Use probiotics and prebiotics to support a healthy gut microbiota, which is thepopulation of microorganisms that live in the gut. The gut microbiota has beenassociated with many areas of human health. Beyond digestive health, the gutmicrobiota may influence immune health, metabolic health and evenneurobehavioral traits. Prioritize prebiotics in conversations about the microbiotaPrebiotics are types of fiber that stimulate the growth of gut bacteria. While all prebiotics are fibers, not allfibers are prebiotic. Recently, the term microbiota-accessible carbohydrates (MAC) has emerged as amore precise way to talk about these beneficial carbohydrates.

What's next? Call out lactofermentationThe fermentation movement has been emerging for several years andhas potential to continue to expand as consumers seek natural ways tosupport their microbiota.

Food and drink manufacturers can draw inspiration from culinary iconsand promote naturally fermented products. For example, renowned chefRene Redzepi highlighted different fermentation techniques – includinglactofermentation – in his 2018 book The Noma Guide to Fermentation.

Lactofermentation is so ubiquitous that it is rarely mentioned on pack.Lactic acid bacteria is responsible for many familiar fermented foodssuch as kimchi, sauerkraut, yogurt and sourdough. Postbiotic is a newly coined term for non-viable (dead) bacteria and their beneficialmetabolites in the form of peptidoglycans, polysaccharides, short-chain fatty acidsand other organic acids. These beneficial compounds produced by bacteria in thedigestive tract could be key regulators of gastrointestinal health and help decreaseinflammation and boost immunity. Postbiotics are sometimes referred to asinactivated probiotics, paraprobiotics, heat-killed bacteria or heat-inactivatedbacteria.

Postbiotics have cross-category appealPostbiotics are also emerging outside the food and drink category, whichcan provide further inspiration for food and drink. Recent beautylaunches are also incorporating postbiotics, known as the beneficialextracts that living bacteria give off when put though a fermentationprocess. Non-living bacteria, called lysates, and all the useful matter theysecrete, also fall under the postbiotic umbrella.

Patent activity for postbiotics in beauty have included a method forpreparing a kimchi Lactobacillus fermented pine needle extract that canhelp prevent and improve acne (Derma Wrap Co., Ltd.) and probioticPediococcus acidilactici strain fermented grain that exhibits highantibacterial/anti-inflammatory activity against acne (FermentationMicroorganism Industry Promotion Foundation).

"Dead probiotics" offer health benefitsHeat-killed Lactobacillus plantarum L-137 (HK L-137) comes from abacterial strain isolated from a fermented rice and fish dish. Researchhas found HK L-137 has benefits for the immune system, and may havepotential to prevent or reduce the duration and severity of the commoncold. HK L-137 has antioxidant benefits and may help reduce chronicinflammation associated with metabolic disorders.

HK L-137 has been commercialized by House Wellness Foods of Japanand is positioned as an immunological supplement and as an ingredientused in functional foods. Heat-killed bacteria offer benefits to productdevelopers as the ingredient is suitable for long-term storage and can beeasily incorporated into a range of products. Studies have found heat-treating Lactobacillus plantarum L-137 enhances immunomodulatoryactivity and stability in simulated digestive juices.

Postbiotic is the new trend for gut health in recent patent filingsDuPont Nutrition Biosciences filed a PCT (WO2018050623A1) claiming L. crispatus LMG18199 or itsmetabolite can be used as an active ingredient in food products. These metabolites are resistant to acidand bile fluid and help in preventing and/or treating gastrointestinal disorders.

A US pending publication (US20190099438A1) filed by Nitto Pharmaceutical Industries disclosesexopolysaccharide produced by Leuconostoc mesenteroides to treat metabolic disorders like obesityand diabetes. These metabolites help in decreasing a ratio of Firmicutes bacteria to Bacteroidetes bacteriain the intestine and increasing the amount of short-chain fatty acids in the intestine.

RB (Mead Johnson) has a PCT publication (WO2017078907A1) that describes the method of producingLactobacillus rhamnosus GG (LGG) soluble mediators and its use in pediatric nutritional composition.The soluble mediator is used instead of probiotics to improve impaired gut barrier function and to reducevisceral pain in a pediatric subject.
