Since our founding in 1952, we have based our foodproduction on the concepts of health and excellence,always in consideration of consumers who are mindfulof food-related values, allergen-free products and highquality gastronomy.

In committing to our motto, healthy gourmet food, ourpurpose thus lies in the dedication to people’s wellbeingthrough offering healthy and natural gourmet productswhose elaboration combines tradition and innovation.The values we apply in making our products are also areflection our company’s responsibility policy that pursuesexcellence in environmentally, economically and sociallyrelated processes. In 2010 we presented our first companyresponsibility report.

We were born in Vic, the heart of a region with a provenculinary heritage and a deeply-rooted swine-raisingtradition, thanks to the vision and drive of Josep VilacísArgila, who along with his wife, Cristina Erra Serrabasa,and patron, José Erre Musach, began to produce Errecured-cooked ham.

Josep Vilacís, a veterinarian specialized in animal hus-bandry and nutrition, had a passion for healthy eating.This passion led him to become a founding member ofthe Catalan Association of Food Science (ACCA) andhold conferences on health and nutrition with the aimto transmit his in-depth knowledge of healthy eating.

Through the knowledge he acquired on market demandat the tradeshows and congresses he attended in histravels around Europe and the USA, Josep Vilacís setout on a plan to produce a great cured-cooked ham, plusprocessing services in the county of Osona. In a shorttime, business would spread across the region.

Today Josep Vilacìs’s plan continues with his threechildren, who have maintained and applied the samevalues: the honesty and purity of the products themselves.We want to further Josep’s know-how so it will last.

In coherence with our values of honesty and the unders-tanding we have of our suppliers, customers and all thoseloyal to our origins, we opt for raising pigs on sustainablefarms. We select animals raised slowly so as to guaranteebetter quality of their meat, whose prime cuts featuremore protein, more flavor and more texture.

We work with whole pieces that have been boned, defattedand denervated in a completely manual process, applyingtraditional methods. This is a process that leaves thefresh meat’s qualities and properties completely unaltered.

In order to obtain maximum quality, we prepare just theright brine to highlight the texture and aroma withoutmodifying the identifying characteristics of each type offresh meat.

Thanks to the rubbing we do and maceration in refrigerationfor the right amount of time and rest, we obtain the naturalcolor, aroma and flavor that turns each one of our piecesinto a work of art.

100% naturally-produced cured-cooked ham is oursignature product, but we also make lightly braised turkeybreasts and thighs, ham and turkey frankfurters, sprea-dable ham textures made with the same process, delicacyand resting time that our ham is known for. All thiswithout ever renouncing the meat’s natural flavor andtexture that brings us high-quality and nutritious proteins,B vitamins and minerals such as zinc, phosphorus,sodium, potassium, and iron.

In our drive to have our products reach all consumers,they are allergen-free and we also have an organic productline certified by the Catalonian Council on OrganicAgrarian Production (CCPAE). In October 2007, webecame pioneers in the meat industry when the EuropeanUnion awarded us their first organic seal of approval in

conjunction with the CCPAE, conceded to our Cured-Cooked HAM.

We are constantly updating our product line with foodproducts that make it easier to have a healthy diet withoutrelinquishing the most exquisite and elegant tablepresentations, always upholding the manual processesthat have given our products added value. This is ourpassion.

Our experience in gourmet food production and innovationhas provided us with the support from professionalbutchers and delicatessens who demand and sell ourproducts day after day as a reference of locally-producedfood at their specialized establishments.

Sophisticated, light and highly versatile – this is cured-cooked ham, an honest-made product that becomes anauthentic gourmet delight with which to take care of ourbodies: a highly nutritional value that is both light andeasily digestible.

It provides us with a great number of minerals such asiron and vitamins, especially those in the B family. Italso comes highly recommended for its protein, onesthat are made more digestible thanks to the heat processit undergoes. 100 grams of this gourmet delight provides9 to 10% of the proteins humans need per day. OUR SIGNATURE BRAND

Firm in texture and elegant, our cured-cooked hamis a true delicacy, made from the best meat havingmore protein and the most taste. We seal in theflavor and texture of the meat itself, slightly fibrous,a sign that our ham is the most natural possible.

Once rigorously selected, the whole piece isworked manually whole by our experts. It is thepiece itself that determines the size of the pac-kaging and its final weight. We make it in a waythat preserves all its nutritional properties andshowcases its organoleptic characteristics (taste,aroma, texture...).

With no added proteins, our desire is to keep thenutritional properties of the raw material intact.All pieces are macerated for at least 5 days inrefrigeration.

OUR FINEST IN TASTE

This is the most natural way to present our cured-cooked ham as it preserves the original shape of the leg itself and maintains its layer of bacon fat, bringing it more aroma and taste, plus a smoother texture and a truly elegant cut. Ideal for sophisticated table presentations.

BOUQUET Cured-Cooked LEG. Sumptuous meat that is very smooth, elegant and subdued. Ham made of certified quality pork of at least 50% Duroc. Cut into 2 parts and vacuum-packed for easy handling.

NITRATE and PHOSPHATE FREE Cooked-Cured LEG. A version of our cooked-cured leg for the most demanding environmentally-friendly customers. It keeps all the flavour, colour and aroma of this mild and understated meat, but is free of added nitrates and phosphates.

Cooked-Cured DUROC LEG and Cooked-Cured C-DUROC LEG. An exceptional, one-of-a-kind curedcooked ham. The genetics of DUROC-certified raised pork guarantee an excellent quality cured-cooked ham whose rich veins of fat and a texture, color and taste make it unique in the market today. This animal is raised in way that respects proper husbandry practices and is fed naturally, mostly with grain.

All of the aroma and texture of boneless, salted and cold-chamber- marinated turkey breast, lightly braised to bring out the flavour. Cooked in bain marie and braised, it is then repackaged to keep it fresh.

TRADITION ANDCRAFTSMANSHIP COOKED INA BAIN-MARIE AND ROASTED

Produced following the most traditional methods, at Erre de Vic we place the bacon in brine and leave it to macerate for at least six days.

We employ a natural process, with no added phosphates or foreign proteins. Cooked in a bain-marie and slowly roasted, it offers an exquisite and mild flavour that makes it ideal for combining and dressing dishes.

Produced exclusively from selected local meat, under strict health and food controls, in compliance with animal welfare guidelines.

Here at Erre de Vic, the passage of time has lead us to meet the changing needs of our customers and adapt to their habits as far as eating and looking after themselves. That's why we also make low-salt varieties, which keep the same flavour and organoleptic properties as the traditional varieties, but an even healthier composition.

Our products have always been made with reduced amounts of salt. Now we have even gone a step further to reduce the amount of this mineral even further in some varieties, such as braised turkey, or cooked ham and chicken.
