26 Mini Comfort Desserts

1. Melt 2 tablespoons of the butter in a small saucepan, then brush it over the insides of ten ½-cup ovenproof ramekins (individual ceramic dishes). Sift a little cocoa into each ramekin, then tilt to coat the bottom and sides evenly, tapping out any excess.

2. Put the chocolate and remaining stick of butter in a heatproof bowl, set the bowl over saucepan of gently simmering water, and heat until melted, stirring from time to time.

3. Put the eggs, egg yolks, and superfine sugar into a mixing bowl and whisk together until thick and frothy and the whisk leaves a trail when raised above the mixture. Sift over the flour, then gently fold it in.

4. Fold the melted chocolate mixture into the egg mixture until smooth. Pour it into the prepared ramekins, cover, and chill in the refrigerator for 1 hour, or overnight if time permits.

5. For the caramel sauce, put the butter, light brown sugar, and honey into a heavy saucepan and heat gently for 3–4 minutes, or until the butter has melted and the sugar dissolved, then boil for 1–2 minutes, stirring, until it begins to smell of caramel and thicken. Remove from the heat and stir in the cream.

6. Preheat the oven to 350°F. Take the ramekins out of the refrigerator and let stand at room temperature for 10 minutes. Bake in the preheated oven for 10–12 minutes, or until well risen, the tops are crusty, and the centers still slightly soft. Reheat the sauce over low heat, if needed.

7. Dust the desserts with sifted confectioners’ sugar. Serve with the sauce in a pitcher for guests to pour on.

1¼ sticks unsalted butter

4 teaspoons unsweetened

6 ounces semisweet dark

chocolate, coarsely chopped

2 eggs, plus 2 egg yolks

²⁄3 cup superfine sugar

3 tablespoons all-purpose flour

confectioners’ sugar, sifted,

for dusting

CARAMEL SAUCE

4 tablespoons unsalted butter

¼ cup firmly packed

light brown sugar

1 tablespoon honey

²⁄3 cup heavy cream

Chocolate molten lava cakes with caramel sauce

This restaurant favorite is surprisingly easy to make, and it can be prepared in advance and stored in the refrigerator for up to 24 hours. The secret is to bake the desserts for the precise amount of cooking time and to test one before serving them. They should be crusty on top but soft and molten in the center.

Chill: 1 hour or overnight

Cook: 17–20 minutes

22 Mini Fruit and Nut Sweets

1. Line two baking sheets with nonstick parchment paper. Melt the peanut butter and butter in heavy saucepan.

2. Put the rice cereal and confectioners’ sugar into a large mixing bowl. Pour in the melted butter mixture, then stir. When cool enough to handle, using the palms of your hands, roll the mixture into 1-inch balls, then put them on the prepared baking sheets and chill in the refrigerator for 3–4 hours, or until firm.

3. Put the chocolate in a heatproof bowl, set the bowl over saucepan of gently simmering water, and heat until melted.

4. Using a teaspoon, dip the balls into the chocolate, one by one, making sure they are covered completely, then lift them out and return them to the baking sheets. Chill in the refrigerator for 1–2 hours, or until set. Serve or store in an airtight container in the refrigerator for up to five days.

8 ounces semisweet chocolate,

coarsely chopped

Peanut butter and chocolate candy balls

This recipe uses semisweet chocolate to coat the peanut candy balls, but, if you prefer, you can use milk or white chocolate, or a mixture of the three.

The classic Chicken Burger

1. Place the chicken breasts between two sheets of non-stick baking paper and fl atten slightly using a meat mallet or a rolling pin. Beat the egg white and cornfl our together, then brush over the chicken. Cover and leave to chill in the refrigerator for 30 minutes, then coat in the fl our.

2. Place the egg and breadcrumbs in two separate bowls and coat the chicken fi rst in the egg, allowing any excess to drip back into the bowl, then in the breadcrumbs.

3. Heat a heavy-based frying pan and add the oil. When hot, add the burgers and cook over a medium heat for 6–8 minutes on each side, or until thoroughly cooked. Add the tomato slices for the last 1–2 minutes of the cooking time to heat through.

4. Place some lettuce and a burger on each bun base, top with the tomatoes and a spoonful of mayonnaise. Serve immediately with chips.

This classic burger is a firm favourite with chicken and

burger enthusiasts alike, and for those who like to

watch what they eat, chicken burgers are lower in fat

than beef varieties.

Makes 4–6 175 g/6 oz new potatoes

225 g/8 oz mixed nuts, such as pecans,

almonds and hazelnuts

1 onion, roughly chopped

2 small eating apples, peeled, cored and

grated

175 g/6 oz blue cheese, such as Stilton,

crumbled

55 g/2 oz fresh wholemeal

breadcrumbs

2 tbsp wholemeal fl our

1–2 tbsp sunfl ower oil

salt and pepper

lettuce leaves

4–6 cheese-topped burger buns, split

red onion slices

1. Cook the potatoes in a saucepan of boiling water for 15–20 minutes, or until tender. Drain and, using a potato masher, crush into small pieces. Place in a large bowl.

2. Place the nuts and onion in a food processor or blender and, using the pulse button, chop fi nely. Add the nuts, onion, apple, cheese and breadcrumbs to the potatoes in the bowl. Season to taste with salt and pepper. Mix well, then shape into four to six equal-sized patties. Coat in the fl our, then cover and leave to chill in the refrigerator for 1 hour.

3. Preheat the barbecue. Brush the burgers with the oil and cook over medium coals for 5–6 minutes on each side, or until cooked through.

4. Place the lettuce leaves on the bottom halves of the buns and top with the burgers. Top with red onion slices, add the lids and serve immediately.

TODAY, WE FIND the very basis of the laws of Western

civilization in the Ten Commandments. Unlike many of

the other rules and laws that God gives Moses, these

are the fundamental, most important laws God expects

his people to live by.

1. I am the Lord thy God . . . Thou shalt have no other

gods before me.

2. Thou shalt not make unto thee any graven image.

3. Thou shalt not take the name of the Lord thy God in vain.

4. Remember the sabbath day, to keep it holy.

5. Honour thy father and thy mother.

6. Thou shalt not kill.

7. Thou shalt not commit adultery.

8. Thou shalt not steal.

9. Thou shalt not bear false witness against thy

neighbour.

10. Thou shalt not covet thy neighbour’s house, thou

shalt not covet thy neighbour’s wife . . . nor any thing

that is thy neighbour’s.

The Ten Commandments

THE TEN COMMANDMENTS

Upon their deliverance from Egypt, the children of Israel make camp at

the foot of Mount Sinai. There, they set up twelve altars (one for each of the Twelve Tribes of Israel), and the people make sacrifices in celebration of their newfound freedom. God summons Moses to the top of the mountain, where he stays for forty days and forty nights as God dictates new rules for His people to live by.

Unfortunately, the people have no idea why Moses has vanished. Left below, without

guidance, they demand that Moses’s brother Aaron create some novel way for them to

worship God. Aaron has an idea and tells the people to bring their gold and jewels, which he melts

down, fashioning a golden calf for them to venerate. Witnessing this display, God, who has given

Moses two stone tablets with his sacred commandments etched on them, grows angry, ordering

Moses off the mountain. A puzzled Moses descends Mount Sinai, only to find his people singing and dancing around the golden calf. Furious, Moses hurls God’s tablets to the ground, breaking them into pieces.

Death and disease await all who insisted on worshipping the golden idol, but after Moses begs God’s forgiveness for the others, God orders him to cut another set of tablets and return to Mount Sinai. Moses stays another forty days and forty nights, and again God chisels the Ten Commandments into stone.

AFTER MOSES LEADS THE ISRAELITES OUT OF EGYPT, GOD SUMMONS HIM TO MOUNT SINAI. THERE, GOD

GIVES HIM TWO STONE TABLETS.

in large part to its vigorous demographic growth. In barely fifty years, between 1800 and 1850, the city’s population multiplied tenfold, from 70,000 to 700,000 and from 1850 to 1950 again to almost eight million in the centre alone. Today it is the most populated city of the United States with 22 million residents in the city area which covers the five municipal districts of Manhattan, the Bronx, Brooklyn, Queens and Staten Island, in addition to the various neighbouring populations of Long Island and New Jersey.

Land of dreams Ever since its foundation, New York has been a city of inmigrants, and its people saw the arrival of new generations from all corners of the world seeting the American dream as a natural occurence. In 1811, local authorities were obliged to plan the urbanisation of Manhattan by means of the famous grid system comprising of sixteen large avenues from north to south, named with ordinal numbers and one hundred and fifty-five streets running east to west named also with

ordinal numbers. Throughout the 19th century, millions of Irish and Germans began to inhabit these new districts, followed in 1890 by the Italians and Eastern Europeans who flooded Ellis Island, a small island in the Bay set up as a customs office to control immigration. During the first decades of the 20th century, New York also became one of the principal destinations for what was called the Great Migration. This was the displacement of hundreds of thousands of African-Americans from the slavery states of the south to the industrialised areas of the east as well as hundreds of thousands of Puerto Rican’s who took advantage of the new status as American citizens from 1917.

This migratory phenomenon transformed the Big Apple into a model of diversity and a society with an independent dynamism little related to the rest of the United States both in material and ideological terms. Currently, six out of every 10 residents have descendants from multiple countries from all corners of Europe, with 16% having African-American roots, 15% Hispanic and

In 1931, the Empire State Building became the tallest building on the planet, a title it held for more than forty years. It became a universal icon thanks to the gorilla King Kong in the 1933 film which served as a particular example of the culture concept exported successfully by New York to the rest of the world, based on originality, professionalism and popularisation and expressed in forms as distinct as Broadway musicals, the films of Woody Allen, the literature of Truman Capote, Tom Wolfe and Paul Auster, the music of Gershwin, Charlie Parker, Pete Seeger and Lou Reed, and the art of Andy Warhol and Roy Lichtenstein, interpreted or exhibited in contemporary cultural venues such as the Lincoln Centre, Carnegie Hall, the MOMA and the Metropolitan Museum.
