School of Hospitality, Tourism & Culture ISSUE 4 FALL 2011 Born and educated in Switzerland, Chef Roth worked in a Swiss restaurant chain that brought him to Canada as part of their management team. With expertise on how food is received and perceived by the client, he made the jump to education in 1986, joining Centennial College. Chef Roth’s teaching stint includes a range of subjects in class room settings, labs, small quantity food production and live restaurant setting labs. As Coordinator, his impeccable planning, organizational abilities and the finesse of leading faculty and student teams both on and off site, have always received tremendous support and appreciation from across college and external guests alike. Chef Roth's illustrious career includes a nomination for the Wicken Teaching Excellence Award at Centennial, membership to Café (Center of Advancement of Foodservice Education) and serving on the Steering Committee for Winterlicious (City of Toronto). More recently he has been enthusiastically involved in planning, design, relocation and opening of the new kitchen and lab facilities slated for 2013. But don’t let the tough exterior and loud voice fool you- the real person running the show is wife Erika, a pleasant addition to the Horizons team for two years! Ever smiling, courteous or ready to make a customized meal for some of us that visit Horizons, Chef Roth exemplifies the perfect blend of Swiss precision and Canadian hospitality. And as we’ve heard, ‘Just don’t catch him in the kitchen to ask a non-culinary question, that’s all. And you’ll be fine!’ . To hell with ‘Hell’s Kitchen’, we’ve got better. BULLETIN BOARD Baking program gets nominated for Award by the Baking Association Ontario Chapter: Dedicated to helping facilitate the success and expansion of Baking Programs in order to nurture and further develop the advancement of apprentices and baking students, Centennial is being offered the opportunity to enhance the resources within our current program. There is a total of $10,000 available to be awarded to successful applicants that demonstrate an exceptional need and desire to improve their curriculum. Chef Corey is awaiting word on the final outcome on a proposal that outlines our facility's wish list that would greatly contribute to improving the program. ‘Geotourism: cities & neigh-

The Culture & Heritage Institute (CHI) will host a one day workshop this fall at the

Centennial Conference and Residence Centre (CCRCC). The interesting line up includes a themed plenary, simultaneous

panel discussions on geotouristic mapping, destination satisfaction, going beyond iconic attractions and a unique student led roundtable that reflects ongoing classroom based research and ARIC’s applied research student fellows working on the Walpole Island tourism feasibility project. The workshop will attract delegates from across the education, travel, hospitality, culture, heritage and arts sectors and will also see the launch of UNESCO’s Freedom of Expression Exhibit that evening, at the Library & Resource Centre. ‘Making Culture Matter’ - an arts, heritage and cultural leadership symposium.: Dec. 5 Organized and presented by the Culture & Heritage Site Management Post-grad student body, this unique one day offering will serve workers within the culture and heritage fields to come together to talk about funding avenues and community awareness. Professionals in Museums and Cultural Centers are part of a changing social atmosphere with innovation and technology as a driving force. Recognizing this need, Centennial College has created a new program to teach students about marketing, grants, web-sites, exhibitions and much more.

UNWTO’s TED Qual Certification for six programs at SHTC!

Centennial College is the first college in Canada to earn UNWTO TedQual certification for six of its programs. The designation by the United Nations World Tourism Organization (UNWTO) is a validation of the college’s work in revamping its education and training programs with the goals of enhancing quality, competitiveness and sustainability. TedQual is the UNWTO’s quality assurance system, which evaluates tourism-related education and training programs throughout the world. Evaluation criteria are designed to measure, among other things, the efficiency of an institution’s academic systems, as well as their propensity to incorporate elements of the tourism industry, and students’ needs in those programs. “I am delighted with the results: all six of the programs Centennial submitted for certification have been granted status,” says Dean Ranganathan. “I am not surprised by our success as our faculty team had put in a lot of dedicated hours of hard work to see the audit through.”

The six programs to receive UNWTO TedQual certification are: Hospitality and Tourism Administration Hospitality Management – Hotel and Resort Hospitality Management – Food and Beverage (Catering) Event Management – Festival and Conference Tourism Management – Culture and Heritage Tourism

On September 11, 2011, faculty members Juerg Roth, Sam Glass, Tracey Fowler, along with students Bhavisha Patel, Susan Lee, Amrit Singh Gill and Sukhjinder Singh Momi (seen here with star Chef Michael Smith), with assistance of Joanna Sable from Bumpercrop, represented Centennial College at the 22nd annual Feast of Fields at the Cold Creek Conservation Area, King Township, Ontario.

The mandate of this event is to promote an awareness of natural and organic agriculture as well as establishing relationships between producers, consumers, culinary professionals, and in this instance, community colleges with hospitality and culinary programs. Each participant was required to produce 700 sample portions, integrating local, natural and organic ingredients wherever possible. Centennial’s contribution was an Ontario Lamb Curry, garnished with “twisted cranberries”, provided by Bumpercrop, and coriander, served in a crisp pastry cup. For the students, it was an opportunity to display their culinary skills as well as the opportunity to serve and greet members of the public.

The cake donated by SHTC for the Autism Society’s Gala Dinner, on Nov. 5, 2011 at The Club in Bond Head, Simcoe County.

BEYOND GLOBAL TOURISM and JAMAICA FOR SALE: Your social and personal responsibility to sustainable tourism by Ann-Marie Fisher-Herdsman, SHTC’s Global Citizenship Equity Portfolio Learning Advisor

On November 2, 2011 the Center of Learning and Teaching (COLT) and the School of Hospitality, Tourism and Culture (SHTC) hosted the Global Tourism: A Global Citizenship and Equity Co-curricular Event. This event supports Centennial’s GCE initiative that challenges all of us to think about our roles and social responsibilities in our personal and professional lives. Clips from the renowned documentary Jamaica for Sale were shown which showcase the destructive side of the tourism industry on the island.

This was followed by a presentation from Dr. Rachel Dodds an Associate Professor in the Ted Rogers School of Hospitality and Tourism Management at Ryerson University. The session wrapped up with an interactive discussion where students and staff engaged in a dialogue on the issues revealed in the film and the presentation. Why is this dialogue so important? It is important that our students, the

prospective workers, in the field become aware of the inequity of the tourist industry.

This is of fundamental importance because the future of the industry lays in their hands and so by them becoming aware of sustainable issues today the probability of impacting policies and practices in the future increases. In the meantime, while the macro-structures are at work, what can the average “Joe” or “Jane” do to combat the inequity that contributes to lack of sustainable tourism in his or her personal and professional life as a participant at the micro-level?

Long time faculty Karyn Moore retired this summer after over two decades of service and is thoroughly enjoying every moment: cruising the world and spending time with her daughter Megan!

Siddharth Deepak was nominated for the George Wicken Award for Teaching Excellence… congrats Sid!

As Dodd has suggested on her website (sustainabletourism.net/carbon.html#responsible) there are in-deed some things that we can do as global citizens, to contribute to sustainable tourism as the engine of

the tourist trade keeps on turning; these include:

Before you go, ask your travel provider (tour operator, travel agent) about the company's

environmental and responsible tourism policies - support those who support responsible tourism

Be considerate - of the communities and environment you visit Support the local economy. Buy locally made souvenirs, eat at local restaurants - enjoy

the local culture!

Conserve water. Take shorter showers... the average hotel guest uses over 300 litres of water per

night! In a luxury hotel it is approx. 1800 litres!

Dress respectively. Cover up away from the beach. Cover your head in religious places. Notice local

dress codes and adhere to them.

Ask your accommodation provider (hotel, guest house, lodge) about their sustainability practices - do

they compost? Recycle? Do they have fair labour laws? An environmental policy?

• People working in a forward motion for a common goal to success

• A jigsaw puzzle: Many pieces fit together to make a whole picture. Each piece maintains its own integrity, its own shape, colour, design, but together they make a more important whole

• The meaning is contextual; if used in an academic sense it suggests including distinct ele-ments into an interrelated whole as in "an integrated course of study". Used in a sociological context it would connote inclusion of different demographic segments - particularly ethno-religious groups - as equal stakeholders as opposed to segregated.

• Unification, Inclusivity, Community, Connection, being a part of. In one word, together.

• Channeling individual strengths towards a common goal

• Providing people of difference races with equal access to opportunities, rights and services!

• To bring a group of people together to work on adding new ideas to improve the quality of life

Various SHTC employees provided the above statements as an answer to “What does integration mean to you?” Definition of integration (n.) from the Oxford Advanced Learner’s Dictionary:

*the act or process of combining two or more things so they work together (economic integration) *the act or process of mixing people who have previously been separated, usually because of colour, race, religion, etc (racial integration in schools)

‘We’ know what Integration means. At the end of a busy day and as we’re leaving the college exhausted, we should ask ourselves, “Has integration taken place?”…If you can answer ‘yes’ to the question then the efforts of the day have not been in vain and our exhaustion is well deserved!
