TROUBLESHOOTING GUIDE

CLEANING PROCEDURE FOR ISLAND OASIS SB-2100

A. MACHINE – daily1. Use cleaner and container provided by Island Oasis.2. Directions are on container.

B. BLENDER CUP - dailyTO CLEAN:

1. Remove BLENDER CUP from machine.2. Remove SPLASHGUARD from machine by gripping the front of the flexible SPLASH

GUARD with two hands and pulling down towards the base of the machine, separatingthe flexible SPLASHGUARD from the solid plastic ICE CHUTE.

3. Remove ICE CHUTE by turning the white ICE CHUTE LOCK (located just above the right hand side of the SPLASHGUARD)

a. grip the ICE CHUTE LOCKb. push up to compress the springc. rotate the ICE CHUTE LOCK to the left (counter-clockwise) to unlock the

ICE CHUTE from the machined. when unlocked, the front of the ICE CHUTE will drop down from the

machine when pulled by the ICE CHUTE LOCKe. the rear will stay engaged by two hooks which are part of the plastic ICE

CHUTEf. pull forward gently on the ICE CHUTE and it will disengage from the

machine4. Clean both SPLASHGUARD and ICE CHUTE with solution of warm (110 degrees F) water

and several drops of dish soap.5. Fill BLENDER CUP 1/4 full with warm (110 degrees F) water and add 2 to 3 drops of

dish soap. Return to machine and run blender for 30 seconds.6. Fill BLENDER CUP 3/4 full with warm (110degrees F) water (do not add soap). Return to

machine and run blender for 30 seconds. Empty cup. 7. If any solid residue remains, repeat steps B1 through B6.

TO SANITIZE:8. Clean and rinse SPLASHGUARD, ICE CHUTE, and BLENDER CUP as in steps B1 through B7.9. Sanitize SPLASHGUARD and ICE CHUTE with a chlorine-based sanitizing solution (***)

having a minimum chlorine concentration of 100 PPM. Rinse SPLASHGUARD and ICE CHUTE with cold water.

10. Empty BLENDER CUP and fill 3/4 full with cold chlorine-based sanitizing solution (***) having a minimum chlorine concentration of 100 PPM. Return to machine and run blender for one minute.

11. Fill BLENDER CUP with cold water (do not add soap or sanitizing solution). Return to machine and run blender for 30 seconds. Empty cup.

12. Return BLENDER CUP to machine and run blender for 10 seconds.

***RECOMMENDED SANITIZING SOLUTION: 1 TABLESPOON OFCHLOROX INSTITUTIONAL BLEACH PER GALLON COLD WATER.9

Island Oasis mixes are all-natural and they use only the highest quality ingredients -

No preservatives, artificial colors or flavors.

Here’s IO’s product line:

• Strawberry• Banana• Peach• Raspberry• Mango• Wildberry

* Shelf life: 1 year frozen; 15 days refrigerated

Product Handling:• Store frozen at 0º and below

• Thaw product under refrigeration for 24 hours

• Full cases - 48 hours > Individual quarts - 24 hours

• Product can be refrozen if unopened

• Shelf life: 2 years frozen; 21 days refrigerated; 60 days unopened

• Do not thaw product in microwave. You may, however, place cartons in warm

water for approximately twenty (20) minutes.

Case Pack: 12/32 oz. gable top cartons

Average Weight: 30 pounds

Product Yield: 384 ounces per case (approximately 96 drinks)

Case Dimensions: 9 1/16” high X 8 5/8” wide X 11 1/2” long

DAILY CLEANING PROCEDURES

To keep your blender running smoothly, do these simple maintenancesteps at end of day.

1) Run the blender to shave most of the remaining ice in the machine. You may have a few cubes left in the bottom of the hopper.

2) Remove the hopper cover and clean. Pour sanitizer into the top.Caution: Do not remove hopper bin when full of ice.

3) Unplug the machine.

4) Wipe out the hopper and its lid with a clean towel from the Sanitizer. Leave the lid off to let the unit dry overnight.

5) Remove the rubber blender cover from the ice chute. Then wash, rinse and sanitize it in the three-compartment bar sink. Put it on the drainboard to air dry.

6) Remove ice chute and clean.

7) Wipe the outside of the unit with a clean, sanitized towel, and make sure to clean the blender, backsplash area, and underneath the exterior of the ice chute area.

8) Pour 4 oz of sanitizer solution into the drain area at the base of the blender.

EQUIPMENT INFO

Island Oasis designed the SB-2100 Shaver/Blender with restaurant operators in mind.

It offers you:

1) SPEED - You’ll have a perfect blended cocktail in just 9 seconds.

2) CONSISTENCY - When you use the measuring cup or the measurement

lines on the blender cup to pour mix and liquor, the SB-2100 will shave the

ice and blend a consistent drink every time.

3) VERSATILITY - Since it’s a Shaver/Blender, th SB-2100 will make an

endless variety of drinks, and you won’t have to make any adjustments.

It can even make up to three drinks at a time

with just a push of the button! With the ice

hopper full, the SB-2100 will yield about

42/13 oz. drinks.

4) When combining Island Oasis mixes, the portions must be divided equally; e.g.Strawberry Colada -2 oz each of Strawberry & Piña Colada mix.

5) To make non-alcoholic drinks, substitute liquor by adding an extra ounce of Island Oasis mix.

To make your frozen cocktail, begin by:

1) Filling ice hopper to within one (1) inch of the top with cube ice only. Be sure ice is free of any debris, such as bottle caps. This can jam the machine and cause damage to the shaver blade.

2) Place cover on ice hopper and turn on power.

3) Use measuring cup provided to pour the amounts of mix and liquor needed.

4) Pour contents of measuring cup into blender and place on the blender base. Prior to starting operation of machine, be sure blender cup is set correctly on blender base. Press drink button and wait until blender cycle comes to a complete stop.

5) Remove blender cup and pour the cocktail into your glass and garnish.

When making multiple drinks, no adjustments need to be made to the SB-2100.However, you must pour the proper amounts of ingredients. The ice flow will adjustitself accordingly. The following chart is based on a 12 oz cocktail.

OPERATING THE SB-2100

THE SB-2100’s BASIC FUNCTIONS:Timing and ice flow adjustment are key to the operation of your SB-2100. At the time

of installation, these adjustments will be made by the Island Oasis representative. After

that, they must not be tampered with. This will lead to the malfunction of the SB-2100,

causing needless service calls and down time. Caution: Do not operate the machine

without the rubber splashguard in place.

HERE’S A REVIEW OF THEDRINK BOARD FUNCTIONS:

1) On/Off switchControls power to the unit.

2) Stop buttonThe unit will shut down and cancel the drink cycle.

3) Drink buttons (1,2 or 3)Drink cycle will begin when these buttons are pushed.

4) Shaver buttonThese let you add more ice

5) Blender buttonLets you manually blend your drink.

MAKING FROZEN DRINKS

The presentation of your frozen cocktail is important to the success of the frozen

drink program - from the size and style of the glass to the garnish. To achieve

consistency, it is important to blend the proper amounts of mix, liquor and ice.

The drink size offered most often is 12 ounces. However, this will vary depending onyour needs. The style of glassware also varies. The most commonly used are:

Fiesta Grande > Margarita

Poco GrandeTulip Champagne Daiquiri/Piña ColadaTall Wine

Items to consider stocking for garnish are:

• Strawberries • Cherries • Shredded Coconut• Peaches • Lemon • Slivered Chocolate• Bananas • Limes • Almonds• Pineapple Chunks • Orange Slices • Whipped Cream

To achieve consistency, it is important to blend the proper amounts of mix, liquor &ice. To determine what the ratio of ingredients are, follow these procedures.

1) Divide drink size by 3 (12 oz / 3 = 4 oz). This will give you the amount of mix needed.

2) Liquor averages 1-1.25 oz with 10-16 oz drinks.

3) The difference between drink size and total mix and liquor is what the ice flow should be.e.g. Drink size 12 oz

Mix & liquor -5 ozIce flow 7 oz

This ice flow is set by Island Oasis at the time of installation.
