McClure’s Recipe of the Month

Toad in the Hole using NEW local Venison Sausages,Onion Gravy, and Root Vegetable Battenburg Cake

Serves 4

INGREDIENTS

1x 1kg Taste of the Lakes VenisonSausages 3 x Eggs 1/2 Pint Milk Plain Flour (enough to coat yourfinger when mixed ) 4x Carrots

1x Swede 12 x Chives 1x Spring Cabbage 1/2 Pint Bisto Gravy (made fromgranules) 2x Tablespoons of HawksheadRed Onion Marmalade

Method Whisk the milk and eggs, then addthe flour and whisk well (make a fewhours in advance) Use 250g of sausages per portion,put in oiled Blini pans and put in anoven at 180oc until almost cooked Peel the carrots and swede and cutinto large batons and cook in saltedwaterCut the spine out of the springcabbage and blanch in the samesalted water then refreshBlanch the chives in the same water Pour the Yorkshire mix around thesausage and put back in the oven

and cook until risen and goldenbrown Pat dry the vegetables in a teatowel, spread the cabbage out andput on the swede and carrot to looklike battenburg cake then roll tightly,tie with the chives and trim the ends Using the vegetable water make thegravy with the Bisto granules andadd the red onion marmaladeCut the battenburg, slowly heat inthe oven under buttered foil When the toad in the hole is readyplate up with the battenburg andred onion gravy
