Bacon Pecan Brussels Sprouts
Serves 8 to 10
2 lbs Brussels sprouts3 strips Sunterra Farms bacon, diced into 1-inch pieces2 tbsp canola or olive oil1 red onion, sliced1 cup pecans, toasted
Trim the bottoms of the Brussels sprouts. Cut large sprouts in half, leave small sprouts whole. Spread the Brussels sprouts on a sheet tray, season with salt and pepper and sprinkle with a few drops of olive oil. Roast at 350˚ F for 25 minutes until tender and golden brown. Set aside.
Brown bacon on high heat in a skillet. Remove and set on a paper-toweled plate. Add oil to the skillet and sauté onions until translucent. Add the Brussels sprouts and sauté on medium until evenly heated. Add the toasted pecans and cooked bacon. Mix well and serve.

If you’re cooking turkey this Thanksgiving, you’re probably looking forward to the leftovers as much as the main event! And if you want to go on a week-long bird binge, we’re not going to stop you. In fact, here are five suggestions to keep your turkey wagon rolling. Just remember to shred, slice or cube all turkey leftovers and refrigerate or freeze in small bags or shallow containers as soon as possible.

TBLT
Nothing beats a turkey sandwich. Try yours with bacon, lettuce and tomato for a BLT with a little extra oomph. Add a hearty bowl of turkey, corn and sweet potato chowder and you’re in poultry paradise.
TURKEY AND PEAR P IZZA
Spread a pizza crust with pesto and top with diced turkey, prosciutto, thin sliced pears, pine nuts, Italian herbs and Gorgonzola cheese. That’s amore.
TURKEY POT P IE
The ultimate comfort dish – substitute turkey for chicken in any pot pie recipe, but add leftover stuffing and crumble buttermilk biscuits on top for a pie that can’t be denied.
TURKEY HOIS IN WRAP
Spread a teaspoon of hoisin sauce on one side of a wrap. Add shredded turkey, scallions, cucumbers and carrots and wrap it all up.
TURKEY STOCK
Don’t waste this opportunity to make your own stock! Remove any skin from the turkey bones and place in a large pot filled with water. Add onions, carrots, celery, peppercorns and herbs; bring to a boil, then simmer. The stock should be ready in a couple of hours. Strain, cool, then refrigerate or freeze. Use the stock as a base for soups and sauces or as a poaching liquid for meats, vegetables and rice.
