When I was told B.C. Chef Connor Butler now makes his home and living on the Big Island of Hawaii, my travel companions and I decided to take a break from the beach to check out his restaurant, Daylight Mind Coffee Company.

A self-confessed “locavore freak,” you can reach out and touch Butler’s enthusiasm for fresh, local foods and sustainable practices. We were happy to share a few minutes with him before ordering our wine and food.

We wanted a chilled, thirst-quenching wine for lunch, but one with more body than the whites on the list, which is why we decided on a Malbec rosé from Argentina called Tapiz. Then we decided on food. Between us we had the clam-and-bacon chowder, pulled-pork po’boy sandwich, Big Island grass-fed beef burger and catch-of-the-day fish tacos. The wine worked well with all of it.

Rosé is best served chilled but take note of the interesting changes in this one as it warms a bit.

They say that February is the hardest month. The shortest month of the year can seem to go on forever with grey skies and sideways rain. Cellared vegetables and apples are running low and fresh, local food is tough to come by. March sounds like spring, but February is decidedly winter. There is nothing to do on these dark days but settle in with a hot bowl of soup and some fresh bread. A great winter soup uses farmer sausage and white beans to warm us inside. The Fraser Valley has an exceptional selection of locally made sausage. My favourites come from Rempel and Sons Meat Co. Ltd., Lepp Farm Market and a duck farmer sausage from Fraser Valley Duck and Goose. This recipe is always a hit in the restaurant in the winter months.

INGREDIENTS

4 tbsp virgin olive oil

2 small onions, medium dice

1 head fennel, medium dice

3 stalks celery

1 leek (mostly white part only)

1/2 cup sugar

2 tbsp salt

2 links farmer sausage, sliced

2 large cans of white beans (or 3 small cans)

2L chicken stock

750 mL heavy cream

1 large sprig each of rosemary, sage and thyme

METHOD

1. Sweat onions,celery, leek and fennel with sugar and salt in olive oil. Add sausage, beans, herbs, cover with stock. Bring to a full boil and then lower to a simmer.

2. Simmer until beans are tender about 20 minutes. Add cream and return to a boil for about 4 minutes. Remove from heat and blend until very smooth using an immersion or regular blender.

4. For an even more luxurious texture, pass the soup through a fine sieve

5. Garnish with a drizzle of a quality extra virgin live oil or add a soft goat cheese, a smoked cheddar or any other favourite cheese.
