ASPIN is a strategic tool for Frosinone territory for theenhancement of the local production within new pro-jects and international activities that in turn promoteinnovation and the development of a globally compe-titive and knowledge-based industrial sector. The Province of Ciociaria is located in the green hills of Central Italy between Rome and Naples andevokes centuries-old traditions, culture and cuisine with the genuine flavour of times past.

It proudly shows the signs of its long history and was homeland to ancient populations who built brea-thtaking megalithic fortresses. The province has been a major participant in the marvellous chapters ofRoman history: during the Middle Ages, four Popes were chosen from the local aristocracy, the mostfamous of them being Bonifacio VIII. The great philosopher Marco Tullio Cicerone was also from thisregion. Inhabitants from Ciociaria were devotees of the God Saturn, the major Roman deity of agri-culture and harvest, and wine and food have always been traditional activities here.

Two “DOC” red wines cultivated in this area have absorbed all that history: “Cesanese del Piglio” and“Cabernet di Atina”.

“Cesanese” is one of the most important and ancient red vine varieties cultivated in the Lazio Region;its original vineyards are still located on the small hills of the Piglio and Serrone Municipalities and won-derfully framed by the Ernici Mountains and the Regional Natural Park of the Simbruini Mountains in aunique area characterized by medieval villages and castles.

Its grapes create a deep ruby-red wine characterised by a unique scent that recalls its own environ-ment: velvety, somewhat tannic, soft with a good body able to be aged in oak casks. The wine is deli-cate on the palate and on the nose with complex flavours and the aromas of berry fruits. “Cesanesedel Piglio” obtained “DOC” status in 1973 and is produced in both dry and sweet versions.

“Cabernet di Atina” is the typical red wine produced in the Valle del Comino area and is the result ofthe cultivation of traditional and well established vines such as French Cabernet and Merlot which wereintroduced in the 19th century by the renowned Sig. Visocchi.

It is a powerful red wine aged in French oak barrels and has a big impact on the nose with rich spicyaromas and the scent of red fruits and hints of green pepper. Its organic qualities perfectly match theflavours of the local sheep and goat cheeses and the glorious truffles in the region.
