Sept.-Dec. 2012 The Official Guide 11

Page 12: The Official Guide To Hilton Head Island - Sept12

12 The Official Guide Sept.-Dec. 2012

One of Hilton Head Island’s mostpopular residents, Atlantic Bottle-nose Dolphins are abundant in localwaters. In fact, these incrediblemarine mammals share so manycharacteristics with humans it can beargued they are our underwatercounterparts.

One example is the way they givebirth.

Female dolphins give live birth andnurse their young for up to threeyears. Calves often stay with themother for up to five years, if male, and potentially the rest of their lives,if female.

In the wintertime, the Bottlenose popu-lation averages from 200 to 400animals. Early spring through latefall, we are inundated with dolphinsas females from all over the South-eastern coast make an annual trek tothe area to give birth. Other females

act as midwives and nannies, oftentaking turns watching over the youngas the mother feeds.

Males tag along, following thefemales wherever they go – yetanother human trait!

From a boat, you will often see theyoung calves swimming and play-ing with the other dolphins in thepod. Providing abundant food forthe mothers, Lowcountry watersalso give the young dolphins afairly safe environment to practiceswimming and hunting before mov-ing on to other parts of the coast.

Although they lack the gracefulnessof an adult dolphin, the calves’ play-fulness and energy tends to remindone of their own youth.

There’s a pretty little legend that I would like to tell,of the birth and death of Jesus found in this lowly shell. If you examine it closely you’ll see that you find here,

four nail holes and a fifth one made by a Roman’s spear. On one side the Easter Lily, its center is the star,

that appeared unto the shepherds and led them from afar. The Christmas poinsettia etched on the other side,

reminds us of His Birthday our happy Christmastide. Now break the center open and here you will release,

the five white doves awaiting to spread good will and peace. This simple little symbol Christ left for you and me,to help us spread the gospel through all eternity.

In the Kitchen withCaptain Rick Percy ofReel Chance Charters

Mary Poe’s Grilled Redfish

This Redfish dish, shared with me by a friend inLouisiana, works super on the grill or in the oven.

Filet your fish leaving the skin andscales on. Remove the ribcage. Coverthe meat side, of course, with honey.Yes, honey. Season over the honeywith Cavender’s Greek Seasoning.

Now make a sauce using:1 part sour cream (the amount just needed to

cover your filets)1 part mayonnaise1 Tbsp. cooking sherry1 Tsp. lemon juiceParmesan Cheese (enough tothicken the sauce)

Mix the above ingredients together and add dryParmesan cheese until the sauce thickens. Then coatyour fillets with the sauce. Grill skin-side down, anddon’t turn, at 350 degrees for 20 to 25 minutes or untildone. The sauce will brown a little on the top. Slide aspatula between the meat and skin and the fillet willcome off perfectly. People love this recipe, and so do I.

Is your skin feeling or looking alittle confused? Chances are it isthe change in the weather.

Just like our wardrobe changeswith the seasons, so should ourskincare regimens.

Dry air inside because of heatingand less humidity and colder airoutside causes our skin to bemore dry and dehydrated. Youmay need to exfoliate more oftenbecause dead skin cells tend tobuild up more rapidly and yourserums and moisturizers aren’tdoing their job, if they are onlysitting on top of those cells.

You may also need a differenttreatment or heavier moisturizerto compensate for this moistureloss. It’s really important to see aprofessional to find out what your

skin needs to keep it healthy andbeautiful throughout the year.
