THE LOFT RESTAURANT IN POULSBO, WASHINGTON, HAS BEEN IN EXISTENCE FOR ABOUT TWO YEARS. SANDY KOLBEINS, THE OWNER, HAS WORKED HARD OVER THE PAST TWO YEARS TO TRANSFORM THE DINING AREA AND BAR FROM THE DARK AND DREARY SPACE IT ONCE WAS INTO A LIVELY AND OPEN GATHERING SPOT. HE WANTS TO INVITE YOUNG PEOPLE AND THEIR FAMILIES TO THE RESTAURANT SO THEY CAN ENJOY THEMSELVES WHILE EATING DELICIOUS FOOD. THE PUB-STYLE EXPERIENCE INTRIGUES HIM, BECAUSE OF THE SOCIAL AND CASUAL NATURE OF THIS TYPE OF DINING. THE PUBS OF ST. IVES IN CORNWALL, ENGLAND WORK WELL WITH THE ATMOSPHERE THAT MR. KOLBEINS IS TRYING TO CREATE IN HIS RESTAURANT. MANY ASPECTS OF AN ENGLISH PUB FIT THE CULTURE AND STYLE OF THE CITY OF POULSBO. THIS INCLUDES EVERYTHING FROM THE WEATHER, CULTURE (DEMOGRAPHIC), AND FOOD, TO THE ART, AND ARCHITECTURE.
