At the vegetable section of mylocal supermarket I stoodponde r i ng….Organ i c…NonOrganic? What’s the difference?Well for those of you who want toknow, this is what it’s all about….

Organic farming is the name givento a variety of agricultural produc-tion systems that aim to work withnature, rather than by conqueringit. Organic is most commonly as-sociated with food production,both crop and livestock. However,organic methods are alsoemployed in the production ofmany other goods, leading toproducts as diverse as timber andclothing, to be labeled as organic.

The principal differences betweenorganic farming and conventionalfarming are:

� an extensive restriction of theuse of artificial pesticides, fertilis-ers and other agro-chemicals;� a hostility to the agricultural ap-plication of biotechnology;� a rejection of the routine use ofpharmaceuticals on livestock;� an attention to animal welfare;and� a focus on crop rotation, soilquality and maintaining biological

diversity as alternatives tochemicals.

In this way, organic farming is inmany respects, a return to tradi-tional farming methods.Organic food is felt by a growingnumber of consumers to be safer,more nutritious, taste better and beless harmful to the environmentand animal welfare than conven-tionally produced food, and themarket for it has grown in recentyears accordingly.

I recently spoke to Hugh Grierson,one of Scotland’s largest organicfarmers, and he talked to me abouthis father Sandy. “Sandy was notan Organic farmer but watchedwith interest as Hugh stoppedusing sprays and fertiliser. He stillworries about the weeds but thechange that he really noticed wasthe butterflies. Insects have thrivedsince we went organic, especiallythe butterflies. They are drawn tothe red clover that we plant for soilfertility. As they feed on the flowersthey fill the farm with colour andmovement. When the white cloverflowers it can be quite alarming towalk through. Every step disturbsa cloud of bees. Fortunately theyare well fed – too sleepy to bealarmed. Hoverflies and ladybirdshunt through our potato cropskeeping them free of aphids andthe diseases that aphids carry.Where there are insects there willbe birds and mammals. We havewetland fields with Lapwings, RedKite and Curlew. Other fieldsprovide seeds for finches, larks,and Tree sparrows. Sand Martinsfollow the cows, hunting for

insects. Barn owls hunt for volesand Red Kites clear up theleftovers.

Organic farming has brought thewildlife back into the fields but wehave also worked at improving thewoods and waste ground. Wehave planted hedges and wild-flower meadows. We have dugponds and planted woods. Welook after wetlands and rarehabitats. It is always veryrewarding because new plants andanimals moving in and setting uphome repay our efforts. They allbeautiful and all have a role to play.They are all a part of the jigsaw thatmakes up a healthy, living farm.”

I’ve just come back from holiday. Firstbreak for 11 months and wife and Iwere ready for it. I know the old jokes- ministers only work one morning aweek and have a golf handicap of 2!If only, apart from the golf.

We went to a lovely, warm, sunnySpanish Island. The sea was 28degrees, and the air 34. Could getused to that. Blue skies every day,sitting outdoors eating dinner at 9 or10 at night in T shirt and shorts - wellI didn’t wear shorts, no need to scaresmall children with my knees. Freshfood, time on our hands, cool dietcokes, food cooked for you, nowashing up, no phone, no emails,nothing but time on our hands and nodead lines - paradise isn’t it?

Well yes and no. You get so that youhear what people are saying in myline of work, what they say and howthey say it. Even in paradise there washeart break about. The family on thebus from the airport when we arrivedwho had to cut their holiday shortbecause a sister had died unexpect-

edly. The manager in a coffee shopwho was not there one day becausehis dad had died during the night.Then there was the young waitress inthe same coffee shop who comesfrom Cuba and works from April untilOctober away from Husband andfamily, far from home, family, friendsall to support her folks, and she hadto fight all her own battles while away.

Then there were the folks in plastersand on crutches who had come togrief off bikes and stuff, not tomention the poor souls one encoun-tered who were on a last holidaybefore their illness took control. Ohyes, this Island was paradise, butthere were stories of grief.

And here in the Highlands, one of themost beautiful parts of the world,there have been a run of road trafficand sporting accidents and deaths,and all the sorrows of loss of jobs,and health, and marriages - how canthis be so in such a beautiful world -note I haven’t mentioned Pakistan orIran or Afghanistan.

Why doesn’t God do somethingabout this. If He is loving, does Helack the power, or if He has the power,does He lack the compassion?

He lacks neither, and He has donemore than something - He has doneeverything.

There are some things which arebeyond repair - a vase that shattersinto a thousand pieces will never bethe same again no matter how youput it back together with superglue. Itwould need to be re-made, and thatis what God has done in Jesus Christ- He offers us a new birth, a recre-ation, a being made new, and thiswas done through the cross. It maynot be the answer we wanted to hear,but our world and humanity is sodamaged, broken and hurting, ittakes nothing less than re-creation todeal with all the stuff. Jesus did thatfor us on the cross.

Matters Arising• Sandown Lands ~ Comm. Cllr. Mackiesaid we were still awaiting word fromTHC Planning as to the legal position onthe Wetlands/Parkland as to whether theC.C. could undertake the work to formthe wetlands element, thereafter formthe Parkland as a Community Project. Ifno response by October 2010 - letter toTHC Planning.• Community Council Consultation ~ weare still awaiting a joint meeting with thethree Nairn C.C.’s and William Gilfillanto address the issue of Nairn C.C.’sfuture composition.• Nairn Bus Issues ~ Comm. Cllr. Mackiegave a report on the meeting we held

with representatives of StagecoachHighland, after several years trying tohold such a meeting. The new M.D. atInverness Mr. Steve. Walker appearedto want to address these issues, andwould like to work with the C.C.’s andwants to arrange a joint meeting with theNairn C.C.’s and public to hear theircomplaints. He will also look at theprovision of buses to & from NairnHospital after the afternoon school runis complete, so we will await thatdecision. Meantime we still want peopleto pass on any complaints they haveabout the buses, and would encourageall the C.C.’s to gather such informationand pass it on either to NSCC or Stage-

But, given thepace of growth in popula-tion that we have undoubt-edly seen in Inverness,Nairn and the corridorbetween them, it is fittingthat we have hosted the firsthousing "Expo" in Scotlandand indeed Britain. Andwhat a success it was. Withwell over 30,000 visitors itwas one of the top summerattractions in the North. Ijoined Alex Salmond,Scotland’s First Minister, onthe day before the officialclosure of the month longevent when he returned for

his own second visit - and Isuspect that this was in partso that Moira Salmond, whoaccompanied him, was ableto see it for herself! Now theScottish Government willwork with the Council thehousing alliance and othersto evaluate and learn fromthe event, and, I will be as-tonished if the InvernessExpo is not one of many thatwill follow in Scotland inthe years to come.The idea of the expo origi-nated in Finland, but theHighlands have led the wayin Britain and this in itselfwill be good for the region;good for the reputation ofthose involved, and also forthe thousands of our citizenswho in one way or anotherdepend, for their lives andlivelihoods, on a thrivingbuilding sector. Better to beknown as Expo city thanTesco town.

people whom he once gavedirections to in 1986: theirnames, where they met andwhere it was they were tryingto get to at the time.Last month, I was delightedto be invited by Fujitsu toopen their new offices inInverness and came across afamiliar face. While all thepeople present were beingintroduced, I was challengedto remember where it wasthat I had previously met myhost, Fujitsu’s companyservice developmentmanager.I am afraid that I did notsucceed. ®Bouillabaise of Local Mussels,Grilled Fillet of Sea Bass andWest Coast Langoustine

Bouillabaise is a dish which I love, it can bemade up of so many types of fish and shellfish. Tome bouillabause is a great dish if there is a slightneep in the air...a steaming bowl, hunk of crustybread and glass of dark ale, such as red kite fromblack isle brewery.

iinnggrreeddeennttss -- sseerrvveess 44 ppeeooppllee

6 teaspoons of extra virgin oilive oil500g mussels cleaned and debeared4 fillets of sea bass4 cooked langoustine2 gloves of garlic6 rip tomatoes1 ltr fish stock1 tin chopped tomatoes2 teaspoons of pernod (optional but really gives it a kick)small bag of new potaoes cooked and chopped into halfsmall bag of green beans (optional)small bunch of thyme and parsley fiinelychopped

MMeetthhooddthis is a really simple dish to cook.....

In to a big soup pan pour your extra virginoilive oil, crush your garlic and put into the pan,add your fresh tomatoes which you need toroughly chop give this a good stir around andthen add your thyme and parsley, again give agood stir around, leave for two three mins, stirringto make sure the mix is cooking evenly.

Next add your tinned tomatoes and fish stock,this will need a really good stir thought add yourpernod and your mussels, potaoes and if you

want your green beans chopped in half, turn theheat down and simmer until the mussels areopen.

Now you have two options with your seabass, you can if you want chop the seabass intostrips and add to the pot cooking for about fiveminutes or you can grill the fillets.

To grill i would suggest you score the skin onthe bass a couple of times, this allows the fish tocook evenly without curling. also sprinkle the baswith some sea salt this will crisp the skin, putunder a hot grill skin up.

To serve ladel into a bowl place the bass inthe middle with the cooked langoustine andenjoy.

COUNCIL MINUTES CONTINUED FROM P13for changes to planning, and he will have another look at that.• We have also responded in support of Nairn West C.C.regarding the Planning Application to build flats at LodgehillClinic site, and put in supporting objections. Likewise, we havesupported Nairn West C.C. regarding the Corsee Planning Ap-plication and raised our concern regarding the main Corseebuilding and its future useage.• H.W.D.P. ~ a question was asked about the HWDP outcomeand a discussion ensued which indicated that many peoplewere disappointed with the Plan so far, and wondered whatand when the next phase was to appear. It was decided to putthis item on the agenda for September meeting as the InnerMoray Development Plan should be ongoing by then.• Roads/Community ~ Signage issues at the west end of Nairnwere again raised, and Cllr. Mackie reported he had e-mail’dBear Scotland regarding the “Nairn” signs at Sandown Road,as well as the ‘Safety Fencing and other items abandoned afterthe street lighting replacement programme but had had noresponse. Cllr. Mackie has now written to Bear Scotland re-

questing answers to those question, and if no response, willtake the matter up with Transport Scotland.• The matter of signage to the Nairn Hospital / Doctor Surgeriesand the Railway Station from the A96/ Waverley Road junctionwas also discussed and Cllr. Mackie will write to Bear Scotlandand T.E.C.’s regarding this matter.• Health/Education - A letter has been received from NHSHighland regarding the application for a licence to open a‘Community Pharmacy’ within Nairn Hospital.
