CACFP Tips For Excellence!

Menu & Attendance Sheets Be sure to fill

out your attendance sheet daily as you serve

each meal. Your menu can be filled out ahead of

time or daily as well. Only use Blue or Black ink,

NO Red ink or pencils. Remember to claim only

either 2 meals and 1 snack, or 2 snacks and 1

meal, for each child. SIGN Your CLAIM!!!

Increditable-ly Delicious Recipes

Laura's Unbelievable Chicken & Pasta (creditable as lunch/supper just add milk)

Ingredients*** 4 (6 ounce) skinless, boneless chicken breast halves - cut

into 1 inch strips, 1 (14.5 ounce) can chicken broth, 1 (10 ounce) pack-age frozen spinach, thawed and drained, 1 (8 ounce) package cold cream cheese, cubed 10 cherry tomatoes, halved, 1 (16 ounce) pack-age dry penne pasta

Directions*** Bring large pot of water to a boil, add pasta. Meanwhile, in

a lrg skillet , cook chicken cubes in broth; simmering until done, about

10 mins. Stir in cubed cream cheese and spinach, and simmer about 5

mins. Stir in cherry tomatoes, and cook 3 mins more. In a lrg bowl, mix

cooked, drained pasta and sauce. Let stand a few mins before serving.
