j u l e k a k e, or Christmas bread This recipe is more like a cake than other j u l e k a k e recipes.from Astrid Karlsen Scott’s Authentic Norwegian Cooking.Makes a delicious treat for the holidays.• 1-1/8 cups butter • 4 tsp. baking powder• 2 cups sugar • 2 cups coffee cream• 3 eggs • 7/8 cup finely chopped citron• 4 cups flour • 1-1/8 cups raisins• 1 tsp. cardamom• 4 tsp. vanilla sugar (vanilla bean + sugar)Cream butter and sugar until light and fluffy. Add the eggs, one at a time. Mix flour (save out a little to mix with fruit to prevent it from sinking to bottom of pan), cardamom, baking powder and vanilla sugar and add to butter mixture alternately with cream. Add fruit and stir well. Preheat oven to 350ºF. Grease two loaf pans and line the bottoms with wax paper. Pour batter into pans and bake 1 hour. Cool on rack. Makes 2 loaves.

He joined the Sons insurance field staff in 2013,and covers a territory across North Dakota and Minnesota. Dan went to college at UM-Crookston and MSUM, concentrating in business, political science and print journalism. He previously worked at The Forum newspa-per for many years. As a youngster, he enjoyed his mother’s lefse and other holiday treats. He has two children, Jonathan and Delana.

Some Norwegian Christmas traditions that did not immigrate to America Some of our Christmas traditions and the ways we Norwegian Americans cel-ebrate Christmas can often be traced back to our Norwegian heritage. However, there are Norwegian Christmas traditions that did not immigrate to America with our ancestors or we have forgotten how to celebrate them. Santa Claus does not distribute Christmas gifts to good girls and boys in Nor-way. The Julenisse does that in Norway. In Norway, the farm Nisse is a household spirit that is responsible for the care and prosperity of the farm and the farm family. The nisse lives in the barn and looks out for the welfare of the family. In the 1840s, the farm nisse became the deliverer of Christmas presents and was then called the “Julenisse” and has been associated with Christmas ever since. The Julenisse does not come down the chimney during the Christmas night, but arrives through the front door, delivering the presents directly to good girls and boys. In Norway, the Christmas tree is not brought into the home until a few days before Christmas. Then it is usually placed in the middle of the living room. The reason for this is that in Norway it is the custom for the people to hold hands and walk around the Christmas tree as they sing Christmas carols. That tradition did not migrate to America, possibly because most of the homesteaders’ homes in America did not even have a living room! After the Christmas Eve dinner, it is the tradition to sing Christmas carols as the family walks around the Christmas tree. In the midst of their walking and singing, there is loud knocking on the front door. When the door is opened, there stands the Julenisse with a big bag of presents on its back. The first question the Julenisse asks is “Er det noen snille barn her i huset?” Are there any well behaved children here in this house?” Of course, the children all answer a hearty “Yes” and then the presents are distributed. A few years ago, after the Julenisse had left our friend’s home in Norway, their eight-year old grandson said privately to his grandmother, “I saw that the Julenisse had Grandpa’s shoes on, but I will not tell my little sister about that. She thinks that the Julenisse is real!” Another very meaningful Christmas tradition was started in Norway during the Second World War. In most congregations, a late afternoon worship service is held. By the time that the service is over, the mid-winter darkness has already crept in. The worshippers bring glass-enclosed candles that are lit at the end of the wor-ship service. As they leave the church, the parishioners place those lighted candles on the graves of their relatives, in that way remembering them on this most holy day of the year. It is a beautiful and memorable sight as the people head home for their Christmas Eve dinner, leaving the candle-lit cemetery alight with the Christmas candles on the graves of relatives. There is also a worship service on Christmas Day. At that Christmas Day service, the parishioners pick up the candles that they left at the graves of their departed family members the day before. One Christmas custom that did cross the ocean to America with the immi-grants survived for more than a century in America, is Julebukking. I know that that custom was “alive and well” in the Norwegian immigrant community where I grew up. Sudden pounding on the door of our home, loud singing, or a noisy commotion told us that the Julebukkers were on a visit to our home. All the merry-makers were dressed up in strange attire, usually with masks so it was difficult to see who the visitors were. The Julebukkers, literally, the “Christmas goats” were there and it was our task to name each person so they could be un-masked. When I was very young, it was a very scary evening, but as I grew older, I participated in the fun of Julebakking. Originally, I am told that it was a way for the people to “check up on their neighbors” -to see that all was well with them, that they had enough food and their homes were well-heated, etc. That was never the purpose during my “Jule-bukking days” – it was pure fun at that time and that is also true in Norway today. In recent years, the custom of going Julebukking has nearly completely vanished in America, but I am told that in many areas of Norway it is still very popular. Kringen Lesering – Book Discussion Group The Kringen Lesering will meet on Monday noon, December 11, in the Lounge. Our December selection is Kathleen Stokker’s Folklore Fights the Na-zis: Humor in Occupied Norway . . . 1940-1945, pub-lished by the University of Wisconsin Press. Armed with jokes, puns and cartoons, the Norwegians tried to keep their spirits high and foster the Resistance by poking fun at the occupying Germans during World War II. Despite a 1942 ordinance mandating death for the ridicule of Nazi soldiers, Norwegians attacked the occupying Nazis and their Norwegian collabora-tors by means of anecdotes, quips, insinuating per-sonal ads and children’s stories. Our January selection is Irene Levin Berman’s Norway Wasn’t Too Small: a fact-based novel about darkness and survival, published by Hamilton Books in 2016. There are copies of these two books in our Kringen Library for one-week check-outs. They are also available for purchase at Zandbroz Variety on North Broadway in Fargo.
