Dear Members,
Our State Rostered Day is shaping up to be a
fabulous day! We have wonderful
demonstrators Kath and Jeanette are regular
visitors and the breadth of their knowledge is
astounding. Our own branch members Evan and
Denice are also much appreciated
demonstrators who share their skills so freely.
Please try and put something together for our
competition – a small fascinator will look
fabulous! Beautiful wine glasses for the winners
and our guild shop vouchers for all entries
makes it worth the effort.
I was a little late in sending out the notes from
the June dem. If you haven’t received yours by
now, please send me an email or call (9680 4096
leave a message if the machine gets it) if it’s the
printed variety you need.
I cannot understand where the year has gone! It
has certainly been eventful few months with the
Seminar, the Cake, Bake and Sweets Show and
other branch meetings that have been on. I
hope you have all been enjoying life as well as
our craft.
I attended our July Junior’s day and we had a
wonderful demonstration of Olaf done by Jackie
Azoulay in Mary Anne’s absence. It was very
disappointing that only 3 children turned up. I
know it’s sometimes difficult to organise our
time but if you have children who attend and will
not be coming, please let one someone know.
There is a lot of preparation done and it is very
disappointing when this happens. Needless to
say, we all had a go at an Olaf!
Susan has been doing a wonderful job as the
editor as you can see by the extras she has put
in. I’m sure you appreciate her efforts as much as
I do.

notice in your car window to show you are a cake decorator
who doesn't mind being parked in. If you
require a parking sign, speak to one
of the Committee members.

It’s not too late to enter our Annual Birthday Competition so get those entries in!

1st, 2nd, 3rd awarded according to number of exhibits in class
Competition Rules
1) Handwork only.
2) Exhibit to be presented on a board maximum 20cm (8”)
size.
3) Wire, ribbon, braid, manufactured (non-synthetic)
stamens, petal dusts, florist tape and edible products
(eg polenta, gelatine) is allowed. A manufactured wig
stand, tulle or net may also be used.
4) Craft glue must not be used as an attachment.
5) Members may enter as many exhibits as they wish.
6) All work must be that of the exhibitor.

Showtime 2015, otherwise known as Eat, Sleep,
Shop, Decorate, Repeat, started on a Thursday
with a 5-hour drive from Sydney. On arrival,
some headed to the RSL to set up branch
displays (congratulations Golden West on a first
place) or treasure trove entries. Others headed
to find hotel rooms and friends from around the
state. That night, there was a strong CDG
contingent in the RSL bistro to commence our
three days of Eat, Sleep, Shop,
Decorate, Repeat.
Friday morning we were up
bright and early for
registration, where we
received a lovely goodie bag. In
keeping with the theme, there
were lots of school girls and
boys everywhere as well as teachers and nurses.
There was a real excited buzz in the room!
A typical day started with pre-demonstration
coffee and cake followed by demonstrations,
morning tea, shopping, demonstrations, lunch
and shopping, demonstrations,
afternoon tea, more
demonstrations. On Friday
evening, we even made the
local Prime News before our
formal dinner of the weekend!
Our demonstrators were;
• the very funny and talented John Quai
Hoi showed us how to make coconuts, cheeky
miss figurine, bee hive ginger;
• the amazing and very
talented Shayne Greenman,
working with chocolate -
creating a waterlily and
beautiful chocolate bird.
This dem alone made me
much more confident
working with chocolate and
having gained this, I would have gone
home happy!
Shayne also demonstrated an amazing display of
creating a structure plus parrots
over two days.
• The lovely Jenna from
Evil Cake Genius in the US
was a special visitor
demonstrating stencil vow
flowers showing her
special range of stencils
for stencilling and hand
painting cakes;
• the talented Rinna Van Es
showed us how to make a
Parrot Tulip, Cattleya
Orchid and Helicopter
Flower;
• sculptor Susan Sinclair
demonstrated a bi-plane
and sheep dog as well as
shared a few yarns!
• clever Jacqui
Goldstaiz showed her
striped box with
pedestal and French
country platter.
After a morning of eat,
demonstrate, shop,
repeat on Saturday, the
afternoon saw some of us head out to a
liquorice factory. Others went on a tour of
Wagga and those who needed to recover from
Friday night’s dinner got a well-deserved rest.
On Saturday night, there was a school fete with
goodies on sale at various stalls. There was even
fairy floss for sale! Sunday was another day of
demonstrations with all cake decorators saying
goodbye at 5pm before the long trip home.
We were all tired but happy after a jam-packed
weekend with decorators from around the state
and the country.

How long have
you been deco-
rating cakes?
Since 1981. I
decorated my
own wedding cake
prior to under-
taking formal
lessons.
What inspired
you to get
started?
I wanted to
decorate family
cakes. Then I met
a cake decorator when visiting relatives in New
Zealand who inspired me to switch from family
cakes to show work!
How long have you been a member of the Guild?
Since late 1981 when my first
teacher at the Leichhardt
Community College, Selma
Allen, decided I was a worthy
candidate to attend a Guild
meeting. I joined that very
day!
Over the years, I’ve held
various positions and been
involved in numerous
activities, including laying the
groundwork to establish the
Forbes branch; starting the
Central Coast branch; editor of Sweet Perfection;
Sydney Branch Secretary, later President and
more recently on the General Committee. I
developed and maintained the Guild’s first
website, produced the Juniors Newsletter, was
unofficial branch badge designer and helped
develop and produce branch booklets.
What do you enjoy about the Guild meetings?
Seeing old friends and making new ones.
Watching dems, seeing how cake decorating
continues to evolve and how different people
approach these skills. It’s great that the Guild is
very collegial and we’re not afraid to share our
thoughts, skills and knowledge.
Have cake decorating tools changed much in the
time you've been doing it?
When I started, cutters were a dirty word, pastels
were new and exciting and purchased fondant was
rare. Coloured fondant was
non-existent as were
powdered colours and gels,
now available in brilliant
colours. Liquids were the
main option and pastes a
new product.
Most memorable cake/decorated piece?
The Phalaenopsis Orchid I demonstrated at the first
‘Showtime’ in 1985. Also, a Royal Easter Show
entry I was particularly pleased with was my
Nasturtium Easter Egg. The Nasturtium was hand-
cut from large cones, with petals moulded and
beards cut by hand. The sugar egg included a
flooded fairy amidst the flower heads.
One cake decorating tool you could not live
without?
Actually there are three – bamboo skewers (a great
modelling and veining tool), surgical scissors and
my brass balling tools - light, but firm, perfectly
smooth and work beautifully!
Most rewarding part of cake decorating?
Delivering a beautiful cake to a
happy customer. I like to eat my
food visually first so I am
especially proud that my cakes
both look and taste great.
What is/was your biggest challenge as a cake
decorator?
Bridezillas and their families. Also never having
enough time to fit everything into the day!
If you had one piece of advice for a new
decorator, what would it be?
Attend as many demonstrations and seminars as
you can, ask questions, take notes and photos but
most of all, give it a go!

Recipe Corner
Directions
Line a 28cm x 18cm tin with baking paper, leaving a 2cm overhang
on long sides.
Combine all dry ingredients in a large bowl.
Melt butter in a small pot. Remove from heat, add vanilla and
mix through. Add to dry ingredients and mix thoroughly. Keep
pot aside to prepare icing mix.
Spoon into prepared tin, pressing down to smooth the surface.
Bake in a moderate oven for approximately 15 minutes, until light
golden in colour.
Just before slice is ready, place all ingredients for icing in pot.
Stir over low heat until combined, then bring to a boil and simmer
for a minute. Pour hot icing mixture over hot slice and smooth
over with a spatula.
Sprinkle a little coconut on top, if desired.
Leave to cool in tin before cutting into slices to serve.
Coconut & Oatmeal Slice
Ingredients
½ cup desiccated coconut
2 cups rolled oats
¾ cup brown sugar
150g butter
1 tsp vanilla essence
Icing
1 cup icing sugar
70g butter
2 tsp golden syrup
½ tsp vanilla essence
¼ tsp ground cinnamon
¼ tsp ground ginger (optional)
Desiccated coconut (optional)

Kitchen Policy Jugs of water and a basin for rinsing mugs will be available
on the table outside the kitchen. If you use one of the mugs
provided, please wash and put it away.
Platters/containers and any leftover food can be collected
from the tables outside the kitchen at the end of the
meeting.

Kommanders” who organise the food at each meeting with
the help of other regulars. Your help will be greatly

to the kitchen and let yourself be known.
Double Hazelnut Brownie
Ingredients 200g brown sugar
250g caster sugar
4 eggs
325g butter, chopped
125g cocoa, sifted
1 tsp vanilla essence
150g hazelnuts, toasted, skinned,
roughly chopped
100g dark chocolate, chopped
250g plain flour
2 tsp brandy

Directions
Preheat oven to 150C. Grease and line a 30cm x 20cm tin.
Beat sugars and eggs in a large bowl until pale and thick.
Melt butter over a low heat and stir in cocoa.
Fold sugar mixture into butter mixture then stir in vanilla,
hazelnuts, chocolate, flour and brandy.
Pour mixture into prepared pan.
Bake for 25 minutes. Leave to cool before slicing.

Visas for international demonstrators
International demonstrators need a working visa
even if they are already intending to be in Australia
on holiday. A tourist visa is not sufficient. The
appropriate visa costs approximately $160 and can
be obtained relatively easily direct from the
relevant department. If you are considering an
international demonstrator, please contact the
State Committee for advice and details.
NB New Zealand demonstrators do not need a
working visa as New Zealanders are permitted to
work in Australia as of right.
National Seminar 2017 will be held in Western
Australia.
Use of Guild Logo
Members may not use the Guild logo on their
personal website or correspondence but are
permitted to mention that they are members of
the Guild.
Branches with their own logo or symbol must not
use this as letterhead. There is a standard Guild
letterhead which must be used for all
correspondence but the branch may add its own
logo at the bottom of the letter near the signature.
Judging Sheets The Judges sub-committee have
devised an amended judging sheet for use in very
large competitions especially in commercial
competitions which should speed up the judging
process. It does not have as much room for
comments and allows for a subtraction mark
where the schedule was not complied with. This
can be used where it is appropriate rather than
declaring entries NAS.
Sweet Perfection Advertising for 2015 covers the
cost of two issues per year. It was decided to stay
with the current printer for the time being even
though costs are rising.
Cake Bake & Sweets Show The number of
entries were down this year and the quality more
commercial than competition but the winning
entries were of an excellent standard.
The Guild had provided demonstrators for Bakels
products at the show in return for financial
support. This was so popular and successful that
Bakels doubled their financial support and invited
the Guild to do the same thing in Melbourne.
ANCDA National Seminar Display The Guild
display piece has been completed and all branches
contributed to the items in the display. Some of
the contributions have been modified a little to fit
the space and scheme so if your piece is not
immediately visible, a closer inspection will find it!
Insurance The State Committee had taken advice
on the adequacy of the ANCDA Policy for Public
Liability and Volunteer cover but it did not fully
meet our needs so it has been decided to stay with
our own separate policy.
The broker has also suggested that we obtain
Association Liability Insurance cover so that is
being organised. Branches are requested to
respond promptly to any material regarding
insurance which comes to them from State
Committee.
Challenge 2016 A decision has been taken to
combine Challenge and the State Seminar from 25-
28 August 2016 at the Catholic Club in
Campbelltown. This will reduce the workload of
the State Committee and, it is hoped, will also
encourage more branch members to support and
visit Challenge.
The structure of both events will be modified
slightly to facilitate the new format and details will
be made available as things firm up.

Special Competition Central Coast Branch in
conjunction with the local Orchid Society have a
specimen flower competition at Wyong Show
being held at Wyong Racecourse on 13-14
September 2015.
Entries can be any specimen orchid flower of your
choice and the judges will be from the Orchid
Society. The specimen which is closest to the real
thing will be the winner and the prizes are
beautiful potted orchids.
Sounds interesting for the flower specialists
amongst us! Any extra details can be obtained
from Central Coast Branch.
