You say the word “Satu-rate” to area music fans andimmediately the responsesgo like this (and in no partic-ular order):

“OMG…Saturate’s music isfreakin’ awesome!”“Theirhair is so cool.” (As if fiveguys have onehead…)“Saturate is thenicest band EVER!”

Since 2005, the alternative rock/metal bandfrom Baytown has endeared themselves tolocal, regional and national fans by puttingout quality music and being genuine and ac-cessible. Their debut CD “Soul Element” wasreleased independently in August 2008, andtheir follow up “The Point Of No Return”(iTunes, CDBaby.com) was released last year.

In the midst of a very busy performanceweek, vocalist Jimmy Miller took some timeout to speak with The SCENE about the latestevents in Saturate’s world.

The band has just wrapped up a videoshoot for the song “Keep Digging” and Millerhad this to say about it, “The concept is in thelyrics. It's very straightforward about the storybeing played, although there are layeredmeanings, the song was meant to paint a pic-ture. We have talked about mid-April releasedate, but we don't want to rush anything so

the MartinezBros (Twiz-ted Twinz)will let usknow whenthey're donewith post-production,and we’ll gofrom there.”

Accordingto Saturate’sofficial Face-book page,it looks likethe bandhas some-thing newand innova-tive in the works “on the road to our thirdrecord.” Miller elaborates, “We were approvedthrough the team at www.kickstarter.com tobegin a fundraiser of sorts where when peo-ple donate different amounts they get moreand more from us in return. In effect, they'reinvesting in us as a band, but specifically tothe creation of our third record...and gettingsome pretty cool incentives for getting in-volved. Like pre-releases of our new music,signed albums and/or acoustic guitars, and alot of other different things we thought peo-ple might like to get a hold of.” (More detailscoming soon.)

year on the food and musicSCENE. This month, we caught acouple of our new favorite newbands, South Coast and Moon-dog along with the venerableMichael Stevens Band on thenicely lit swamp shack stage – Cameras love good lights! Bakkhus scoredan over-the-top March kicking off Krewes into Kemah with Samone andThe Superstars on the patio for what we call a unique recipe of zydeco,funk and fusion as zippy and spine tingling as the recipes served up byDemetrios’ great team. You might have to wait until next year to catch Sa-mone and The Superstars, but you can always score a great lunch or din-ner at Bakkhus now. Readers have been following our coverage ofMagazine's CD "It Ain't That Bad" and topping it all of on the serene (Cock-eyed) Seagull patio with a fine sounding release party. We wish Justin andAmber well as they explore new developments on the west coast and

With an English teaching and construction background, howdoes a gal from Crossett, Arkansas end up owning a wine bar inClear Lake? Withvision and hardwork, saysSuzanne Street-man, who hasbeen serving upquality wine andpremium drinksalong with a de-lectable bar foodmenu since 2008.

Yet the most im-pressive thingabout Allegria Wine& Cocktail Lounge is the atmosphere — but don’t let the strip cen-ter facade fool you. Rich terra cotta walls, cozy corner nooks, sofasand an assortment of dining tables and chairs — akin to your bestfriend’s living room — the dim lighting, carpeted floors and lowsound-blocked ceilings are a far cry from today’s polished concreteand exposed duct work that produce a high noise level. The goodsounds you will hear at Allegria are when CindyThomas is at the keyboard or Ronnie Stallworthis making magic on his saxophones. Bistro tablesare available in front of the entrance where evenFido is welcome (pet-friendly outside).

Streetman’s vision was not spontaneous. Sheloved to cook and entertain, but was not cer-tain what to do with those talents. After achance outing to a popular wine bar in Hous-ton a few years ago, she thought, “this is it.”But it didn’t stop there. Streetman visited a mul-titude of wine bars and studied every aspect ofdecor, design, noise level, ambiance, menus,and wine selections. “I had been developingan education in wine over the years through

my many trav-els,” says Street-man who alsotook wineclasses be-tween trips toBordeaux, Tus-cany, Napaand other wine-growing regions across the globe.

“Every week, I do wine tastings with my wine reps,” saysStreetman, who even gets visits from wine makers. Saying sheis not “Napa-heavy,” she keeps about 60 wines in stock —from international to organic to kosher. Premium liquors avail-able at Allegria are the basics: scotch, rum, gin, bourbon,vodka, tequila; also cognac, port and Irish Creme. Specialtymartinis include: dark chocolate, French vanilla and the Alle-gria 357 (their version of the Cosmo) and a killer Negroni

(Campari, sweet vermouth and gin).

Allegria offers a wine tasting class every Tuesday evening(please RSVP). The classes are always different and the wine tipseducational (what wine goes best with bar-b-que — or evencrawfish). The cost is $20. Smoked salmon pate is on the foodmenu these days along with Italian flatbread pizza (order the

“skinny” version ifyou are countingcalories), cheese andantipasto platters.Saying that shechanges the appetiz-ers around often,Streetman will soonbe offering a cru-dites plate with acreamy tarragon dip.

Saturate: Continued From Page 56And about that third album, Miller says, “I think everyone

that knows our first two records has realized that our sound isall over the map sometimes, so we definitely want to reassurethe fans that this new record carries that on in breaking newsonic ground for us as a band. And, compared to what we’vedone before, I think we would all agree that this time, it’s per-sonal. Much more personal to us than anything we’ve done.It’s also the first time that the full band (all five members) is par-ticipating in the creation of every song on the disc, and it’s alsolooking to be our first under 10 tracks. The songs we do haveus all really excited about the album, and we’ve started tobring them into the live shows.”

Miller says there is nothing official as far as who Saturate maybe touring with this summer (at least at press time), but it lookslike they will be “hitting the road” in late June.

So maybe the title isn’t exactly all that cre-ative, but it is one of the better descriptivewords I can use for one of Texas’ biggestbands.

They were at Katie’s Bar in Bacliff lastmonth and of course it was standing roomonly. If you haven’t seen the trio, you maywant to keep an eye out for their gigschedule and catch them before they goback to tour Europe – for the fifth time.

The Mighty Orq is a rock band in ageneric sense. Their real sound is foundwithin the nuances of their original songs…A little bluesy, sometimes melodic, a South-ern tone and mostly seductive guitar riffs.The band sounds so good. I really didn’twant them to stop playing even though Idid understand the need to down theobligatory free shot of liquor!

Bassist Terry Glen Dry saluted Katie’s Barby offering thanks for the ability to smokeinside. The crowd loved it. Drummer MattJohnson was situated at the back of thestage. He may have been a bit harder to see, but his ability to playwas easy to notice. Rounding out the trio is guitarist and lead vo-calist Mighty Orq. You know I had to ask Mighty Orq why he wascalled that. I told him inquiring minds wanted to know…

Here is what he said, “It’s partly it's because I've been called 'Orq'for almost 20 years as a grade school nickname. Partly it's mys-tique to tantalize inquiring minds.” (Wink.) “The 'Mighty' cameabout when I played in the Tony Vega Band. Tony started intro-ducing me as 'The Mighty' Orq, and I thought it sounded cool.”

It does sound cool, but it’s on my bucket list to get his real name.(Yes, I am stubborn like that.)

Another unique item to note is The Mighty Orq’s band logo. The

logo has a buzzard that looks like it hasbeen around the block a few times, butcame out victorious with a (bad to the)bone in its mouth. Once again, we turn toMighty Orq and ask about the buzzard’ssignificance.

“We came up with the buzzard logo ashomage to our Texas roots. It's maybe a lit-tle bit ZZ Top a la the "Tejas" era and a littlebit Willie Nelson a la always. He's namedDon Condor. It's a combination of the'Don' from Don Julio Tequila and 'Condor'as a bit of irony. He's a scruffy fella and notmuch of a condor.”

The Mighty Orq is a busy group. Theyperform over 200 shows a year. In 2003,Orq released a solo/acoustic album “PrayerBook.” And the band has released a live CD(“Ghost Train” in 2004) and two studio CD’s(“Milk Money” in 2005 and “To The Bone”in 2008.)

So, what's up for the band in 2011?Glad you asked because here is MightyOrq’s answer:

“2011 is gonna be a busy year for us. We'll be heading back toEurope for our fifth tour there. Last year we recorded a live albumin Germany, and it will be released on the German label Pepper-cake Records who also released our last album. Additionally, we'llbe recording a new studio album this year, and hope to have itout by late 2011 or early 2012. Matt and I have been playing to-gether for the last eight-and-a-half years and now with Terry in thebass chair (since Fall 2010), we feel a renewed sense of excitementabout being on the road and going into the studio.”

You know how sometimes life isfull of surprises? Good ones. Well,this is one of those good sur-prises. For the past couple ofyears, Chris Hardy is the man be-hind the gas mask in the ClearLake bands ERASEtheVIRUS and ADigital Death. In fact, both bandshave been covered in The SCENEMagazine... Just recently Hardyannounced he was leavingA.D.D. to pursue a solo career. Re-ally? But A.D.D. just signed arecord deal? Solo? I didn’t knowhe sang. So many questions thatneeded to be answered andHardy was happy to oblige. This iscool. Keep reading.

Hardy was always hamming itup as a kid. He is a little more re-served now, but not much – youknow it’s the quiet ones you haveto watch right? Growing up, hewould play the air guitar or grab atennis racket for make believe musicand even used a flashlight for a microphone. (There have got to bephotos of that somewhere.) “I always knew I wanted to play theguitar,” he says with a smile. So at 14 years old, Hardy taught him-self how to play on an Ibanez guitar. He played every day and wasexposed to various styles during the ten years he worked at GuitarCenter. Hardy will tell you he has an appreciation for all styles ofmusic. “They make me into the musician I am now,” he states.

Eventually, he had a four-year stint with a popular local band.They broke up, became a new band and then the opportunitycame up to be signed to a record label. But instead of signing, hetakes a leap of faith and amicably leaves the band to pursue a solocareer. Ok. Wait, what?

Hardy became “the man who sold his rock and roll to finallyhave a soul.”

“I have taken many long roads to find myself back where Istarted. With an acoustic guitar in one hand and microphone inthe other,” Hardy says. “I am now following my heart.”

He started to sing about a year and a half ago. Friends started totake notice. They provided enough support for Hardy to push him-self, and he began playing open mic nights here and there whilegaining the confidence he needed.

His heart led him to follow his gifts and talents. Hardy justrecorded a 13 track CD with Mike BBQ at Big Door Studios in Web-ster last month. He actually recorded 15 tracks in one day! Live inthe studio with virtually no retakes. These tracks are simply amazingand Hardy is way past talented on the guitar. He is phenomenal.

The CD will be released in lateApril or May and is titled “WineStains.” It’s a unique title and verypersonal to Hardy who is a wineexpert. It’s not only his job, but an-other passion. His life memories areinter-twined with wine.

Some of the songs on the CDwere written seven years ago andsome were written just a monthago. The lyrics are a good mix oflove and life. All sung with abreathy deep voice that shineswith emotion as he holds thenotes. It’s heart wrenching whenhe sings about love that has gonewrong.

The music is beautiful, masterfuland intricate. The guitar is as fluidas a piano! Hardy’s innovativearrangements and narrativemelodic lines will have him earnthe recognition as one of this area’smost prolific singer/songwriters. Iam serious.

The song names are so interesting too. “Dreams, Creatures andMirrors,” “Wine Stains (So do you),” The Last Night Stand,” “There &Black Again,” “Rainbow Blues,” “Nostalgia,” “We’re All Thumbs,”“Upside of Backwards,” “Final Picture,” “Shower Song,” “Tacoma,”“Witch Me” and “Lullabye-bye.”

Interesting notes: In “Shower Song,” we actually hear a showerrunning in the beginning and the end. It’s a short fun song that’sabout being your own rock star. “Witch Me” has sensual lyrics andis probably my favorite (not because of the lyrics! Well, maybe!)Hardy sings “I can be gentle or I can be sinful, ‘witch’ me do youwant tonight?” “Lullabye-bye” is an all-instrumental dream se-quence. And in “Tacoma,” Hardy personifies his guitar. “She” is likethe girl that never left and stuck with him in the hard times. It’s oneof his oldest songs on the CD.

Hardy says he chose these songs on his first solo album to “pur-sue a beautiful, more positive side of life and attract that karmaback.”

So Chris Hardy has evolved into Chris J. Hardy now. It’s going tobe satisfying to be present in the beginning and watch Hardy gainmore attention as an artist. It’s well deserved and as he so elo-quently says, “There seems to be no stopping the power andbeauty that has finally and triumphantly been revealed.”

Originally conceived as a small pizza pub, Jackie'sBrickhouse opened shop in the same building as HeadsN' Tails. When Heads N' Tails decided to close its doors,the Brickhouse took the plunge and acquired the entirebuilding. Though a risky move, in just seven monthsJackie's Brickhouse has revamped the entire property,creating a full service restaurant, sports bar and enter-tainment facility, with nightly live music, a variety of pubgames and a fun, family-friendly environment.

"I am so proud of my staff," proclaimed local ownerJackie Powell. "Not only have we become a team, butwe are more of a family here. Most of them call memama."

A true cinderella story, Jackie's Brickhouse has over-come many pitfalls in its quest to become what it istoday. With her customer base ranging in age from their late 20sto 70s, Streetman is happy that wine bars are a growingtrend. Sports bars have their niche but seemingly wine enthu-siasts are establishing their own clique that is spreading rap-

idly. With house music by the likes of Sinatra and a retro am-biance straight out of the 1950s and ’60s, the only thing miss-ing is the smoke (permitted outside only).

Allegria (Spanish and Italian for “happiness”) consumes mostof Streetman’s time, but this fall, she is self-prescribing her owndose of happiness when she takes off for a long overdue tripto Paris. She will rise before the crack of dawn to peruse LesHalles de Paris, the traditional French marketplace where shewill devour delicate pastries, drink strong coffee laced with co-gnac, buy fresh herbs and wave to the fish mongers. Whatcould top that? Spain, she says. “That’s next on my list.”

The Kemah Crawfish Festival showcases the sights, themusic, great tastes, and above all, the fun that is Kemah,the Gateway to the Bay. The three-day festival takes placeunder the iconic Kemah Bridge, truly welcoming all intothe city. In addition to serving hot, fresh crawfish at $2 apound throughout the festival, Kemah will also offer tastyCajun dishes and classic festival fare. The area’s hottest Zy-deco, Classic Rock, and Country bands provide the infec-tious rhythms where the bayou meets the bay. The boatlaunch will be transformed into The Pirate’s Cove withcostumed performers and activities. Marie Laveau willbring Voodoo magic and mystery. Crawfish races, craw-fish eating contests, and more will continue throughoutthe event. Performers will mingle with vendors of gifts,arts and crafts. A children’s area will provide plenty of ac-tivities and fun for kids. All of Kemah will join in present-ing their city, their food, their music, and all that makeslife here so special. The Kemah Crawfish Festival takes thefriendly, relaxed fun and community feel of a small town fairand, like the City of Kemah, serves it up big.

$2-A-Pound Crawfish: The festival is bringing in the bestfarm-raised crawfish the state of Louisiana has to offer at agreat price when the season is really getting underway andthe craving for crawfish is at its peak. The crawfish will be han-dled by James Wimberley, the Cajun King of Cookers. Jameswas born and raised in southwest Louisiana in the heart ofCajun country, and has been farming and cooking crawfishand Cajun food for more than 35 years. Legend has it, hecaught his first crawfish when he was only 3. From that auspi-cious beginning, he has grown to farming his own fresh craw-fish on 2,000 acres in Eunice, Louisiana. Creating his ownspicing secrets, he is in high demand as a crawfish boileracross the Gulf Coast. The secret of his spices and methods arehotly pursued by many, but never duplicated. James is one ofthe top boilers at Festival International in Lafayette, festivals

from Texas to Alabama, and has catered at the Louisiana Gov-ernor’s Mansion.

The Site: The Kemah Bridge is one of the best known land-marks of the Bay Area, where Clear Lake meets Galveston Bay.A large, level, paved area that serves the public boat ramp pro-vides a natural site for festivals. The bridge provides a strikingbackdrop as well as shade for patrons. The area will be deco-rated with nets, crab traps, boats, hawser and other nauticalelements.

You don’t need to know the differencebetween the “main” and the “jib” to enjoyand appreciate the Bay Area’s most beauti-ful spectator sport, sailing.

Few places anywhere have the kind ofsailing community that is found in the BayArea. This area is home to competitive sail-ing programs and races run by a numberof yacht clubs and local sailing associations.For anyone who loves to sail, who couldask for a better place to live or visit than the Bay Area.

But sailing is also a fabulous spectator sport, and the Bay Area of-fers residents and visitors the rare opportunity to enjoy the impres-sive sight of sailing up-close and personal during the WednesdayNight Races on ClearLake, which returns onApril 6 and will behosted by Villa Capri.

The popular races,now starting their33rd year, feature nu-merous classes ofboats on the lake andthe bay. Buddy Brownof the Clear Lake Rac-ing Association, organ-izing authority for theevent, said, “We areexcited about Villa Caprihosting the races. Anyone who has been to Villa Capri knowswhat a beautiful property they have on the lake front. There arelots of trees and a garden walk that leads down to the water’sedge. Even on the warmest days, the trees surrounding the patioprovide cool temperatures and plenty of shade.”

As host, Villa Capri will offer the best view of the races with the startand finish lines directly in front of the club in the prevailing southeastbreeze. There will be live commentary, drink specials, random awards,and a special, Wednesday Night Menu to go along with the beautifulviews and action. For the sailors, 2011 brings new, more relaxedcourses to go along with the challenging courses of years past.

“I had the chance to race in my own event last year, and I wasquite surprised at the intensity,” Brown explained. “I knew I had setup some short courses, but it was more intense than even I thoughtit would be. We’re keeping the challenging courses, butto balance it out a bit, we’ve added some longer coursesaround the lake to introduce more relaxing moments.”

Also known as “Beer Can Races” around America,Wednesday Night Sailboat Races are generally more re-laxed, but Clear Lake’s version has become a great wayto tune up a crew’s teamwork or get involved in thesport for the first time. Introducing some longer, morerelaxed racing into the series will allow skippers to invite

newbiesalong for aride withoutworrying toomuch aboutthe continu-ous scramblefor the nextupcomingmaneuver.

“Who knows,” said Brown,“they might even be able toopen a cola and finish it be-fore the next mark.”

Anyone wanting to get in-volved can sign up on theweb site, www.clearlakerac-ing.com, and filling out the “IWant To Crew!” form. Afterthe race, the sailors put theirboats away, and then arrive back at Villa Capri to socialize, talkabout the race, review the race video, and collect their awards forthe night. Anyone wishing to rub elbows with the local sailingcrowd might use this opportunity to get into the sport.

Clear Lake’s version of the Wednesday Night Sailboat Races isquite unique with turning marks set just yards away from the spec-tators on land. With the marks set so close, it is easy to watch theteamwork, sail changes, and listen to the exchanges betweenboats, which sometimes can be comical.

Combined with thegreat food, drinks, andservice, and the garden-like atmosphere of VillaCapri’s patio, the raceswill serve as a greatplace for an escape fromthe work week. See youthere!

Lakewood YachtClub Race CommitteeChairman DwightBengtson has an-nounced that theHeald Bank Regattahas been scheduledfor the weekend ofApril 16-17.

This race, which isopen to the public, isheld offshore in theGulf of Mexico start-ing at the Galvestonjetties, marker 11.The race begins onSaturday afternoon and finishesearly on Sunday morning. Spin-naker boats will sail a trianglecourse of approximately 85 nauti-cal miles while the non-spinnakerboats will sail a two legs reachingcourse of approximately 60 nauti-cal miles.

“This should be one of the mostfun nights of racing that one canexperience offshore south ofGalveston,” related Bengtson. “It isalso a good warm up for thelonger distance races held in theGulf such as the Harvest Moon Re-gatta coming up October 13-16of this year,” he added.

Past Commodore TonyWessendorff stated that the silverlevel sponsor for the Heald Bank Re-gatta is Sea Lake Yacht Sales. BayAccess, a not-for-profit organizationcreated to foster amateur racing, isalso a sponsor. Wessendorff alsoadded that racers should know thatPHRF certificates are not requiredfor the cruisers class.

Style Column: Continued from Previous PageWe hire models based on the type of shoot. If a live video is

being recorded we need a model whose hair looks great on cam-era, no matter her size or height. But for this particular still shootwe were using “vanishing point” concept where we utilized parallellines that seemed to converge. Such as hallways, escalators, etc.So we needed the tallest, thinnest frames we could find. If their hairdoesn’t suffice for us, we use wigs!

The shoot was an exhausting four days, with four models. Wedid hundreds of shots throughout the convention center, whichproved itself to be an awe-inspiring location. We took photos withModern Salon staff, and filmed internet commercials and other vari-ous promotional materials. It was very exciting, and we justcouldn’t wait to find out all that was in store!

By September, we finally started to see some of the ads in themagazines. It was “the escalator shot” and turnedout to be the first of a series of teasers that would

trickle out over the nextseven months. Each month,a new photo would surface

and thegiddy feel-ing wouldarrive yetagain. Iloved flip-ping

through the magazines andseeing all the hard work wehad done come to fruition.Then, come January, I find outthat one of my styles made thecover of the program! Wenever know what final deci-sions the art director makes on

what photo to use. They might prefer a certain color palette, oreven just base it on negative space to use for type. So to my sur-prise, I saw my beautiful Russian model in bright yellow setting thetone for the event. The program is about 80 pages long so therewere additional shots throughout. The actual event happens inMarch so to top off the cake, I learned that a final wig I had cutwould be the COVER of Modern Salon magazine. The striking redhair and asymmetrical haircut along with a stunning Marchesa dresshad ultimate cover appeal, and lit the fire for the affair to follow.

We worked together as a team to create beautiful imagery thatwould last a lifetime. Had the model not been in that dress, withthat amazing light that moment might never have happened. I mayhave cut a wig and placed it on a lovely girl, but the whole picture –as well as the whole moment – is the feeling that drives me to dowhat I do. There are so many aspects to what goes on behind thecamera, and I hope this sheds some light how the preparation andchaos eventually become art!

Salon magazine selectedAquage to do the shoots forthe campaign. Aquage is aprofessional only companythat is booming through theindustry right now. ABSwants to sell tickets to theevent, and in order to do sothe imagery needs to be ex-citing. The co-founder ofAquage, Luis Alvarez, se-lected three people withinthe team to create the stylesfor the campaign. Myself(Heaven Padgett), Shelly Devlin, and Ann Bray. Together we cre-ated a series that exemplified texture, shape and movement. Forme, this was a huge opportunity and I couldn’t have been moreexcited. The process of putting together a shoot is an amazing col-laborative effort between photographer, make up artist, hair stylist,fashion stylist and set director. When these worlds collide, sparks flyand it just feels like magic. My job was to create cuts and stylesthat showed texture and movement in the hair. I had the luxury ofabout 10 wigs at my disposal that I cut and curled and sliced andteased! Ten hours later I was armed with some wigs that mightwork, and tons of ideas. And yes, we do use wigs! Not all thetime, but sometimes hair shoots require avant garde type haircutsthat some professional models cannot do.

Louis Black recently co-founded the Texas Independent Film Net-work, a "statewide coalition of film societies, universities and inde-pendent theaters united for the purpose of screening Texasindependent film." As of now, the network travels to 11 differentcities in Texas (including Houston), with more on the way. The net-work provides an opportunity for filmmakers to tour the great Stateof Texas; but more importantly, it's about continuing to progressthe idea that Texas is all about independent film. It's about reinven-tion. My first film, ST. NICK, will be doing the circuit in May.

Both of my current films, Clay Liford's feature film WUSS andGeoff McGee's short NEAL, fared well at this year's SXSW. WUSSpremiered to sold-out crowds and garnered a slew of positive re-views; for NEAL audiences responded with ferocious laughter. AfterI finish this column, I'll begin packing for Dallas, as both films willalso be playing the Dallas International Film Festival in early April.

In the midst of all the hubbub and long lines and late nights andhordes of college kids, I got to see some other really great films aswell. Two of my favorites were Todd Rohal's THE CATECHISM CATA-CLYSM and Michael Tully's SEPTIEN, though probably for thewrong reasons, three of which being that I saw them both back-to-back (and they make a great double feature), that the crowd re-sponse around me was nothing short of awkward, and that I'mbuddies with both of the filmmakers. None of which, however,happen to be the fact that both films are sheer insanity to the max,absolutely riveting and completely original. Both films premiered atSundance and obtained distribution deals with IFC.

Several inspiring documentaries also resonated in my mind.

Werner Herzog'slatest 3D docu-mentary, CAVEOF FORGOTTENDREAMS, takesthe viewer onan intimate jour-ney into Chau-vet cave andshowcases all itswonders – pris-tine cave draw-ings from earlyman dating backsome 37,000years ago. The choice to film in 3D was an impeccable one, as itmesmerizes the viewer with images that appear to move right offthe walls.

I also enjoyed crowd favorites, BEING ELMO: A PUPPETEER'SJOURNEY, which tells the emotional story of Kevin Clash, the self-taught puppeteer who created Elmo, and CONAN O'BRIEN CAN'TSTOP, which follows Conan on a live comedy tour during the pe-riod of time he was banned from television. Q&A's for both of thesefilms were also a lot of fun with Elmo stealing the show for the for-mer and the astounding intensity of Conan O'Brien for the latter.

There were plenty of other intriguing films not mentioned herewhich screened at SXSW. And they'll go on to play film festivals allover the country, keeping the independent, creative spirit alive. I'msatisfied with the fact that I've been along for the ride for the lastfive years. I only hope that a glimmer of that mentality will con-tinue to spread throughout Texas.

KEMAH ART WALK WILL SHOWCASETEXAS ARTISTS APRIL 23

The Kemah Merchants Association will be hosting theKemah Art Walk on Saturday, April 23. The Kemah Art Walkwill be from noon to 6 p.m. Artists from all across Texas will beshowcasing and selling their art in the Kemah Lighthouse Dis-trict. Austin gets it. Bar none it's the largest,most welcoming independent film meccain the country; and probably the world.Where most cities can hardly support onetop-rated film festival, Austin somehowsupports three: South by Southwest(SXSW), Fantastic Fest and the Austin FilmFestival. Additionally, it's home to Ain't itCool News (AICN), one of the most recog-nizable online movie review sites in thecountry; and the Alamo Drafthouse Cin-ema, probably the most original movietheater concept ever (well... next to theTexas Theatre and Clear Lake’s own StarCinema Grill, of course). The fact thatRobert Rodriguez uses his TroublemakerStudios to produce mainstream films theredoesn't hurt either.

Austin isn't a fad. One of the primaryreasons it's become such a contender inthe independent film community (andmusic, and new media) is because theartistic community there is open to andembraces change – they're constantly rein-venting themselves to adapt to a dynamicmarket. And they don't let their egos getin the way while they're doing it.

Tim League, co-founder of the AlamoDrafthouse and co-founder of FantasticFest, an annual genre festival celebratingthe best in horror, science fiction and ac-tion films, got ridiculously drunk and ate abunch of live crickets at the BELLFLOWER

after party duringSXSW. BELL-FLOWER actually

picked up distribution with Oscilloscopeduring Sundance, but seriously amped upbuzz because of its party at SXSW. An out-door party which consisted of a few kegs,a trailer selling gourmet doughnuts, and acampfire.

If you missed it, you knew about it. Be-cause everyone in the independent filmcommunity watches what's going on atSXSW. Twitter was trending "#SXSW" as if itwere the greatest place to be in the worldat that very moment. And it probably wasfor independent film.

The vibe at SXSW, and Austin in general,is high-energy and all about creativity.While there's plenty of business going on(films get bought at SXSW or post-SXSWbecause of SXSW), what's important ismaintaining a collaborative experimentalculture. It's about seeing what's on thecutting edge of cinema, music and the in-teractive market.

Louis Black, co-founder/editor of the al-ternative weekly, Austin Chronicle, co-founded SXSW originally as a music festivalin 1987 (adding film and multimedia in1994) which blew up exponentially, creat-ing a buzz about Austin that still existstoday. This year Arts + Labor, a productionhouse in Austin, premiered the doc, OUT-SIDE INDUSTRY: THE STORY OF SXSW,which effectively recounts how three guysat the Chronicle and a booking agent, liv-ing paycheck-to-paycheck, created thelargest music festival in the country.

In similar fashion to a soup du jour,Bakkhus showcases a different specialty hum-mus daily. Some options include roasted red

pepper, sun dried tomato basil, spinach & arti-choke, or jalapeño & cilantro. I sampled achipotle hummus, an off-the-menu spicy deli-cacy which perfectly prepares your palate fora flavorful Greek feast.

Speaking of spicy, the Trojan Poppers packa sucker punch! Only in Texas would a Greekrestaurant take a jalapeño, stuff it with gyroand fire feta cheese, roll it in bread crumband fry it. Stuffed jalapeños are all the ravehere in Clear Lake, and Bakkhus' unique spinkeeps it Greek, adding a fiery southwesttouch.

He used the product passing through his kitchen to help and en-courage those who had lost their jobs and were struggling finan-cially as a result of the economic crunch.

Chaney's favorite days of the week, however, were those that hewould prepare hot food and deliver it into the hands of the Houstonhomeless community. Over the course of a year, Jason was able todevelop impactful relationships with some of Houston's most mar-ginalized citizens. These relationships and conversations had a pow-erful impact on Jason's cultural, community, and financial values. It ishis belief that a life lived loving and serving others is the most pro-found and rewarding way to live. It's this kind of servant's heart, pas-sion for the professional kitchen, and 15 years experience that Jasonnow brings to the kitchen of the Barbed Rose Steakhouse andSeafood Co.

Specialty:My formal specialization is in Regional Italian cuisine, butwhat I really enjoy cooking is a blend of Mediterranean, Gulf Coast,and Asian.

Signature Dish: My favorite dish that I ever made was Scallopsand Oxtails. It consisted of pan seared diver scallops, with braised ox-tail meat which had been pulled off the bone. It was served withcrispy fingerling potato “tostones” that had been fried crispy in duckfat and topped with an airy porcini foam. It was on the menu at theSkyline Bar & Grill for over a year. It was time consuming to pro-duce, and just as difficult to pick up, but completely worth it at thetable.

Have you ever prepared a meal for anyone famous or in-famous? At the Houstonian I remember making breakfast for SeanPenn, dinner for Matthew McConaughey and David Grohl (not atthe same time), multiple lunches for Kenneth Lay (someone else al-ways paid the tab), lunches for Jose Lima, a reception for RogerClements which included a whole list of Astros players. While inSwitzerland, I cooked for a number of Cuban government officials(but not Fidel), it was something that struck me as odd, consideringsomething like that would never happen in the States. While at Sky-line, a reservation was made for Michael Jordan and security prepa-rations were made, but were ultimately canceled. One time whilefeeding the homeless in downtown Houston, I fed a man who hadan athletic build, and spent some time talking with my friend; cometo find out, he was a former MLB player for Cincinnati who lost hispitching career after taking a line drive to his pitching arm. It wassuch a revelation. You never know who you might find living on thestreets.

Please share one special cooking tip or technique for ourreaders: When blanching tomatoes to peel them, most peoplewill put them in a pot of boiling water for 15-20 seconds and thenplunge them into an ice bath. The skins fall away and the flesh un-derneath is pretty mushy and over cooked. I learned from acoworker that if you put the tomatoes in ice water first, then putthem in a pot of boiling water for only 5 seconds, then back into theice water, then repeat the boiling water for 5 more seconds, and fin-ish in the ice bath. The skins will come off easily and leave all of theflesh immediately under the skin (which by the way, contains mostof the flavonoids) perfectly intact. They will look like perfectly rawtomatoes, only with a closer inspection will you notice that the skinis gone.

At 15, he volunteered at the Redwood Grill togain valuable exposure under the watchful eye of Executive Chef Shelly Drought.By 17, he received his acceptance to the Culinary Institute of America (CIA) inHyde Park, NY, where he began his studies in 1999. Later that year Chaney madehis way to the famous Commander's Palace in New Orleans where he workedvarious stations under Executive Chef Jamie Shannon as a culinary extern from theCIA. After completing his Bachelor degree and graduating with honors, Chaneytraveled to Europe. Living in Le Bouveret, Switzerland, he worked as an AssistantProduction Chef and English language instructor at the Institut Hotelier "CesarRitz." Following this experience, Chaney packed his belongings and moved to thetown of Jesi, Italy, where he enrolled in a professional Slow Food-sponsored im-mersion course dedicated to the instruction of Regional Italian Cuisine.

Upon returning from Europe, Jason worked for Houstonian Hotel, Club, & Spawhere he labored under the command of former Executive Chef, Jesse Llapitan,and the current Executive Chef Jeff Everts. In the summer of 2006, Jason, whowas only 25 at the time, accepted the position as Executive Chef of the Skyline Bar & Grill. In February of 2007, Chaney was recognizedas the "Best Over the Top Professional Chef" during the Let the Guys Cook charity event, which was held at the Houstonian and bene-fited Cancer Counseling, Inc. Skyline was named best bar with a view by Texas Monthly, as well as a multiple recipient of Citysearch'sBest of designation, and Most Romantic Restaurant by the Houston Chronicle.

In October of 2008, Jason departed from the restaurant scene to fulfill a more personal craving in the ministry field. He soon opened theBay Area Christian Church [BACC] Pantry Kitchen. Using his professional knowledge and relationships, he gave his customers the oppor-tunity to purchase restaurant quality meat and produce for a fraction of the price of typical grocery stores.
