• A permanent, genetic disorder that is characterized by an autoimmune reaction to the ingestion of gluten, a protein found in wheat, rye and barley.
• This reaction causes damage to the absorptive structures in the small intestine (villi) and ultimately results in:
• Conditions of malnutrition • Potential damage to any organ system
There is no cure, the only known treatment is the complete removal of gluten from the diet.

Gluten is the trigger for the inflammatory response of celiac disease.
Gluten is a general name for storage proteins.
Storage proteins in wheat, barley and rye are harmful to celiacs. • These grains and any ingredient that comes from
them are eliminated in the gluten-free diet.
Spelt, kamut and triticale are botanically related to wheat and are eliminated too.

Label it. Tell yourself, “This feeling is just a craving, uncomfortable but not an emergency.”
Stand firm. Tell yourself that you’re absolutely not going to eat the food that you’re
craving. Consider whether giving in to this craving will be worth the momentary pleasure you’ll get from eating or undermining your diet and health.
Don’t give yourself a choice. The emotionally painful part about a craving is the struggle you feel. Once you can tell yourself with total conviction, NO CHOICE, the craving will diminish.

• Imagine the aftermath of giving in. Measure the short period of gratification you will get from eating the food you are craving against the longer period of time when you might experience symptoms and/or discomfort — when you look at the whole picture, not eating the food seems the better choice.
• Remind yourself why you want to learn to withstand cravings. Giving in to cravings can affect your quality of life . . .and worse!

How can I best advocate for myself in places and with people when knowledge about my diet is limited? • Be polite but firm. • Use simple terms! Waitresses don’t care about villi! • Everyone understands “naked food.”
Any tips for getting nice high rising cakes? • Xanthan gum. • Avoid deflated baked goods: spoon flour into measuring cup vs.
scooping, room temperature ingredients, beaten egg whites, don’t overmix, bake immediately.
What if I feel sick after eating out, no matter how hard I tried? • Don’t blame everything on gluten!
