Fabbris Smallgoods is a Melbourne family owned and operated business, established in 1980. Our products are distributed nationally and throughout New Zealand, and include Hams, Bacon, Frankfurts, Silverside and specialty lines such as Prosciutto, Salami, Capocollo, Pancetta, Kaiser Fleisch and more.

At Fabbris, we are passionate about producing high quality smallgoods. Our products are more hand-made than mass produced and have come about from three generations of butchering and smallgoods culinary skills.

We use traditional methods to maintain an authentic, rustic look and taste throughout the entire product range.

We use only Australian pork and beef in all of our products and we are licensed and audited by Primesafe Victoria for the manufacture, storage and distribution of smallgoods. The HACCP (Hazard Analysis Critical Control Point) based food safety system of Fabbris Smallgoods ensures control at each phase of production.

Also available as Kransky with cheese.

Made from beef and pork then seasoned with paprika and spices, our Spanish-style Chorizo is enclosed in a casing and lightly smoked.

CALABRESE SALAMI

Originating from the Southern Italian region of Calabria, the Fabbris Calabrese salami is made from coarsely ground pork, combined with spices, chilli and the capsicum fl avour typical of Calabria. This combination results in a robust and spiced-up salami.

CAPOCOLLO

Capocollo is cut solely from the pork loin, making it extremely lean and is a must to any authentic antipasto platter.

Available in mild and chilli.

SHORT RINDLESS BACON

A lean and premium bacon which has been cured and smoked for extra fl avour. The rind has been removed.

Available in rashers or full.

Prime quality Australian pork middles are cured to perfection and naturally wood smoked. The rind has been removed and the middles sliced to produce first quality rindless bacon rashers; ideal for tasty breakfasts, hot sandwiches and burgers.
