin. nhit

    cao hn na saccaroza b phn hu thnh axeton v cui cng l Carbon.

    Phn ng to caramen lm tng mu ca dung dch ng non, ng

    thnh phm v mu ny kh loi.

    - Tc dng ca emzyme:

    Di tc dng ca enzim invertaza, saccaroza s chuyn thnh glucoza v

    fructoza

    Hoc chuyn ho thnh axt v CO2 nh:

    1.4.2. Glucoza v fructoza:

    - Tnh cht l hc:

    ho tan: ho tan ca glucoza v fructoza t l thun theo nhit .

    ho tan ca fructoza ln hn saccaroza v ho tan ca glucoza km hnsaccaroza

    ngt: fructoza > saccaroza > glucoza

    quay cc: glucoza c gc quay phi, gc quay cc ca glucoza l +52,

    80; fructoza c gc quay tri, gc quay cc ca fructoza l -92,80.

    - Tnh cht ho hc:

    pH=7. Nhng trong mi trng axit v un nng, ng kh cng b phn hu s

    to thnh oximetylfufurol v sau to thnh axit levulic v axit focmic.

    Khi un nng nhit 160-170oC, glucoza v fructoza b mt mt phn

    khc nhau. V d nhit < 55oC trong mi trng kim khng c nh

    hng g v phn ng phn hu glucoza v fructoza khng to thnh chtmu. Nhng nhit >55oC trong mi trng kim phn ng s sinh

    thnh cht c mu en, gy tc dng c hi.

    Trong nc ma, cc axit hu c c th dng t do, mui ho tan hoc khng

    tan, trong axit t do chim 1/3 lng axit chung. Gm cc axit sau: axit aconitic,

    axt citric, axt oxalic, axt glicolic, axt suxinic, axt fumaric ...

    - Trong sn xut ng, axit c tc dng chuyn ho saccaroza

    1.4.4. Cht mu

    - Trong cy ma cng cha cc cht mu nh trong tt c cc loi cy khc. Khi p,

    cht mu i vo nc ma gy kh khn cho sn xut ng.

    - Gm 2 loi:

    Cht mu c trong bn thn cy ma: nh dip lc t a,b. Dip lc t khng

    tan trong nc v trong dung dch ng nhng tan trong alcol v kim do

    d loi ra khi lm sch nc ma. Cn cc cht khc : xantophin, caroten,

    antoxian cng d loi trong qu trnh sn xut ng.

    Cht mu sinh ra trong qu trnh sn xut: gm cht mu caramen, cht mu

    melanoidin,

    phc cht gia polyphnol v ion st ... , nhng cht mu ny kh loi b.

    1.4.5. Cht khng ng v c- Cc cht v c ch yu l K2O, SiO2, Na2O, CaO, P2O5, MgO... Hm lng ca

    Lc , hm lng ng saccaroza v t l x thp, hm lng ng kh

    Ma sau khi thu hoch th hm lng ng trong cy ma gim, hm lng

    ng kh tng ln. Hin tng hao ht ng ny l do qu trnh h hp v do tc

    dng ca vi sinh vt gy ra. (Khi ma cha thu hoch cng c mt lng ng hao

    ht do h hp nhng lc do cn b r ht cht dinh dng v nh qu trnh tng

    hp nn b p c lng ng hao ht). Ma cng lu sau khi thu hoch th

    lng ng b mt cng nhiu.S tn tht cng tng nhanh khi nhit cao v

    ma ngoi nng gi. Do ma sau khi n xong th a vo ch bin cng nhanh

    cng tt.

    1.6. Qun l k thut i vi nguyn liu ma

    Thc hin cc bin php qun l k thut i vi nguyn liu ma nhm

    tn thu ng v gim gi thnh.

    Cc bin php qun l k thut i vi nguyn liu ma gm:

    - B tr thi gian p ma hp l. Tu theo ging ma, thi k chn, tngsn lng ma, nng sut thit b m chn thi gian p sao cho ng thi k

    sn xut ng, bi v:

    Tp cht khng c ng nhng khi p li i vo my p cng

    vi ma lm tng trng ti my p v li ht i mt lng nc ma nn lm

    gim hi sut thu hi ng.

    Trong tp cht c nhiu vi sinh vt v nhiu cht phi ng nn lm gim

    tinh khit ca nc ma. Theo kinh nghim , ngi ta thy rng khi tp cht

    1.7. Gii thiu v sn phm

    2.1. Chn phng php sn xut

    2.1.1. Chn phng php ly nc ma

    Trong cng nghip sn xut ma ng c hai phng php ly nc ma.

    l phng php p kt hp thm thu v phng php khuch tn.

    - Phng php p kt hp thm thu: nc (hay dung dch nc ng) c

    nhit xp x 600C c ti vo b trc khi b vo che p tip theo. Lng

    nc c s dng khong 200% so vi lng x ma, s dng vi h thng myp 4 trc. Phng php cho hiu sut khng cao thng ch t 95 97% hiu qu

    thu hi thp.

    - Phng php khuch tn: ly nc ma bng phng php khuch tn cho

    hiu sut cao, gim chi ph u t cho thit b, cho hiu qu kinh t cao. Phng

    php ny ch yu c p dng nhiu nhng nc cng ngh sn xut cao, tin

    tin, i ng cng nhn c trnh k thut cao, thao tc gii.

    Trong iu kin nn kinh t nc ta hin nay vi trnh sn xut ca cng

    nhn cn thp, trong qu trnh vn hnh s gp kh khn trong vic iu chnh v

    sa cha. Vi phng php p tuy hiu qu thp hn nhng li rt d vn hnh, ph

    hp vi trnh thao tc ca cng nhn, khi gp s c c th t iu chnh. Tuy c

    nhng hn ch nhng phng php p vn l thch hp hn. Vi nhim v thit k

    nh my ng th trong iu kin nn kinh t nc ta hin nay ti chn phng

    php p ly nc ma.

    2.1.2. Chn phng php lm sch

    Nc ma sau khi ra khi cy ma c tnh acid vi pH = 4.0 5.5 v cha

    nhiu tp cht khng ng khc. Do lm sch nc ma nhm trung ha nc

    ma hn hp v loi b cht khng ng, c bit l nhng cht hot ng b mt.

    loi b nhng tp cht th khng ha tan s dng cc loi ry c kch c

    khc nhau. Loi b cht keo, cn to cc iu kin keo t hay s dng cc chthp ph li ko cc cht keo ng kt ta, sau lng, lc loi cc kt ta ny.

    tan khng keo t nh cation kim loi kim hay cc anion d tan th s dng cc ct

    trao i ion.

    - Phng php vi : y l phng php n gin v c p dng t rt lu.

    Nc ma c lm sch di tc dng ca nhit v vi, thu c sn phm ng

    th. Phng php vi s dng sn xut mt trm, ng ct vng

    - Phng php sunfit ho cn gi l phng php SO2, v s dng lu hunh

    di dng kh SO2 lm sch nc ma. Thng dng sn xut ng trng RS

    c th dng sn xut ng th pol cao.

    - Phng php cacbonat ho phng php ny s dng kh CO2 xng vo nc

    ma loi cc cht khng ng, phng php cacbonat ho dng sn xut RE.

    C 3 phng php lm sch trn u cho nhng hiu qu, tuy nhin tu vo

    iu kin v tnh cht ca sn phm m c phng php x l thch hp va m

    bo cht lng thnh phm, va nng cao hiu qu kinh t cho nh my. sn

    xut ng th th chn phng php vi hoc phng php sunfit ho kim nh.

    Cn phng php CO2, v cc phng php SO2 khc c s dng sn xut

    ng trng v ng tinh luyn.

    Trong qu trnh lm sch, vi ng vai tr l cht phn ng chnh to ra kt

    ta c tnh hp th nhm kt lng cc cht keo, cht khng ng lm trong nc

    ma. Vi cn l cht st khun tt c kh nng hn ch s pht trin ca vi sinh vt

    trong nc ma. Nc ma c lm sch da vo tc dng ca vi, hiu qu lm

    sch khng cao, cht lng sn phm mc trung bnh. Phng php gia vi c

    chia lm 3 loi:

    - Phng php cho vi vo nc ma lnh

    a nc ma hn hp vo thng trung ha, ri cho sa vi vo khuy trn

    u sao cho PH = 7,2 - 7,5. Sau un nc ma gia vi n 102105 oC, ri

    lng thu nc lng trong, nc bn a i p lc tn thu.

    - Phng php cho vi vo nc ma nng

    un nc ma hn hp n 105oC lm ngng t mt s keo. Cho vi vo

    thng trung ha khuy trn u kt ta c hon ton, sau loi cht kt ta

    thit b lng.

    - Gia vi phn on

    y l phng php ti u nht ca vic lm sch nc ma bng vi. Cho vi

    vo a hn hp nc ma n pH = 6,4 sau un si hn hp (t = 105 110 oC),

    tip tc cho vi vo n pH = 7,6 ri li un si tip tc (t = 105 110 oC).

    Phng php gia vi phn on tit kim c 35% lng vi so vi phngphp cho vi vo nc ma lnh, rt ngn thi gian lng, tinh khit nc ma

    tng, hiu sut lm sch tt. Phng php cho vi vo nc ma lnh c hiu sut

    lm sch thp nht trong 3 phng php v tiu tn nhiu vi nht. Cn phng

    php cho vi vo nc ma nng th mu nc ma d b m v so vi phng

    php cho vi phn on th vn s dng nhiu vi hn. Phng php cho vi phn

    on nhiu u im hn c trong 3 phng php vi, va cho hiu qu lm sch tt

    li s dng t vi nht.

    2.1.3. Chn ch nu ng

    Mc ch ca qu trnh nu ng l tch nc ra khi mt ch, a dung

    dch n trng thi qu bo ho thc hin qu trnh kt tinh ng. Sn phm sau

    khi nu ng l ng non v mt ci. Trong sn xut ngi ta thng p dng hai

    ch nu ng, ch nu gin on v nu lin tc.

    Nu lin tc cho hiu qu cao hn nu gin on nhng u t ln hn, thit b

    phi hon ton nhp ngoi v yu cu cng nhn c trnh k thut cao, vn hnh

    h thng tt v h thng nu lin tc c cch vn hnh phc tp. So vi phng

    php nu lin tc th nu gin on cn nhiu hn ch thi gian nu di hn, hiu

    sut khng cao, kh c gii ha. Tuy nhin vi tnh hnh nn kinh t thc t sn

    xut nc ta hin nay l rt ph hp. Do trnh vn hnh ca cng nhn cn thp

    nn trong qu trnh nu khi gp s c c th x l d dng.

    Chn ch nu ng da trn c s tinh khit ca mt ch sau khi lm

    sch, yu cu cht lng sn phm, trnh thao tc cng nhn v tnh hnh thit b

    nh my. nng cao hiu qu sn xut v vy khng th s dng ch nu 2 h.

    Cng on lm sch nc ma s dng phng php vi nn tinh khit khng

    cao nn khng cn n ch nu 4 h, mt khc nu 4 h i hi trnh thao tc

    Nguyn liu nu non A l mt ch, ng h B v ng ct C ha tan.

    Nguyn liu c cp vo ni tng m, nhit nu khong 70 - 72oC, thi gian

    nu ng A khong 2- 4 h/m, cc giai on ca qu trnh nu :

    Nguyn liu nu non C l mt ch v mt B, cc nguyn liu ny c cho vo

    nu 7275 oC. Lng ging cho vo khong 2223% so vi ng non C, thi gian

    nu non C khong 812h/m.
