In SeasonThere is an abundance of wonderfulseasonal fresh produce available, such asstick beans, broad beans, marrows , freshpod peas, bunched carrots, sweetcorn,Jersey courgettes, Lancashire newpotatoes, Southport samphire, Spanishonions, greengage plums, Santa Rosaplums , apricots, Spanish honeydewmelons, watermelons , golden kiwi, Englishcherries, English plums and flat peachesjust to name a few.

Peruvian satsumas are about at themoment and the South Africanclementines are super eating too.

Spanish melons of all sorts are arriving andare all ideal with Parma Ham as a starter.

French figs are now in followed by theIsraeli and Turkish black fig season.

Following a wet July some Polish bilberriesare coming into season. They are not asplentiful as normal due to the rain; they area true “foraged” product that is gatheredby the travelling folk of Poland from thewoodland areas of their country.

The English plum season is upon us withthe better known Opal variety, it’s quite abit larger than the Herman and certainly amore attractive colour. Eating wise theyare more akin to the infamous Victoriaplum which will be with us half waythrough August.

Method

Put the sugar in a pan and add water, boil until itlooks syrupy. Leave to cool

Cut the water melon into 2 inch slices and cutout with a round cutter

Cut the canteloupe melon in 1/2 and scoop outthe seeds and ball with a melon baller

Cut the galia melon in 1/2 and scoop out theseeds, chop 1/2 and put in a blender with a little

of the syrup then pass through a fine sieve; ballthe other 1/2 with a melon baller

Scrape the vanilla pod into the syrup and add alittle chopped mint and mix well

Pour the melon soup into a shot glass; stack themelon balls (4); ball the sorbet on to the watermelon

Garnish with mint and the mint and vanilla syrup

Simple as that …enjoy
