welcomeWELCOME TO A CAPALABA PARK CHRISTMASHands up if you are guilty of saying ‘hasn’t time flown… I can’t believe it is Christmas already”. As I’m sure most hands are up in the air at the moment, maybe this is a good time to set a new goal this Christmas. Rather than let everything rush on by and wonder where it all went come December 26th, try to live in the moment and make the most of this festive season.

Whether it is taking time out to sit and listen to some carollers sing an old favourite or bringing all the grandkids together for a group photo with Santa, try to create one lasting memory each day. As the saying goes, take time to smell the roses, or in this case, listen to the carollers!

On behalf of all at Capalaba Park Shopping Centre, I would like to wish you and your family a very Merry Christmas and a Happy Healthy and Prosperous New Year. Thank you for supporting us during 2012 and we look forward to welcoming you back in 2013.

Best wishes,

Christian

TRAVEL

South PacificSOJOURN

The magical South Pacific Islands provide the perfect tropical retreat, where sparkling blue waters meet white sandy beaches, just a short distance off the east coast of Australia.

Each of the islands is popular for a different reason, but most holidaymakers choose them because they offer a cultural diversity, a relaxed atmosphere and a warm welcome.

For the adventure seekers, there are plenty of land and water activities, as well as some of the world’s best dive sites and unique walking trails into the mountains.

Fiji is famous for its friendly people, its magical beaches and water sports activities, such as scuba diving, snorkelling, hiking and sailing. While you are there you must try the traditional Kava drink and Lovo feast.

New Caledonia has a fantastic mix of native island charm and French sophistication. Wander the streets of the cosmopolitan capital Noumea and observe the colonial architecture, enjoy a coffee in a Parisian style café or laze on the beautiful beaches.

Vanuatu is charming, but if you are looking for a party vibe, travellers should check out the capital of Port Villa. Other beautiful and captivating highlights to be explored include the Mt Yasur volcano and magical Lamen Bay.

Whether it is the marine life or island hikes that you are interested in, the opportunity to explore the South Pacific is at your fingertips.

Speak to a Flight Centre consultant about booking your next holiday today (opposite Coles) or phone 3843 8100.

TO BOOK A GREAT HOLIDAY1 Consult a leading travel retailer.

They have access to special offers that aren’t available on websites and are continually updated on new deals.

2 Ask about alternative airfare routing options.

3 Book flights mid-week if you are flexible with your travel dated, because they are generally less crowded and cheaper.

4 Avoid peak travel times if possible. Christmas, Easter and school holidays are very expensive times to travel.

5 Ask for companion fares with airlines, which means cheaper tickets for people travelling together.

6 Book accommodation and flights together, as travel consultants can negotiate better deals on both.

7 If you are doing a lot of internal travel in a particular country, it is cheaper to book a rail pass or a bus pass.

8 If you are a student or under 26 years old, ask about specially negotiated student and youth airfares.

9 Sign up to travel retailers’ weekly newsletters to stay on top of late deals and special offers.

10 Watch out for hidden extras when booking online. Airfares and taxes can be complicated and website prices often increase as you progress through the booking.

FOOD

Page 19: Parklife' magazine Christmas issue 2012

MARMALADE & MUSTARD BAKED HAMServes 16

6 kg (13 lb 8 oz) whole classic smoked English-style leg ham (pages 74–75), skin scored deeply into the fat in diamonds2 x 750 ml (26 fl oz) bottles dry cider6 pieces blade mace100 g (3½ oz/½ cup) soft brown sugar300 g (10½ oz) Seville orange marmalade½ teaspoon mustard powder

Take the ham and soak it in a cider-flavoured stock overnight — use 1 bottle of the cider and enough water to cover (don’t worry if the hock isn’t completely under the water).

Remove the ham from the brine the next day and place in a deep roasting tin. Discard the soaking liquid (you could actually boil it down to add to the baste if you have the time and energy).

Preheat the oven to 150ºC (300ºF/Gas 2). Bring the remaining cider to the boil in a saucepan with the mace, sugar and marmalade. Simmer for 10 minutes, then add the mustard powder. Pour over the ham and cook in the oven for 2 hours, basting regularly with the juices from the tin. You may want to start the process with the ham covered to keep it moist, then remove the foil or lid for the last hour of cooking.

When the ham has warmed through (test the temperature

next to the bone, it needs to be 70ºC/158ºF) and the marinade has started to thicken it is done — you can speed up the process by draining the juices from the tin and reducing them in a pan until thick and syrupy — if your roasting tin is the type that can stand some heat — do it in the tin on the stovetop.

Spoon the sauce over the hot ham. Serve with a bit of mustard, a warm potato salad and a glass of something good.

ZUCCHINI, TOMATO & BOCCONCINI SALADServes 4

4 zucchini (courgettes)1 teaspoon sea salt2 ripe tomatoes, finely chopped8 baby bocconcini (fresh baby mozzarella), halved80 ml (2½ fl oz / 1/3 cup) olive oil1 tablespoon apple cider vinegar2 basil leaves, thinly sliced

Create zucchini ribbons using a vegetable peeler. Put these in a bowl, sprinkle with the sea salt and toss several times to ensure the zucchini is well coated. Set aside for 10 minutes.

Drain any liquid from the zucchini and pat dry on paper towel. Arrange the zucchini ribbons on a serving platter. Top with the tomato and bocconcini.

In a small bowl, whisk together the olive oil and vinegar. Spoon this dressing over the salad and scatter over the basil. Season with freshly ground black pepper and serve with crusty bread.

Place the rose petals, sugar and 310 ml (103⁄4 fl oz /11⁄4 cups) water in a large saucepan and bring to the boil. Reduce the heat and simmer for 8 minutes, or until a light syrup has been made. Remove any scum as it forms. Cool and stir in the rosewater.

To serve, pour the syrup into chilled glasses and top with the sparkling mineral water.

FRESH FOODChristmasSelect

At Fresh Sensations, we select the finest quality mangoes from Bowen and the North Queensland region as they are always the sweetest and juiciest.

When choosing, we look for a rosy red blush as that indicates a higher level of sweetness.

Mangoes are in season from October to January so make sure you enjoy them while they are here.

Enjoy!Mangoes are simple and easy to prepare. Cut both cheeks evenly, leaving the seed. Then score in a criss-cross pattern before pushing from the underside to give that perfect diced look.

My favourite mango recipe is fresh chilled mango with Vanilla Ice cream. Perfect for a hot summer afternoon or a simple dessert.

They are also great in a summer salad and you can pick up our a fresh Mango Macadamia Salad from the Deli.

We sell mangoes loose, but many customers buy them by the tray and give them as Christmas gifts.

Everyone knows that they do get messy but a chin full of mango juice is half the fun of summer!

StoreMake sure the mangoes ripen before cutting. They will be ripe when they have a consistent yellow colour and are firm to the touch.

It is best to ripen at room temperature and leave them until fully ripe.

Once ripe, store them in fridge but avoid refrigeration if they are still green as this may deteriorate the quality of the fruit.

For many, summer means mangoes and none more so than Fresh Sensations manager Chris

Nicolaou. Chris shares his tips about how to get the best out of

the mango this Christmas.

I love it when I open the shop in

the morning and I get hit

with that aroma of fresh

ripening mangoes.

That tells me that

summer is here.

TALK TURKEY THIS CHRISTMASServe a traditional Christmas roast to remember with your choice of Lenard’s festive stuffings (Traditional Herb, Camembert & Bacon, Cranberry Macadamia, Apricot & Almond or Pistachio, Bacon & Sage). Roast in the oven for 50-60 mins per kg.

Place your Christmas order at Lenard’s today – located in Market Lane opposite Woolworths.

PAN JUICE GRAVY The tradition of preparing the Christmas gravy has been immortalised in the Paul Kelly song ‘How to Make Gravy’ and if you’ve ever wondered how to do it without the packet, here’s a simple recipe from Lenards.

1 cup pan juices (excluding any fat, which can be separated out) 3 tablespoons plain flour 1 cup chicken stock

Heat pan juices in a saucepan over medium heat and add flour one tablespoon at a time. Stirring continuously to avoid lumps, add stock gradually until thickened.

For thinner gravy, add additional water or white wine and season with pepper and your favourite fresh herbs.

IN THE COMPANY OF STRANGERS BY LIZ BYRSKIWhen a group of intriguingly diverse strangers come together at lavender farm and holiday retreat, the magical Benson’s Reach, each is weighed down by their past and hopeful of their future. Neither Ruby nor Declan have seen Cat for many years when she dies, leaving behind her Margaret River legacy. Along with others who have retreated to the beautiful property, Declan and Ruby struggle to come to terms with their pasts, presents and each other. Poignantly written with characters so real it hurts, Company of Strangers is a book not to be missed this summer.

CULTURE

ONE DIRECTION TAKE ME HOME (DELUxE)The hottest boy band of the moment made US chart history when the lead single from this record, ‘Live While We’re Young’, became the highest selling first week single by a UK artist ever. It’s a huge achievement for the young band, but doesn’t come without its own pressure, as the single’s stellar success has created almost unprecedented hype around the rest of the album. Fortunately, the boys have called in a host of first-class collaborators including Ed Sheeran and McFly’s Tom Fletcher, which has helped them create an album that’s beyond their years. The special limited-edition deluxe edition is well worth the extra dosh – you score four extra tracks and an exclusive booklet featuring personal photos and interviews.

THE DARK KNIGHT RISESDirector Christopher Nolan puts a triumphant full stop on his dark Batman trilogy with this deliciously moody flick. In Batman Begins we learnt that Bruce Wayne (Christian Bale) developed his knock-‘em-dead skills during brutal training with a mysterious ancient cult, which was later revealed as a gang of merciless nutcases. You can understand Wayne’s concern, then, when one of them shows up looking like a cross between Hannibal Lecter and Darth Vader to terrorise the city. The catch? Wayne has been living in exile for eight years and Batman has become a villain in the eyes of the people of Gotham. We’ll avoid a major spoiler, but rest assured that there’s enough ambiguity in the ending to leave the door slightly ajar for another chapter.
