In a saucepan, combine 1.5 cups of crushed pineapple,

a quarter cup of maple syrup, 3 tablespoons of Dijon

mustard, half a teasoon of chopped garlic and a

quarter teaspoon of lemon zest. Bring to a boil then

simmer for 10 minutes over low heat. Remove and cool

to room temperature.

cup of extra virgin olive oil. Add 2 firmly packed cups of fresh parsley leaves, a

L o bs t e r Ta i lYou can cook a lobster tail a lotta different ways. To get a beautifully butterflied tail like we’ve done here, use kitchen shears to cut the shell from the top of the tail down to the base. Keeping the meat at the bottom of the tail attached, pull the meat at the top of the tail apart from the shell. Remove and discard the dark vein. Close the shell and place the meat on top. Score the meat lengthwise, brush a rich marinade on top (like butter, garlic and paprika) and bake at 450F for 15-20 minutes, or until meat is opaque.

M u ss e l sSteaming is the way to go with these tasty little things. Flavour up your pan with butter, shallots, garlic, fennel – any taste profile you like – and add a little dry white wine before putting in the mussels. Since they are sold live, you should buy mussels just before cooking if possible. Check that the shells are closed before cooking: tap any opened ones against the counter and discard if they don’t close. Cook for a few minutes in a hot pan until the shells open up. Pour the mussels and the wonderfully briny broth in a bowl and devour (you’ll want to add some crusty bread to mop up that broth).

S h r i m pYou can serve chilled pre-cooked shrimp with cocktail sauce if you want, but we’re all for warm, buttery, garlicky shrimp. Just grab a sauté pan, warm up some butter (you’ll want the shrimp to sizzle), toss in the shrimp and add seasoning. They cook in just a few minutes, so as soon as the shrimp is pink and opaque, dig in!

Cheese Fondue F O R F O U R

In a large bowl, mix 2 1/4 cups of shredded Gruyère,

2 1/4 cups of shredded Emmenthal and 1 tablespoon

of corn starch. Set aside.

Rub the inside of a medium saucepan with half a garlic

clove. Pour 1 cup of dry white wine into the pot, set over medium heat and simmer.

Gradually add the cheese in small batches and stir with

a wooden spoon until all the cheese has melted.

Once the fondue has a smooth consistency, stir in 1 tablespoon of kirsch. Sprinkle with a pinch of black pepper

and grated nutmeg. Transfer to a fondue pot and serve.

' T I S T H E S E A S O N F O R Sto llenSunterra baker Peter Wegmann learned the long and careful process of preparing stollen in an old-fashioned wood oven as a 16-year-old apprentice in Pirmasens, Germany.

“There’s no shortcut with stollen,” says Peter. “It’s a real artisan product.” He soaks his fruit for over a week in preparation for baking, and hand rolls the dough. "Everything is from scratch when it comes to stollen," he says.

So what exactly is it? Stollen is a traditional German Christmas bread filled with nuts, rum-soaked dried fruit and almond paste, brushed with butter and coated in sugar. Dip it in coffee or butter a slice.

Portion size: Boneless - 8 oz (0.5 lb / 0.23 kg) per person Bone-in - 10 oz (0.63 lb / 0.29 kg) per person

Diagonally score the surface of the ham. Brush the ham with glaze, allowing the flavours to penetrate. Place the ham in a 2½-inch deep roasting pan. Add ½ cup to 1 cup of water at the bottom of the roasting pan and

cover with aluminum foil to retain moisture.

Roast in a preheated oven at 325 F (165 C) following the roasting time chart. Baste the ham with glaze every 30 minutes until it has reached an internal temperature of 140 F (60 C). Remove the foil in the last 15 minutes to

get a crisp outer layer.

For spiral hams, cover with foil and roast at 135 F (165 C) for 14 minutes per pound or until the internal temperature reads 140 F (60 C). Brush with

glaze in the last 10 minutes.

Portion size: 16 oz (1 lb / 0.45 kg) per person

Remove the giblets and neck from the body cavity, then rinse and wipe. Sprinkle with salt and pepper inside and out. Place the turkey breast-side-up on a wire rack in a 2½-inch deep roasting pan. Brush with canola oil or

melted butter.

Cover loosely with aluminum foil and roast in a preheated oven at 325 F (165 C) . Follow the roasting time chart.

Baste the turkey with pan drippings every hour.

Turkey is fully cooked and ready to eat when the meat thermometer reads 170 F (77 C) for an unstuffed turkey. Remove the foil in the last hour of roasting to get a lovely golden brown colour. For a crispy caramel touch,

brush with maple syrup in the last 30 minutes.

Once the turkey is done, transfer to a carving board, keep covered and let sit for 20 to 30 minutes.
