IN FULL SWING As the schoolyear winds down and summer plans are finalized, we look forward to long hot days at the pool, lots of young campers and plenty of fun family events at the Club. Our Membership continues to grow and welcoming these new families is a true pleasure. My thanks for your continued referrals and for sharing your family club with your friends and colleagues.

Our team works tirelessly to seek out new ideas in order to provide you and your families with events, activities and programs that you’ll enjoy. Dear Providence Members,

Golf Course renovations are continuing to go very well and are on schedule. To date, we are looking at a re-opening in early September. The guided tours have been very well attended and everyone seems very pleased with the results thus far.

I am hopeful to announce the actual start date of the Dining Room renovations by the time you receive this newsletter. We needed to review the project scope and related material costs with another firm as the initial numbers were well above the original plans. The timing should work as such, so we can facilitate the Turnhouse and West Pavilion as well as our banquet space for Member dining.

We are very excited to re-open our pool this season. We are installing 10 new and very exciting starting blocks for the completion pool. This will please everyone, especially our Piranha swim team! We are also excited to announce our new Swim Team Coach, Emily Long! Emily was a member of Auburn University’s 2007 swimming and

diving national championship team and was a 2008 Olympic trials qualifier. She has coached in Georgia, Alabama, and Charlotte , and has worked with year-round age groupers, summer league teams, and most recently with performance camps through Queens University. Emily currently teaches biology at Providence High School and will be attending Winthrop University for her graduate degree t his fall. Please join us in giving Emily a warm PCC welcome!

We have been receiving very good feedback regarding our “Health and Wellness” approach to our dinner menu and the FIT designa tions for healthy eating. Please feel free to fill out our comment cards when you dine and offer other ideas or suggestions.

AWESOME CLUB EVENTS

As the beautiful weather begins for us here in Charlotte, so do some of our most popular Club Events! You’re Food and Beverage Department has created an exciting variety of programs for you to enjoy this summer season!

We start the month of May with an Adult Cooking Class as Chef Jason shares with attendees how to make the best sushi in town! He will be featuring an awesome well-known assortment of sushi and by the end of this session you could be a master Sushi Chef!

We have been cultivating a growing group of wine enthusiasts through our Wine Dinner Series. One of our best Wine Dinners of the year will be coming up Thursday, May 10 featuring Orin Swift. From their unique labels, each having their own story, to their highly rated varietals, you won’t want to miss out. Seating is limited for this dinner so please make sure to make your reservations as soon as possible.

One of the most popular Providence family traditions that many of our families look forward to every year, is our famous Mother’s Day Brunch. Chef Jason and his culinary team have created an outstanding menu for this day that is sure to please every palate.

Pool season is a favorite time of the year for many of our Providence Members and it is right around the corner! Pools Open, weekends only on Mother’s Day Weekend, May 12. This means Swim Team for the kids, our Summer Kick-Off Party on the front lawn and the entire pool complex, Memorial Day BBQ at the pool, and Adult Night Outs at the West Pavilion. We have listened to our members and will be adding some events this summer specifically geared for our teenage Members. Keep a look out for our “Teen After Hours Pool Party” and other teen outings this summer.

We cannot forget about the Dads this June on Father’s Day. We are planning a casual outdoor BBQ event full of friendly competition, Father-Child Relay’s, and other family fun activities. All of our Summer Camps start in June as well. Whether your kids are interested in Golf, Tennis, Fitness, Cooking, Art, or even Outer Space we have a camp for everyone!

I look forward to seeing you all around the West Pavilion this season! You’re Food and Beverage Department is looking forward to being a part of creating great memories and family traditions that you will reminisce for years to come.

DEAR PCC PARENTS,

I have loved working with the children here at Providence for the past three years. All of the children that have attended Kids Events, Summer Camp, and that I see around the club have a special place in my heart! As I take on the opportunity to be the Director of Catering, I have brought in someone to continue what I have started and enhance the Kids Activities here at Providence. Mackenzie Hancin is finishing her degree at North Carolina State University in Parks, Recreation, and

Tourism Management. She is originally from Indian Trail, NC, and is excited to be back in the Charlotte area upon completion of her program in May 2018. Mackenzie is a true Wolfpack fan and enjoys cheering on the Pack, spending time with friends, and is always up for a new adventure.

Having Mackenzie join the team here at PCC will be great – she is full of new ideas and energy. I am excited to bring her on board and to guide her while she learns and grows here. Her past experiences include working in the youth department at Carolina Country Club in Raleigh, as well as various leadership and business programs

and summer camps. Be on the lookout for our full-on Kids Activities Department here at PCC in the coming months!

Take a look at our great summer programs. We have something going on every week of the summer! I am personally excited for our new Teen Camps this year. The Strength Camp will be an experience of great insight for any athlete and teens interested in health and wellness. Chad & Anthony in the Fitness Center are creating an awesome program to share their wealth of knowledge. The Sewing and Cooking Camps will be great for any teens interested in either subject. We’ll start with the basics and learn from there – teens will make their own pajama pants at the sewing camp and will be able to make a full meal by the end of the cooking camp.

MAY COOKIE OF THE MONTH:

SALTED PECAN BACON COOKIE Patrick Budniewski - Holston Hills Country Club

“I choose this cookie because I find the cookie very welcoming. It is a small bite of the South. It is simple, yet flavorful. I’ve made it with a very smoky Hickory Smoked Bacon and it was very nice, however I prefer the subtleness of a light Applewood smoked bacon in this application.”

INGREDIENTS 1 cup 2 TBSP Butter (Unsalted) ½ cup 2 TBSP Granulated Sugar 2 tsp Vanilla Extract 1 cup 3 TBSP AP Flour 1 ½ cup Pecans, Toasted and Chopped 4 each Bacon, Slices, cooked, drained and crumbled 1 tsp (set aside) Course Salt (Sea or Kosher)

DIRECTIONS: Preheat Convection oven to 325 (350 if conventional). In mixing bowl cream together sugar and butter. Add in 2 large eggs and the vanilla, mix for 2-3min. Gradually add flour while mixing and then fold in bacon and toasted pecans (stir in by hand). Roll the dough with a small amount of flour in your hands to firm up the cookie slightly. Scoop into 3 teaspoon sized balls and place on a parchment lined bak-ing sheet. Press down on each cookie to slightly flatten, should be about ½ in thick. Sprinkle each cookie with a small amount of salt. Bake for 14-16 minutes or until light golden brown. Yield: 3 tsp. scoop made 60-65 2 ½ inch cookies.

JUNE COOKIE OF THE MONTH:

RUSSIAN TEA CAKE Bruce McIntosh – Country Club of Asheville

“Chef Bruce leaned on his pastry Chef Ashley Best for a recipe and this is what she had to say….This is my grandmother's recipe and when we would visit, she and I would make these cookies and fill the house with a beautiful aroma. When you eat these cookies they should explode in your mouth with a little nuttiness, the chew of the pecans and the powdered sugar getting on your lips it’s delicious. While I was not a huge cookie fan at the time, these tasted more like a cake in the form of a cookie.”

INGREDIENTS 2 cups of Butter 2 tsp Vanilla 1 cup Powdered Sugar 4 cups Cake Flour 1/4 tsp Salt 2 Cups Pecans, Chopped

DIRECTIONS: Cream the butter and vanilla. Add the Powdered Sugar and beat until fluffy. Add the flour, salt and pecans. Roll into balls and bake for 10 to 15 minutes at 350 Degrees F. Allow to cool and dust with Powdered Sugar. Yields: 3 tsp. scoop made 100 2 inch cookies.

FROM THE LINKS Finally warmer weather is upon us, Bermuda grass is starting to wake up, and the golf course construction is really taking form. Your professional staff is very excited to see all of the tremendous work being done to redesign the golf course. Kris Spence and his team have really added a bunch of character to the layout. With that said, we please ask you to refrain from walking, biking, or viewing the golf course without a member of the staff. We’ve had a lot of unwanted traffic on the course during the construction and will need to keep people off as much as possible, especially once the sprigging of the greens take place. GOLF TIP Wedge gapping has become extremely important over the last two years with club manufacturers “juicing” lofts on clubs. Most pitching wedges no longer are standard at 48* which makes for gapping issues as you get to gap wedges, sand wedges, and lob wedges. We recently purchased a FlightScope launch monitor to help dial in our fittings. Utilization of this machine during fittings is very crucial to making sure your bag set-up is perfect for your game. Contact the Golf Shop to set-up wedge fittings, driver fittings, or complete bag fittings with the FlightScope. This will certainly make sure you have the best equipment for your game.

GREENS AND GROUNDS 13

EXCITING RENOVATIONS AT PCC! Wow, what exciting changes have and are happening out at PCC.

We have 3 complete months into the project. The following holes are rough shaped 10-18, practice short game area and holes 3 and 4. We have also made great strides on building the 6th green and 7th tee area.

We have the pump station installed and we have water on the following holes driving range and holes 1-4, 10-12 and 18. We will start fine grading, laying sod and finishing the holes that have water very soon.

The greens are schedule for sprigging on June 15th. We will be using Champion Turf, the farm from where the sprigs will originate from is in Bay City, Texas. They are shipped to us in a refrigerated truck. We should be able to get all the greens done in one day. After the greens are planted, we will be running an irrigation cycle on the greens 3-4 minutes every hour during the day. Please stay off the putting surfaces during this time. The very first 12 days are very important time and I know as members you don’t want to do anything that will hamper the grow in process of the greens.

We have 35 bunkers completed. This means they have been shaped, edged, drainage added, Capillary concrete poured and bunker sand added. We have had some bunkers completed for a few weeks. During this time we have had some substantial rain events, we experienced no washout, held water or any repairs needed. This will be very beneficial for the playability of the bunkers going forward.

The tree removal is almost complete, we had to halt tree removal. The reason that we had to stop was that we have a pair of Great horned owls that have mated and had an offspring on hole 8. We had to wait until the new born could fly and be somewhat self-sustaining. We did what was right and waited until it was no longer nesting. We have contacted the rapture center in Huntersville. They are helping us decide when we can start back with tree work. Since we have started having conversation with the Rapture center, we hope we can start to have a relationship to help provide a good habitat for the raptures.

We should have all trees removed by the middle of May. The logs and scrap wood should be finished being removed by the middle of June. We wanted to be done earlier but having to have a break from tree work is the reason we are behind with the removal of the wood.

2018 PIRANHA COACHES Emily Long, Head Coach Emily was a member of Auburn University’s 2007 swimming and diving national championship team and was a 2008 Olympic trials qualifier. She has coached in Georgia, Alabama, and Charlotte, and has worked with year-round age groupers, summer league teams, and most recently with performance camps through Queens University. Emily currently teaches biology at Providence High School and will be attending Winthrop University for her graduate degree this fall. 2018 is Emily’s first season with PCC. Emily Murchison, Assistant Coach Emily is a recent Virginia Tech graduate and plans to become an English as a Second Language teacher in the area next year. She has been swimming since she was 5 years old and 2018 will be her fourth year as a Providence Piranha!

Catherine McCreary, Assistant Coach Catherine recently graduated from Pepperdine University with a degree in Psychology and Spanish. She is planning to go to graduate school with the hopes of becoming a child-clinical therapist. Catherine started swim team when she was 4 years old and swam competitively throughout middle and high school. This will be her fourth year coaching for PCC! In addition to swimming, Catherine is passionate about yoga, running, and baking. Meghan Kelly, Assistant Coach Meghan is a junior at UNC Chapel Hill, studying biology, and she is planning on going to medical school after graduation. She was a competitive swimmer from age 5 to age 18 and still swims for fun in college. Meghan swam for MAC, MSA, Ardrey Kell, as well as PCC from ages 12-18. She is looking forward to returning for her fifth year with the coaching staff at PCC!

Cole Short, Assistant Coach Cole started swimming at the age of 5 on a summer league team in South Bend, Indiana. As his love of competitive swim-ming grew he started swimming year-round. In addition to club swimming, Cole swam for St. Joseph high school. He was a four-year letter winner and a Junior National Qualifier. Cole currently attends and swims for Queen’s University where he is a biology major. This will be his first summer with PCC.

INGREDIENTS 2 store-bought, deep-dish whole-grain pie crusts, thawed, room temperature (whole foods in freezer) 5 large eggs whites 1 large egg 1/3 cup skim milk ½ tsp sea salt ¼ tsp ground black pepper ½ cup chopped red onion 3/4 cup cherry or grape tomatoes, halved 1/2 cup loosely packed fresh basil, thinly sliced 1 cup sliced fresh mozzarella balls

DIRECTIONS: Preheat oven to 425°F. Meanwhile, remove crusts from wrapper and stack one on top of the other on a sheet of parchment. Cover with another parchment sheet and roll crusts out to about 12 x 17 inches. Transfer crust to a 9 x 13-inch sheet pan with a 1-inch rim and press crust firmly into corners and sides. (NOTE: Make sure you are using a pan with raised edges, not a flat cookie sheet.) The crust should extend above the sides of the pan by about ¼ inch; fold extra crust slightly over sides of pan. Bake crust for 7 minutes, until just beginning to turn golden. Remove from oven, poke any bubbles with a fork and let cool for 10 minutes. While crust cools, whisk together eggs, skim milk, salt and pepper. Stir in onion, tomatoes and basil. Pour egg mixture into cooled crust. Arrange cheese over egg mixture, pressing gently to submerge them. Bake for 25 to 30 minutes, until eggs are just puffy and golden. Let cool for 2 to 3 minutes before serving.

PCC SUMMER FITNESS CAMPS

Keep PCC in mind when making your summer plans. We will be offering Providence Playhouse Activity Camps, Fitness Camps, Golf Camps and Tennis Camps to better serve you.

Most similar to the historic All-Sports Camp, Fitness Camps will be fun and exciting for children ages 4-12 years old. Campers will participate in activities such as Kick Boxing, Yoga, Cardio, and Field Games with Fitness Instructors, as well as crafts, games and swimming with the Playhouse staff.

Time: 9:00am-3:00pm

Cost: Full Day $250 for Members I $300 for Guest Half Day: $150 for Members I $200 for Guest (See Registration Form for Late Pricing)
