B eing a McConnell Golf “concierge” is one of my favorite jobs. I love arranging for our members to play

golf at one of their sister properties, especially our destination courses and even more so if they’ve never experienced the course. I always recommend Musgrove Mill for the “guys golf getaways” and Old North State for couples retreats. Now that McConnell Golf members have access to the Grande Dunes Members Club and Ocean Club, I’m always going to recommend a trip to the Grand Strand for the whole family.

Starting at the southern tip of the Grand Strand, McConnell Golf ’s Reserve Golf Club is located in one of the oldest resort areas on the east coast--the relaxing Pawleys Island, SC. Like Pawleys Island, The Reserve Golf Club feels as if it has always been there. Surrounded by protected conservation areas, this 350 acre track embraces 160 acres of natural wetlands with wooden bridges and a minimal number of cart paths linking each secluded hole. With very few homes on the course, I strongly consider The Reserve a private sanctuary. Not only is it the fifth-ranked golf course on the Grand Strand, but it is home to alligators, deer, turkeys, foxes & funny looking squirrels with big tails that look like raccoons. Famed PGA golfer and designer of The Reserve’s course, Greg Norman once said, “My philosophy on golf course design is simple, I like to work with nature, not against it...using the site’s intrinsic features to determine what goes where.” The Shark certainly accomplished this when he created The Reserve Golf Club.

Besides golf, families can enjoy The Reserve for much more from fine dining experiences by Executive Chef Grayson Glascock who might be showcasing his low country shrimp boil, to large events such as The Pawleys Island Festival of Music & Art. Last fall’s festival featured Marilyn McCoo and Billy Davis Jr! With great beaches and vacation amenities close by in Pawleys Island, the overall quality of family fun is great for our members who travel to The Reserve Golf Club.

Now that McConnell Golf manages The Grande Dune’s private facilities in Myrtle Beach, the family fun continues on the northern end of the Strand. ho knew that Raleigh native Chesson Hadley’s dramatic victory at the 2013 Rex Hospital Open at TPC Wakefield Plantation would only be the preliminary set-up to a Hollywood script-type chain of events that actually happened in real life?

In Raleigh last year, the former Georgia Tech All-American began his final round at TPC Wakefield five

strokes behind 54-hole leader Danny Lee, yet closed with a 64 for a two-stroke victory. On the 72nd hole — with family and friends enjoying a front-row seat — Hadley nicked the flag with a wedge from 130 yards and stopped it a foot from the cup, his kick-in birdie wrapping up a final-round 7-under 64 that helped Hadley historically become the first winner of the bourgeoning Rex

tournament to have actually been born at Rex Hospital.

In the process Hadley secured his 2014 PGA Tour card and a first-place check for $112,500, pushing his season total to $249,784 — more than enough to secure a spot among the 25 leading money winners from the Web.com Tour’s regular season. Hadley then culminated 2013 by winning the season-ending Web.com

It proved a perfect springboard into the PGA Tour for Hadley, who finished tied for fifth in just his second PGA Tour event last year, the Shriners Hospitals for Children Open in Las Vegas — where he played in Sunday’s final pairing — and he also recorded a top-10 finish at Pebble Beach in January.

the same day defending Wyndham Championship winner Patrick Reed won the World Golf Championship’s Cadillac Championship at Trump National Doral — Hadley broke through and earned his first PGA Tour victory, the Puerto Rico Open at Trump International.

His inaugural PGA Tour win came in wind gusting to 25 mph and — as it did at Wakefield — over Danny Lee

by two strokes. In just his 13th PGA Tour start, the 26-year-old Hadley birdied the final two holes for a 5-under 67, becoming the first rookie winner since Jordan Spieth won the John Deere Classic in July of 2013.

Hadley finished with a tournament record 21-under 267 and earned $630,000, a two-year Tour exemption and berths in The Players Championship, PGA Championship and Hyundai Tournament of Champions.

He also moved into the mid-60s in the world ranking, giving him a chance to get into the Masters if he managed to crack the top 50 by the end of the Valero Texas Open. “[The win] opens up a lot of doors,” Hadley said. “It guarantees me a major. I’ve never played in a major before.”

Nevertheless, Hadley knew his PGA Tour success likely arrived more quickly due to his 2013 success back at Wakefield Plantation. “The two wins last year, that helps a lot because you’re there, you’ve learned how to win, you learn how not to choke, and there’s a lot going on,” Hadley said.

Wakefield Plantation’s own Head Golf Professional Paul Dickens also qualified for the 2013 Rex Hospital Open by shooting 66 (-5) at the qualifier and finishing one shot ahead of Burke Comer. Wakefield’s Director of Golf Josh Points shot 73 and missed qualifying by just three shots.

Also in the Rex Hospital Open field for the second year in a row was McConnell Golf Scholar, Carter Jenkins (2010 Raleigh recipient), who enrolled at UNC-Greensboro last fall. Carrying Jenkins’ bag at the Rex Hospital Open last year – and a participant in the 2013 US Open at Merion – was fellow McConnell Golf Scholar, Grayson Murray.

TOURNAMENT SEASON AT MccONNELL GOLf

The 2014 Rex Hospital Open is part of yet another busy season of top-flight tournament action at McConnell Golf venues across the Carolinas as the company’s highly touted courses host professional tournaments, collegiate championships, amateur

events and elite junior competitions. On the April calendar alone, there are five tournaments contested over four of McConnell’s eight championship courses.

On April 7, Sedgefield Country Club’s Ross Course in Greensboro kicked off the season by hosting the 37th Carolinas Club Pro-Am Championship. A week later on April 14, Tom Fazio’s refurbished Treyburn Country Club in Durham welcomed today’s scholastic stars at the 8th North Carolina High School Invitational, followed by the 9th Carolinas Pro-Junior Championship on July 21.

A year after Raleigh Country Club hosted the event, The Reserve in Pawleys Island, S.C., welcomes the 34th Carolinas Mid-Amateur Championship from April 24-26. Sedgefield’s Scott Harvey will be seeking his third straight victory in this event. Later in the summer from July 31-August 3, Greg Norman’s design hosts the Palmetto State’s best in the 83rd South Carolina Amateur Championship. Meanwhile, two months earlier, from June 10-13, Sedgefield’s Ross Course entertains the game’s top junior players at the AJGA FootJoy Invitational.

The Cardinal Amateur ( July 18-20) at Sedgefield’s Dye Course in Greensboro remains one of the nation’s most coveted amateur events with a storied history of matching some of the world’s top players in a competitive but fun environment. The Dye Course also hosts an eGolf Tour professional tournament May 18-20 and 53rd Carolinas Senior Amateur Championship September 24-26. Not to be outdone, Musgrove Mill Golf Club in Clinton, S.C., provides a stern

test during the 33rd South Carolina Mid-Amateur Championship from October 3-5.

Acc MEN'S cHAMpIONSHIpThis year marks the ninth

consecutive year and 14th overall that the ACC Men’s Championship has been held at one of the finest, the Old North State Club at Uwharrie Point in New London, N.C. The 61st edition of the 54-hole event begins Friday, April 25 at Old North State, where the par 72, 7,102-yard layout is perennially ranked among the top-five in the state.

In the championship’s 60-year history, Wake Forest has won a league-best 18 titles, followed by Georgia Tech’s 12. North Carolina has won 10 and shared one, while Duke has won seven outright and N.C. State has shared just the 1990 title. From 1967-1986, Wake Forest (12

titles) and North Carolina (5) combined to win 17 of 19 ACC Championships. The Demon Deacons reeled off 10 straight to start the streak, while the Tar Heels won four of the last six.

Last year the Men’s and Women’s ACC Golf Championships were a double dip for the Duke Blue Devils. The Lady Blue Devils brought it home at McConnell Golf ’s Sedgefield Country Club, while on the men’s side, Duke captured its seventh ACC

Championship at ONSC, topping Virginia Tech and Florida State by 3 shots. Notably, Georgia Tech’s Anders Albertson won the individual championship shooting a new championship record of 15 under par (201).

The list of champions from Old North State Club is impressive — including Wake Forest’s Webb Simpson, 2008 and Georgia Tech’s Chesson Hadley, 2010 – who are two of the PGA Tour’s hottest young players. What’s even more jaw-dropping are the names of participants who have not won an ACC individual championship: former Clemson stars Lucas Glover, Jonathan Byrd and D.J. Trahan; Georgia Tech’s Stewart Cink and Matt Kuchar; NC State’s Tim Clark and Carl Pettersson; Bill Haas from Wake Forest and Duke’s Joe Ogilvie, just to name a few.

More telling is the fact that the former ACC players who competed at Old North State Club in the ACC tournament and who have gone on to play on the PGA Tour have amassed a combined total of 62 professional victories — 30 on the PGA Tour and 32 on the Web.com Tour or in International Tournament events.

“I think the ACC Championship is huge for every team,” Andrew Sapp, the third-year Tar Heels coach who also played for UNC from 1991-93, told Triangle Golf Today. “Our sport is kind of rare in that there isn’t a regular season champion like you might have in volleyball or basketball or baseball. So it all comes down to one weekend as to who is the ACC champion.”

On the women’s side, the Lady Blue Devils captured their second ACC Women’s Golf Championship in a row at Sedgefield, earning their 18th ACC Championship in school history. Virginia’s Brittany Altomare (71-70-76) maintained her second-round lead, carding a 4-over 76, and claimed the individual title with a 54-hole total of 4-over 217. In becoming the first Cavalier to capture the ACC individual title, the Shrewsbury, Mass. junior had four birdies and 42 pars en route to edging Duke’s Laetitia Beck (74-74-72) by two strokes.

“I love Sedgefield,” said Duke women’s coach Dan Brooks, who in his 29 seasons at Duke has won five NCAA championships and 113 team titles, the most by any women’s coach in NCAA history. “You know that if you play well [at Sedgefield] you can play well anywhere because it’s such a difficult course.”

With the name McConnell Golf, people may glance over some of the other amenities our clubs have to offer. Our tennis programs offer something for the whole family, including opportunities for tennis buffs to advance their game.

TPC Wakefield Plantation, Treyburn Country Club, Sedgefield Country Club and Old North State Club all offer a variety of tennis programming for every age and ability. Featuring clinics, lessons, kid’s camps and adult socials, each of our tennis programs highlights a variety of interests with the goal of elevating the game and the entire tennis experience.

LESSONS & GROUp cLINIcSTennis can be for the individual,

pushing themselves through personal lessons and group clinics to master their

strokes and the understanding of the game. Every move means something, and every stroke sets you up for the next point. Learning “if I hit it here, they will hit it there” ignites the mental game so that the physical and psychological aspects of the game move hand-in-hand to advance the player through the ranks. Through one-on-one work and repetition of hitting, players get into the rhythm of the sport.

To develop the player, our coaches break down the fundamentals of the game and help players grasp all aspects of winning progress: mastering a stroke, increasing health and fitness levels and elevating confidence, all with the goal of marking a “w” in the win column

on match days. McConnell tennis professionals are experienced coaches and hold a variety of certifications from some of the top assocations in the nation. They are equipped to assist every level of player.

LEAGUE pLAyTennis can also be for camaraderie

and teamwork. Those specializing in doubles or league play are part of something bigger than themselves, and players forge lasting friendships made through the battle of the game. League play, at both the adult and junior level, has developed into a strong arena for country club tennis, and our clubs are in the spotlight regularly.

Club events are a special time at all of our properties, and many of these center around holidays as families gather to celebrate their time together. We understand that this time is precious for our members, and we work tirelessly to deliver the most memorable experience possible for our members and their guests.

At Wakefield Plantation in Raleigh, the Christmas season provides the club many opportunities to welcome members in from the cold and celebrate the joys of the season. The Santa Brunch is a favorite of member Patrick Newton. “Christmas brunch with Santa is something we always enjoy as a family. It really sets the tone for the Christmas season for us,” says Mr. Newton, a

member Kirk Patterson shares the same sentiments regarding the annual Santa Brunch in Greensboro. “We are still pretty new, but we like the events during the holidays that the kids can attend. Events like the Santa Brunch seem like they may become a Patterson Family tradition,” echoed Patterson. Bringing together families is what we are all about at McConnell Golf! Although the Pattersons have only been members since late 2012, they are already able to see the value created by the club when spending treasured time together as a family at club events.

While our clubs specialize in member events, all have a great reputation for

hosting banquets and special private events as well. What better place than your club to celebrate your family’s milestones, such as weddings, retirements, birthdays and anniversaries? Wakefield Plantation member James Weathers can attest. “Our son was married and the reception was held at the club. MEMBERS ON GOLf!Getting back to the real roots of

McConnell Golf, let’s take a look at how our members really feel about our true passion: GOLF! In addition to attending Santa Brunch at Wakefield Plantation, Patrick Newton enjoys playing in various golf tournaments and events at the club, especially the Member-Guest tournament. “My favorite memory is (almost) hitting a hole-in-one during the first Member-Guest I ever played in,” says Newton. “It was on the second play-off hole (#11) with my good childhood friend, Pat Biemer, who came for the week. Hitting a good shot in front of a crowd was very exciting - I hope I can do it again someday. Maybe next time it will go in!”

Sedgefield’s Kirk Patterson shares the joy and excitement of playing well with a group of others at the club. “My favorite memory so far is shooting the low round in the group I play with.” Patterson added, “This was so memorable because it happened to be my best round ever at Sedgefield.”

When asked about their experiences at their home club, members of some of our “destination properties” prefer to focus on the overall experience. Take Old North State Club for example. This gem of a property, located on Badin Lake in the Uwharrie National Forest, approximately one hour south of Greensboro, is currently ranked the #3 golf course in the state of North Carolina by the NC Golf Panel. With a spectacular and stunning Tom Fazio design, the surrounding property and picturesque views of Badin Lake are simply breathtaking and only lend to the charm of the club.

Old North State Club member Paul Stoddart and his fiancé, Suzanne

are prime examples of members that enjoy the overall experience. “Every day at Old North State is like being on vacation,” says Stoddart. “Start with a round of golf on one of the premier Golf Courses in NC, get on the boat and tour Badin Lake and the thousands of acres of protected shoreline where you can view a variety of wildlife from Bald Eagles to white tail deer, then have dinner at a clubhouse that has breathtaking views and five star dining and service. The Old North State Club is a special place.”

We could not have said it better ourselves!

Another one of our properties that is a popular place for many of our members to visit is The Reserve Golf Club in Pawley’s Island, SC. While many of our members throughout the Carolinas enjoy making this a destination for travel and vacation purposes, we have many loyal members at The Reserve that enjoy the benefits of membership within the McConnell Golf family of clubs as they themselves travel outside of their home club footprint.

perfect time to play golf,” said Kirk Patterson. “But our entire family really enjoys the summer. My young son loves to go to the pool and play in the water with his mom and dad. This year he will be turning 2 during the summer, and we are hoping we can begin to teach him how to swim. McConnell Golf is excited to be taking the next step in our mission towards sustainability on the course, in our facilities, programs and procedures. Together, with the newly formed McConnell Golf “Green Team” comprised of leaders from each facet of the organization, we have charted a course that will help organize, measure, execute and communicate our plans to be more environmentally friendly and more efficient by rethinking the future.

SUSTAINABILITy?My name is Michiel Doorn and I

help organizations do exactly this – plot a roadmap for sustained success in the future. Times are changing for

everyone, including the golf industry, and McConnell Golf is joining the ranks early as a leader of change. As seen in larger PGA events, such as the Phoenix Open, with title sponsors such as Waste Management bringing light to this growing need for awareness, McConnell Golf is shining as well in the communities where their clubs operate.

For country clubs the focus and the reach is a bit different. There are new challenges relating to more variables than one may be aware. These include the analysis of weather patterns, anticipating restrictions on water, reacting to more diverse membership values and wishes and realizing the ever pressing needs for heating, cooling and electricity to keep

everything working smoothly behind the scenes. All of which are issues that fit under the sustainability umbrella. But, what is sustainability exactly?

The truth is that there is no one definition that is applicable to each and every organization. So, this was the first part of my job – getting McConnell’s Green Team to agree on a fitting definition – and this is what was decided on:

GETTING STARTEdNext, the Green Team

was ready for action. This is usually a tricky part for an advisor. Enthusiasm and action are great, but if you want to get going, you first have to know where you stand, where you want to go and if you have the right equipment for the hike. So, I gave the Green Team a substantial homework assignment of making a list of projects and actions already completed or underway. Since taking ownership of each of our clubs over the past 10 years, the list of programs, procedures, and products implemented is very lengthy and impressive: over eighty projects ranging from cutting edge irrigation monitoring, saving water and chemicals, to donating old tennis balls to schools for various uses. We then ranked these actions and added some creative new ones during a playful brainstorming session. The area of growth was visible, and clubs that had strengths in some areas were also seen to have potential in others.

SETTING OUR vISIONIn our next meeting we discussed a

sustainability vision for the organization. We started thinking about the long-term future of the organization and realized that sustainability had always been an integral part of that vision, but we had

room to grow and become a leader in this initiative.

Vision: McConnell Golf is an organization leading the industry in proven and sustainable practices and services while offering an exciting, diverse and healthy private club experience for members, guests and staff.

So what makes a good sustainability project? Obviously it needs to make the enterprise more resilient and save money in the future. But what about the story behind it? With more than five hundred employees and three thousand members, you want to be able to share the story to get buy-in, educate and enhance the feeling of community. We want employees that are keen on ongoing improvements and feel pride in their work. And something similar can be said for members. The club is their “home away from home,” and your home is something you help take care of for future members and families alike.

pRIORITIzINGEffORTS

The results from the ranking of current projects/programs produced eight stand-outs, the current Footprints on the Green program ranking first. At its core, the program showcases that McConnell Golf cares about the communities it is part of.

Significant opportunities for cost savings and environmental stewardship are associated with energy use in buildings and with irrigation practices. Other winners address recycling in general, reduction of insecticide use and the use of hybrid mowers. Just imagine how much work and energy goes into keeping those grounds and greens in optimal condition.

Another important focus is on more carefully selected food supplies. North and South Carolina farmers are our neighbors too, sometimes literally. If McConnell’s chefs can build lasting relationships with the best, they can serve the best and freshest food. Food that doesn’t have to sit in a truck or warehouse for weeks is likely to taste better!

Members Club and its 18-hole golf course; the Ocean Club’s 25,000-sq. ft. clubhouse, restaurant and pool complex fronting onto the Atlantic Ocean; the Grande Dunes Tennis Club’s 10 tennis courts, clubhouse and fitness center; the 131-slip Grande Dunes Marina — capable of accommodating boats to 120 feet in length — and the waterfront Anchor Café. The purchase also includes 770 acres of undeveloped land that can accommodate significant residential and commercial development.

LStar also announced it was partnering with McConnell Golf to oversee management of the golf and club operations at the Members Club at

Grande Dunes, Ocean Club at Grande Dunes and the Anchor Café. “As our company enters its second decade, we could not imagine a better first partner than LStar, nor a more quality-first client than Grande Dunes,” said John McConnell, President and CEO, McConnell Golf.

McConnell said the current Members Club membership at Grande Dunes would be enjoying numerous improvements to the facilities as the years progress with the goal of making the Members Course one of the finest facilities on the Grand Strand — a true, private club experience as McConnell Golf begins to rebuild and rebrand a first-class facility. He added that members will begin to see subtle changes beginning on Day 1 of management, reflecting the finest quality for which the McConnell Golf brand is known.

Anastasiadis said all club employees were retained, while former Old North State General Manager Teresa Belote was named interim GM and former TPC Wakefield first assistant superintendent Ryan Gamble has become the new Golf Course Superintendent. Gamble has retained and retrained much of the crew that was previously outsourced from National Golf Management, implementing the McConnell Golf model and focus on golf course excellence.

As for play, the club is returning to its private roots by eliminating all public play at the club. “The immediate plan is to restore the facility to the original intent,” said Anastasiadis. “ We believe it is good to stay private in a market that is oversaturated with public courses.”

As Grande Dunes members are now a part of McConnell Golf, they will receive the added bonus of having access to the McConnell Golf stable of courses. Members Club golfing class members were granted unlimited access to Musgrove Mill and have up to 12 visits to other McConnell facilities. The Members

Club will similarly be open to members of other McConnell clubs this spring.

“As part of rebranding the Members Course, all outside play--meaning tourist play, resort play, hotel play--has been suspended,” said McConnell Golf Director of Golf Brian Kittler. “The only

ones playing the golf course right now are our members and their guests. We are trying to get it back to a true country club atmosphere where access to the clubhouse and golf course is the most important thing, as well as enhancing the relationship between the staff and membership.”

Kittler said the Members Course membership can expect value-enhancing changes to come under the new ownership and management as McConnell Golf looks at what makes sense and what is supported by the membership at large — a commitment to the game of golf, enhanced customer service and a true sense of belonging to a first-class facility. bunker renovations; researching better heat tolerant grasses on the greens complexes; new golf carts; changing menus at the Members Course and Ocean Club; and continuing to improve communication to the members.

“We have a great opportunity down here to continue to put the McConnell Golf stamp on Myrtle Beach,” said Kittler. “The Members Course at Grande Dunes is a very good layout and has a first class practice facility, including a short-game area. Our goal is to continue to add value

to the membership and make them proud of their club. There are many positive aspects about the facility, and I believe MCG members will enjoy their experience very much when they travel to Myrtle Beach.”

Make A Wish

McConnell Golf and our seven properties had the privilege of working with three Make-A-Wish Chapters very closely over the past two years – chapters that cover North and South Carolina where our clubs reside. The kindness these chapters have shown to educate us all about the meaning of a “wish” and how they are granted made each and every one of our employees and members eager to take part.

We are humbled and honored to have met and shared the stories of two Wish children — Nathan Woodward and Savannah Childers — that several years ago had their wishes granted. North Carolina Governor Pat McCrory told a crowd of more than 1,000 North and South Carolina-based golf professionals recently that as part of Secretary of Commerce Sharon Decker’s economic development plan his administration would be using the 2014 Men’s and Women’s U.S. Opens being played in Pinehurst on back-to-back weeks in June as a “major jumping-off point” to promote business in North Carolina, as well as travel and tourism — while using golf as an important way to do it.

“Sharon Decker is really using me [during the U.S. Opens in Pinehurst],” McCrory said. “They’ve told me to wipe my schedule clean for those two weeks. We are going to be meeting with business development people at the two Opens. In fact, we’re going to use the Women’s Open to concentrate on Asian companies because of all the Asian golfers. We see more potential with the Women’s U.S. Open as far as recruiting businesses to North Carolina and selling North Carolina.

“From now on when we have anyone come to North Carolina — whether they land in Greensboro or Fayetteville or Wilmington or Greenville or Charlotte or Asheville or Raleigh — we’ve got to promote to the business community to bring your golf clubs to North Carolina because there are no better golf courses in the world than right here, from the coast all the way to the mountains and through the Piedmont.”

Said McCrory during his February address of the Annual Meeting of the Carolinas PGA (CPGA) at the Greensboro Coliseum: “There is no

reason that North Carolina should not be promoting golf as part of our travel and tourism package any different from what Arizona and Alabama are doing right now. We have the best ‘Golf Trail’ in the nation, maybe in the world, right here in North Carolina.”

Agree or disagree with his politics, McCrory’s take on golf trails was music to the ears of McConnell Golf Director of Golf Brian “Boomer” Kittler, who takes tremendous pride in the fact that McConnell Golf provides its members their own private golf trail rivaling any

other stretch of layouts and experiences in the country. Similarly, Kittler realizes that many McConnell Golf members will take advantage of such a built-in amenity during June’s back-to-back Men’s and Women’s U.S. Open Championships in Pinehurst.

“With the U.S. Open coming to town, our members have business clients, guests and out-of-town family,” said Kittler. “With the network of McConnell Golf courses, it’s a perfect opportunity to allow our members to show off what their options are.

“We all know that Pinehurst No. 2 is ranked No. 1, but there are four courses within the McConnell network that are ranked within the top 30 in the state. So you don’t specifically need Pinehurst to entertain your clients and guests during the U.S. Open.”

A MEMBER'S pERSpEcTIvESteve Foster is a veterinarian in

Concord and an Old North State Club member who has been enjoying a golf trip every March with 16-20 friends, mostly McConnell members. The last several years his group has taken advantage of the McConnell Trail, travelling from Raleigh Country Club to Musgrove Mill — and this year the group is going to visit The Reserve.

“We usually stay 3 or 4 nights and

play four rounds of golf,” said Foster. “At each site, the golf courses are in great shape, especially for March. Musgrove is challenging but the setting is awesome with the remote location and houses there. It’s ideal, really, for a golf getaway. The food is fantastic and the service has been exceptional. Boomer and his staff at Raleigh were, too. And Donald [Clement at The Reserve] is doing everything possible to make our trip to The Reserve in two weeks a success.”

Uwharrie Point is an ideal private retreat for the family as well. I also have participated in some of the interclub events and have had a ball — even though I haven’t won!

“John and Boomer and staff are visionaries with this concept. I have been a member at ONSC since 1994 but was never thrilled with the prospect of being an ‘owner.’ For me, this is an ideal situation and I am very grateful for that.”

hen asked about favorite spring foods, most people will typically

have a singular opinion at first, and then follow with more thoughts as the images break through their consciousness. Perhaps asparagus will segue to salmon and then lamb, artichokes, cherries...and so on. Chefs do much the same, but our personal opinions must be tempered by the requirements and expectations of our clientele. It is up to our creative instincts to present menus that are evocative of the calendar, while being perfectly serviceable to the needs of the club. We recognize that not every person who graces our dining rooms is a ‘foodie,’ and we ensure that our offerings run the gambit of tastes without regard to our own personal proclivities. It’s what is expected and it’s what we do.

ONE Of THE SExIEST INGREdIENTS

Nonetheless, you can always find a peek into the personality of the chef in every menu, and most particularly in spring. For me, while I revel in all the options available, I am drawn to one ingredient that is not even season dependant and is always good and always evocative, regardless of the month: saffron.

As I said, spring is sexy, and I think of saffron as one of the sexiest ingredients in the cook’s repertoire. I am not alone in this, as saffron has a long history of purportedly being an aphrodisiac. And while claims about the aphrodisiac qualities of certain foods have been around for thousands of years, scientific testing continues in earnest.

Okay, now you’re paying attention! While its effects on the libido are

unsubstantiated as of yet, saffron’s place in history and its reputation as the most expensive ingredient in the world are not exaggerated. It has been estimated that approximately one acre of purple crocuses, the flower from which saffron threads are harvested, will yield only one pound of saffron. This is because each crocus flower only produces three

threads of saffron. About 14,000 threads (actually, the dried stigmas of the crocus flower) equal one ounce of saffron, so that should give you an idea of the labor intensive process that goes into harvesting saffron threads. Historically, almost all saffron grows in an area bounded by the Mediterranean in the west and the region encompassing Iran and Kashmir in the east. As it made its way along the trading routes it was sold and used as dye, medicine and perfume,

along with enhancing Indian, Persian, European, Arab and Turkish cuisines. It is an absolutely essential ingredient to Spanish and Greek cookery.

Saffron is such a versatile imp in the kitchen that it can be quite at home in both sweet and savory preparations. Tunisian braised Lamb, Grecian honey sponge cake, Spanish Paella and French Bouillabaisse are just a few recipes in which saffron is not only present, it is

fundamentally essential. You will know it by the telltale yellow color it imparts – odd since the saffron threads are red – and the indicative smell. Saffron’s aroma is often described by connoisseurs as reminiscent of metallic honey with grassy or hay-like notes, while its taste has also been noted as hay-like and sweet. I never quite thought of it that way, preferring to resign myself to “tastes like saffron” when asked, but the descriptions are dead-on. Once you have experienced saffron on your tongue and inhaled its intoxicating scent, you will not soon forget it. I liken it to trying to describe vanilla: it tastes and smells, you know, like vanilla.

THE pERfEcT fINISHAuthentic and traditional dishes

aside, I find myself reaching for saffron to finish a surprising number of dishes, which speaks to its versatility. Saffron can stand up to lengthy cooking procedures and retain its character, but it can also be added relatively late in the cooking process and contribute a marvelous facet to round out a taste profile. I think it has an amazing affinity to shellfish, for example, and I would never prepare a

lobster bisque or Billi Bi (French mussel soup) without it. And I find it a perfect foil to garlic on grilled shrimp. Moroccan tagines, which are one of the most satisfying things I enjoy cooking, happily require saffron to bring them home. And Italian risotto, which can be quite delicious on its own, really elevates to another level with a few wine-steeped threads of saffron added to task.

Oh, and yes, saffron is quite expensive, but remember just

a bit goes a long way. Most recipes indicate the saffron literally by the number of threads required, so do heed this as you can quickly overcome a dish with too much. And please avoid the ground saffron, which is useless. And definitely stay far away from bargain priced stuff, which is not grown in the correct areas on the planet (this includes the United States and Mexico) – it is terrible. Also do not be tempted to substitute turmeric (which is done quite often in less than reputable establishments)

ENHANcE THE SEASONWhich brings us back around to spring, and I wonder how we

can employ saffron to enhance the season? Well, one of my spring favorites is grilled artichokes, which is typically served with melted butter – add a little saffron and chopped almonds and see what you think. Steep a few strands in white wine, reduce by half and add a little heavy cream, and that’s a fitting foil to fresh salmon. Brush some chicken with olive oil and saffron before grilling or roasting and see what happens – sublime.

But if you want something that is the essence of spring decadence, then try the champagne saffron vinaigrette dressed asparagus salad recipe on the next page. Both addictive...and sexy!

• 1/2 lbs asparagus • 1/4 teaspoon saffron threads (approx 4-6 threads) • 1 1/2 tablespoons champagne vinegar • 1/2 teaspoon Dijon mustard

• Pinch of granulated sugar • 3 tablespoons extra virgin olive oil • Salt and Pepper to taste • 1/2 sweet red or yellow pepper, finely diced

ASpARAGUS SALAd wITH cHAMpAGNE SAffRON vINAIGRETTE

The perfect dish to bring sexy back to Spring!Serves 4 to 6

pREpARATION

1. Holding asparagus halfway up the stalks, snap off woody ends at the natural breaking point and discard.

2. In a large pot of boiling salted water, cook asparagus for 3 to 5 minutes or until they are tender but not limp.

3. Drain the asparagus and run under cold water until completely cooled; drain well.4. Meanwhile, in a large bowl, stir saffron into 1 teaspoon of boiling water; let stand for 2 minutes or

until the threads have softened.5. Stir in champagne vinegar, mustard and sugar. Whisking, drizzle in olive oil.6. Season with salt and pepper to taste. Add asparagus and diced pepper; toss to coat.
