Greetings Friends,
Merry Christmas! Happy Hanukkah! Happy Solstice! Happy Festival of Lights! Happy Kwanza! Happy New Year! That is why the term Happy Holidays often applies. All of these holidays happen this time of year and light is a prevailing theme in all of them. It is a joyous time of birth, giving, renewal, and new beginnings. I wish you all the best the season has to offer.
However, for those of us separated from our families, it can also be a time of depression. Keep busy with your Saddle Oak family! Come to the social events! Above all, keep an eye on your neighbors to be sure they are not feeling too lonely and isolated. One of MY favorite things to do is take a ride around the park after dark to look at all the decorations. It sure lifts my spirits. Merry Christmas and Happy Holidays to all!

SOC Library News
In the mood for some holiday reading? The SOC library has a large
collection of holiday and Christmas books. They are on the small bookshelves
under the windows. Come and check them out.
Memory Tree
For nearly 30 years, Saddle Oak has decorated a “Memory Tree” in the
foyer of the clubhouse. Residents may add a Christmas ornament on the tree to
remember SOC residents who have passed away. As you add your ornament,
attach a numbered sticker to the bottom. The pre-numbered stickers will be on a
table nearby. After hanging your ornament, please write the number and a short
dedication in the Memory book. Any questions, please call Nancy Dougherty 920-
765-2005.
Blood Drive
There will be a blood drive on Thursday, December 27 from 10:00 to 12:30
at the clubhouse. Please do not use the golf cart parking spaces so there is room
for the bus to park.
SPEED LIMIT is 15 MPH. Reflective clothing for you & pets.

Many, many, many thanks for the many, many, many hands that helped make today a great day. These things don't happen because of one person. They happen because one person steps up (with a supportive husband, in this case) and many people offer their hands. Thanks to the volunteerism spirit, we came
together and made today a great day together! ❤

Mike thanks all the golf cart drivers who transported people from the parking
area to the Craft Fair. Thanks, too, to Milda Kolesar and Sharon Kemp for loaning

Hospitalization/illness:
Pat Coughlin, Angie Bauman, Henry (Bert) Berthiaume and Dorothy Lawrence are
all in rehab at Hawthorne.
Lory Egan and Dave Koester were both hospitalized and are now home
recovering.
Bereavement:
It is with sadness that we announce the passing of Jeanenne Joyal Gaubatz. She
leaves her husband, Larry Gaubatz and her daughter and son-in-law, Nina & Jim
Boyl.

On November 10, SOC’s talented crafters hosted a Craft Fair that was open to the
public. Kathleen Sirois and a huge number of volunteers helped put on this event.
In addition to the crafts, talented bakers donated delicious baked goods and
Ginger Pace and her helpers put on a lovely lunch. Mike Buckley and a number of
drivers carted people from the parking lot to the fair. They got several positive
comments about both the craft fair and the community.

Tis the month when our thoughts turn to all things sweet, rich beverages and eating lots of food so, let’s not forget about eating our fruits and veggies too. December is “PEAR MONTH”.
What’s In Season for December? (Includes months in season): Avocados, bell peppers, cabbage, carambola, cauliflower, celery, cucumbers, eggplant, grapefruit, guava, lettuce, mushrooms, oranges, passion fruit, radishes, snap beans, squash, strawberries, sweet corn, tangerines, & tomatoes.
Avocados (June-Jan): Considered a fruit. Contains more potassium than bananas. Often referred to as a superfood because of its health properties. Store on counter.
Bell Peppers (Nov-May): Being high in Vitamin A helps to support healthy eyesight, especially night vision.
Cabbage (Dec-May): Packed with nutrients. High in fiber and contains powerful oxidants.
Carambola (Star Fruit)(July-Apr): Low calorie & rich in dietary fiber, Vitamins A, B, &C & minerals like potassium and zinc.
Cauliflower (Dec-Apr): Excellent source of vitamins & minerals containing some of almost every vitamin & mineral needed. Contains a high amount of fiber which is important for digestive health. Keep in plastic wrap and refrigerate.
Celery (Dec-Apr): Made mostly of water. Improves heart health, boosts immune system.
Cucumbers (Mar-May & Oct-Dec): Considered a FRUIT, not a vegetable. Keeps you hydrated, 96% water. Refrigerate.
Eggplant (Nov-June): Considered a FRUIT. Aids in digestion & rich in fiber.
Grapefruit (Sept-May): A cross between an orange and a pomelo. Helps with digestion & promotes regularity.

Guava (Year-round): Treats constipation. Relaxes muscles & nerves & gives you an energy boost.
Lettuce (Dec-Apr): Good for weight loss. Eating lettuce induces sleep.
Mushrooms (Year-round): High in Vitamin B & D. Has anti-flamatory powers.
Oranges (Sept-June): May help prevent kidney stones. Eating wholes oranges is generally healthier than drinking orange juice because of high sugar content in juice.
Passion Fruit (Nov-Jan; June-Aug): Aids diabetes treatment. Cancer-fighting. Enhances digestive health.
Radishes (Nov-June): Good for the liver & stomach. Aids in digestion.
Snap Beans (Nov-June): Good for energy, skin, hair and nails.
Squash (Oct-May): Improves digestion-including the incidence of constipation and other digestive issues.
Strawberries (Dec-Apr): The fiber and potassium support heart health. Helps with blood pressure.
Sweet Corn (Oct-June): Corn Myth #1-Most sweet corn is genetically modified (GMO)- no. Only a small % of sweet corn is genetically modified. Most GMO corn is used in processed foods like corn chips.
Tangerines (Sept-May): A high source of Vitamin C, folate, and beta-carotene. Helps in healing minor cuts and wounds.
Tomatoes (Oct-June): Be sure to wash thoroughly before eating. For maximum flavor, don’t refrigerate.

Welcome back, slightly cooler temperatures! And welcome back to our snowbirds.
Water Fitness is a program fit for most seniors. We do about 40 minutes of low-
impact aerobics followed by 20 minutes of toning and stretching three times a
week - or as often as you can attend. We jog and dance and jump rope
(imaginary rope) to music from the 50’s, 60’s and Abba music from the 80’s.
Everyone does it at his or her own pace, and we do manage to carry on
conversations at the same time. After all, we want to exercise those jaw muscles
too!
Since the water volleyball players are using the Friday time slot, our third day will
now be Saturdays after the weekly coffee and meeting.
And speaking of water volleyball, be sure you come check them out. They have a
ball – so to speak – playing in the water! It’s open to everyone, so come watch,
root or join in for an hour of a different kind of exercise.
So, if you’re looking for an exercise program that is fun and age-appropriate, join
us on Mondays, Wednesdays and Saturdays from 10-11 for Water Fitness and
Fridays from 10-11 for Water Volleyball.
Also – a heads-up that once the temperatures drop and stay cold, we will change
our starting time to 10:30, so we can give the mercury a little more time to rise.
Our general rule of thumb regarding weather related issues is that, if the
temperature is at least 600 at Gee’s house or 700 at Terry’s 15 minutes before our
start time, we’re a “go”. Obviously, impending thunderstorms would cause us to
cancel, as would pouring down rain. Light drizzle is okay – we’re wet anyway!
We’ll try to post any cancellations on Facebook 15 minutes before start time.

Golf Cart Parade
To pay homage to the Veterans who served in our military, Jim Besse organized a light
pole decorating contest and a golf cart parade. Later in the day Gloria Paige and her
many volunteers put on a delicious pot roast dinner. There was the presentation of
colors before the meal and a short ceremony afterwards. Thank you to Jim Besse, Gloria
Paige, Rita and Mike Cope and all the volunteers. Mostly we want to thank our Veterans
who sacrificed to protect our freedoms.

Christmas Bears and Stockings
Thank you to the volunteers who dressed bears and filled stockings for the
children selected by the Salvation Army. For many years residents participated in
this charitable project, led in recent memory by Linda Otto and now Jo Gearin.
According to Jo, this is the last year for the project. Next year there will be an
equally worthwhile endeavor. Below you will find many of the bears and stockings
which are sitting in Jo and Bob’s living room. Thanks also go to Joann Barber and
many volunteers for filling “ditty bags” for the veterans at the Veteran’s Village
here in Ocala.

Candidate for Board of Directors
Saddle Oak Club Homeowner’s Association
I am interested in a position on the Board of Directors of the Saddle Oak Club
Homeowner’s Association. I am married to my bride of only one year, Kathy
McGovern Besse. We have been residents of this beautiful community for one
year. I have one daughter and two grandchildren.
As a board member, I feel that I can represent the community fairly and help to
improve the quality of life that we enjoy.
I was born in Virginia and upon my father’s retirement from the United States
Army, moved to his hometown of Biloxi, MS. Many years later, I retired from the
Biloxi, MS Police Department in 1993, where I held various positions, ending with
Court Administrator. After retirement, I then started my own security business,
Besse United Security Associates, from which I retired in 2015. My education
includes various Junior Colleges and I am an alumnus of the University of
Louisville, Kentucky.
My proudest accomplishment in the work field was instituting an Emergency
Medical Technician/Policeman Program at the Biloxi Police Department.
My wife and I attend Queen of Peace Catholic Church, here in Ocala. I am a life
member of the D’Iberville, MS VFW Auxiliary, where I served one term as
President.
I enjoy music, fishing, hunting, camping and metal detecting.

Hello: I would like to run for the HOA Board for Saddle Oak
I was born in Orlando, Florida at McCoy Air Force Base in 1956. My dad was in the Air Force. I have a twin sister and have 1 younger sister and 2 older brothers. My dad passed away 2 years ago and my mom now is living in Brooksville, Fl. I am a 4th generation Florida Native (Florida Cracker) raised in Sumter and Lake counties. I graduated from Leesburg High School in 1974. Raised Southern Baptist. Family I am currently a widow of 15 yrs., and have 2 sons and 4 grandchildren. Jason Strong, a Navy veteran has two children, Shaylee and Shane. Michael Strong is a veteran from the Army Reserves and has two children, Hunter and Levi. I purchased a home here in March of this year and am enjoying retirement. I am a full-time resident in this wonderful community of Saddle Oak. Work Experience 1974 Graduated from Lake County Voe-Tech as a Cosmetologist 1984 Lake County Sheriff’s 911 Communication Officer I have work in various departments in and around Lake County as 911 Communication Officer and just retired in 2016 from Mt. Dora Police Department as their Lead 911 Communication Officer and held various titles from FDLE with the department. Over the years I have worked and volunteered with my Church in various occasions. I also still have an active license for Cosmetology in Florida. Summary I am a proud Floridian and enjoy being around people and like to participate in my community here at Saddle Oak to keep this a wonderful place to live. I have already volunteered for several things here at Saddle Oak and have enjoyed the activities that are offered here. I am an active quilter with Saddle Oak Stitchers, love knitting and crocheting. I love the water activities and now have joined our bowling team. Play bingo and learning several new card games that is offered here too. I would like to serve on the HOA board and keep Saddle Oak a wonderful place to live.
