    has been, as they say, celebrating life. No other beverage is more versatile, fun, orintriguing.

    Established in 1882, Korbel Champagne Cellars has been a part of Americasgreatest celebrations. It has been the exclusive champagne of the past five presidentialinaugurations and was the champagne of choice for the Camelot years of the Kennedyadministration.

    From activist to cigar-maker, from exotic lumber to Pinot Noir, Francis Korbelspioneer spirit drove him to capture the American dream and create an industry that hasbecome international legend. The Korbel story spans three centuries, two continentsand two families with vision, dedication, and determination. Although generationsapart, the Korbel and Heck families created and preserved a singular tradition of cham-pagne-making excellence that has endured for generations and continues to delightchampagne lovers worldwide.

    Champagne owes all of its superlative attributes to its unique characteristic bubbles! Bubbles are key to the quality of the champagne. Although there are severalmethods used to make sparkling wines wines with bubbles there is only onemethod that world-class producers use to make fine champagne: mthode champ-enoise. Mthode champenoise is the only process that Korbel has ever used. French forchampagne method, classic mthode champenoise is the traditional champagne-making process developed by winemakers in the Champagne region of France duringthe 1700s and 1800s.

    Mthode champenoise champagnes are those sparkling wines produced with thesecond fermentation taking place in the bottle (when the bubbles form), followed by along, intensive process to rid the wine of yeast sediment before final corking. Excellentchampagne, however, begins long before a single drop of wine is produced. The secretto the perfect, pinpoint bubbles seen in every glass of Korbel champagne is themthode champenoise. The exacting steps of this seemingly magical process begin asthe still wines undergo a second fermentation. Because the second fermentation takesplace in the same Korbel bottle that will be opened and enjoyed, the carbon dioxide

    becomes well integrated with the wine. This process produces smaller bubbles that risemore slowly and last longer than those in champagnes produced by other methods.Remember, the smaller the bubbles, the finer the champagne! And you can find that atKorbel.

    Wine Garage founder Todd Millerdrilled a couple of holes in thewall at his bustling Calistoga

    wine shop nearly two years ago inanxious anticipation of having his ownwinerys juice flowing from one side ofthe wall to happy customers waiting onthe other side.

    Well, it took a while, but the WineGarage winery is finally open for busi-ness. From those holes in the wall nowhang a couple of fabricated stainless steelnozzles, and out of them flow two right-

    eous and delicious blends, B1 (aBordeaux-style blend of Cabernet Sauvi-gnon, Carmenere, Merlot and PetitVerdot) and R1 (a Rhone-style blend ofSyrah, Zinfandel, Grenache, Mourvedreand Petite Sirah). My biggest problem,says Miller, is that customers cantdecide which to buy because they lovethem both so much.

    And with good reason. Miller boughtthe individual lots of finished wine thatmake up each blend from some of his

    personal winemaking friends. The wine came from grapes fromseveral of Napas most prestigious vineyards. Hes sworn to secrecy onthe vineyard sources so the Wine Garage blends dont compete againstthe same wines priced at two, three or even four times what Millersells it for just $29.99 for a half-gallon jug, filled to order.

    When Todd and Joy Miller moved to Napa Valley in 2001, theywere surprised to find that they could hardly find any wines for lessthan $45 a bottle. Then they went to a dinner party at a winemakershome, and were shocked to discover that many winemakers couldntafford to drink the wines they made. Thats when the Millers decidedto open the first wine shop in Napa Valley that only carried wines

    under $25 a bottle.So in 2003, Todd Miller swapped his corporate necktie for jeansand boots and started scouring Northern California for great, undis-covered wines to offer at the new wine shop, the Wine Garage inCalistoga. Miller drove the roads less traveled, meeting with wine-makers, walking in their vineyards, and tasting their grapes, barrelsamples and finished wines. The winemakers, tickled to have a real,live wine buyer at their winery, shared stories with Miller over a glassof wine at the dinner table.

    The Wine Garage carries a wide selection of bargains fromSonoma and Napa, and gems from as far afield as Paso Robles, Lodi,

    the Sierra Foothills and MendocCounty. The store still doesnt caany wines priced over $25, and Mdoesnt buy a wine for the store unhe loves it. Whats best is the WGarage staff takes the guesswork ouwine shopping: tell the staff wyoure looking for and they will syou to the perfect bottle.

    The Wine Garage is now a licenwinery, and in addition to the bleon tap, they produce a line of their oWine Garage wines from grapes tcrush. For reds they offer a SonoCoast Pinot Noir, Napa Va

    Its wedding season in Wine Country, and

    Trentadue Winery is abuzz with prepara-

    tions for an evening wedding, as well as

    the days drop-in tasting room visitors.

    The staff at Trentadue loves hosting

    weddings, and why wouldnt they? Its an

    opportunity to share this utterly magical

    setting with couples in search of their dream

    Wine Country wedding. The winerys Event

    Manager Donna Healy hears it all the time

    from couples when they first come for a visit:

    This is exactly what we were hoping to find!

    A few years ago Trentadue finished

    construction of the Sala de Leone Event

    Center, a spacious yet cozy event hall that

    provides wedding clients with the uniqueWine Country opportunity of holding an

    indoor/outdoor wedding. The event center

    also makes for a great backup plan for

    outdoor weddings planned during the spring

    and fall months in case of inclement weather.

    Its unusual for a winery to have a separate

    facility to do events like we have here at

    Trentadue, Healy says. And with French

    doors all around the event center, when we

    open them up you can bring the outdoors in.

    And the outdoors at Trentadue is truly

    magnificent. The estate is located in the heart

    of the Alexander Valley, framed to the north

    and west by the Mayacamas Mountain range.

    There are two outdoor ceremony locations-

    the garden area on the south lawn, and thenorth lawn (which Healy calls The Sound of

    Music setting). The winery can accommo-

    date up to 500 for a wedding outdoors (or

    250 in the event center); the receptions are

    held in the winerys latticed garden arbors. At

    night the winerys twinkle lights come on,

    setting a festive mood after the sun sets.

    Even if theres no wedding on the horizon

    for you or yours, Trentadue is just plain fun to

    visit. Its a great surprise to see some sparkling

    wine (a necessity for weddings, of course)

    and white wines on the list now, since

    Trentadue has mostly been known as a red-

    wine and Port house. Speaking of Port,

    Trentadue offers one of Wine Countrys only

    Port flights, featuring their luscious lineup of

    Viognier Port, Zinfandel Port, Petite Sirah

    Port and the famous Chocolate Amore, a

    Merlot-based Port with chocolate flavoring.

    Leo and Evelyn Trentadue, fruit growers

    from Santa Clara County, first purchased this

    Alexander Valley estate in 1959. At the ti

    150 of the propertys roughly 200 acres w

    plum trees; the rest of the estate was plan

    with old vine Zinfandel, Petite Sirah

    Carignane. Soon after their purchase

    Trentadues began replacing the plum twith grapevines. The family didnt s

    making wine until 1969, when they h

    back some of the fruit they usually sold

    start their own Trentadue label.

    This year Trentadue Winery, still

    percent family-owned, celebrates its 4

    anniversary as a winery. For the past 10 ye

    maker, producing countless award-winn

    wines mostly from Trentadues 225 acres

    estate vineyards. The estate vineyards

    tended by second generation vintner Vic

    Trentadue, and in tandem Victor and M

    shepherd the grapes from vine to bottle.

    Since 1999, the winery has made a sig

    ture line of reserve estate wines, La St

    (The Story in Italian). The La Storia wi

    represent the best of the best at Trentad

    wines that are expertly handcrafted, carefu

    blended and then elegantly bottled with go

    I enjoy visiting wineries and learning as much as I can about thewines, the winemaker and the history of the winery. In addition, thevineyard in the peak of the growing season June through August is be a beautiful sight with clusters of red and green grapes underbright green leaves. Winery tasting rooms are as varied as the winesthemselves and are always welcoming, whether its a large and lavishroom or simply a folding table among the barrels in a storage facility.

    A winery experience also is an opportunity to take a winery tour ortalk to the people who are pouring the wines for tasting. This is achance to learn something about their wines. Whether or not you like

    the wine, the time spent in a tasting room or winery is a time fordiscovery and learning. You should feel free to ask questions like Isthis wine filtered or unfiltered? or Does the winery source grapes

    ROASTED PORK TENDERLOINS

    WITH PEANUT SAUCE (Serv

    3 small pork tenderloins,

    around 1 pounds total

    3 tablespoons of peanut butter

    1 tablespoon of peanut oil

    1 tablespoon brandy (optional)

    2 teaspoons salt

    teaspoon freshly ground pepper

    teaspoon ground ginger

    teaspoon grated nutmeg

    teaspoon ground sage

    cup red wine, ideally Petite Sirah

    1 cup concentrated unsalted

    pork or chicken broth

    Preheat oven to 400 F. Mix together the sa

    pepper, ginger, nutmeg and sage. Evenly

    spread the mixture over a sheet of waxed

    paper. Dry and roll each of the pork tender

    loins in the seasoning mixture.

    In a large skillet, heat the oil and brown the

    pork for approximately 10 minutes. Place

    browned pork in a roasting pan (reserving

    in skillet) and roast in the oven for 20 to 25

    minutes, or until just barely cooked throug

    (when thickest part of the meat reaches 16or when it is slightly pink in the middle).

    Remove from oven, cover with foil and let

    stand for 10 minutes before serving.

    To make the sauce, pour off the fat from th

    skillet in which you browned the pork. Add

    wine and brandy. Boil mixture until it reduc

    in volume by about 50%, scraping up the

    brown parts left behind by the pork to

    dissolve. Add broth and bring back to a bo

    two to three minutes, stirring in the peanu

    butter. Sauce should be just thick enough t

    coat the spoon. Strain sauce to make it ver

    smooth and return it to the pan to reheat.Taste and adjust with seasoning.

    Cut the pork into inch slices and add car

    juices to the sauce for more flavors. Top the

    pork slices with a spoonful or two of the sa

    and serve.
