A BRIEF SYNOPSIS

Esther and Andreas traveled across the ocean with four of their children and seven of Andreas' children (and their

spouses) from a previous marriage, but it was once they landed in America that their last son, Henry, was born. He

married Elizabeth Kietzman, and they raised six children on the family farm near the Jim River. Dorothy, one of the six,

worked on the family farm until she married Vandal Madison in 1934. Together they had one child, Joan, who later married Luther Nielson. Luther and Joan raised three boys, the second being Lester Nielson. He married Andrea

Aberle in April of 1993, and together they have four children: Leah, Maesa, Luther, and Isabel.

ESTHER VOLL

Andreas and Esther Albrecht left Mariental, Crimea, South Russia on November 11th 1875 aboard the ship "The Pomerania." After 28 days at sea, they landed in New York, changed their surname to Voll, and set out for South Dakota. They lived in Yankton, SD for two years before moving to a dugout homestead 13 miles north of Yankton.

Esther’s Chocolate Cake1 1/2 c. sugar1/2 c. butter1 c. sweet milk3 c. sifted flour2 tsp baking powder5 eggs leaving out the whites of 31 tsp lemon extract Bake in large shallow panUse the whites of 3 eggs1 c. sugar1 tsp vanilla1/4 lb bakers chocolate Spread over top of cake while warm

*notice that she did not include what temperature setting the oven should be.

ELIZABETH KIETZMAN-VOLLElizabeth Kietzman was born November 7th, 1896 to Herman and Julia Kietzman, both Germans from Russia. "Lizzy," a soft-spoken, loving woman, married Henry Voll on April 22nd, 1913. Together they raised six children on the family farm which was known for its frequent dances in which she and Hank (Henry) played the piano and violin, respectively. They did all of their own butchering, and preserved meat by placing it in crocks with lard poured over it.

ELIZABETH’S HOMEMADE CHEESE

3 gal. sour milk

1 qt. cheese

1/2 c. butter and a little butter color

1 1/2 tsp. soda

Let this stand 2 hrs. Put in double boiler and add:

1 c. sour cream

2 tsp. salt

Cook 1/2 hour or longer

ELIZABETH’S DUMPLINGS

1 c. milk1/2 c. butterBring to boil in kettle, then add:1 c. flour, sifted2-3 eggsTake Tbsp. of mixture and drop in simmering broth (not boiling!) and cover to let steam. Dumplings will rise to top

DOROTHY MADISON-NOONEYDorothy, born to Henry and Elizabeth Voll, married Vandal Madison, and she played the acordian in an old-time rhythm band. Together Vandal and she had one daughter, Joan. She owned a dress shop downtown, and was known for her impeccable housekeeping and etiquette skills. After Vandal passed away she married Joe Nooney.

DOROTHY’S SPRITZ COOKIES

1 C. Butter

1 1/2 C. flour

2/3 C. sugar

1 tsp. vanilla

3 egg yolks

Put through press and bake at 375 degrees

Makes 5 dozen

DOROTHY’S COOKIE JAR GINGER SNAPS

2 c. sifted flour

1 Tbsp ground ginger

2 tsp cinnamon

1/2 tsp. salt

3/4 c. shortening

1 c. sugar

1 egg

1/4 c. molasses

Mix as usual and roll in balls in hands. Dip in sugar. Bake at 350 for 12-15 min.

JOAN (MADISON) NIELSONJoan Madison was born to Vandal and Dorothy Madison. Being an only child, she often played in silence and remembers spending holidays with only her mother, father, and uncle. She married Luther Nielson, and they raised three boys on their farm outside of Yankton, SD. She was known for her impeccable hospitality, baking skills (even making wedding cakes for her children and grandchildren), painting china, and being a master seamstress. (on more than one occasion she made our halloween costumes).

JOAN’S HOMEMADE BUNS

4 c. water, warm

2 pkg. yeast

Let stand for 5 min

12 Tbsp or 2/3 c. sugar

12 Tbsp or 2/3 c. oil

4 tsp salt

Then add:

4 eggs

Start mixing in

12 c. flour

Only needs to raise once.

Bake at 350 for 20-25 min

JOAN’S AMARETTO FUDGE SAUCE

1 ½ Heavy Cream2 C. chocolate chips¼ C. Butter½ t. Vanilla3 T. AmarettoCombine cream, chocolate chips and butter in saucepan and heat over low heat until hot but not boiling. Remove from heat and stir until smooth. Stir in vanilla and amaretto. Pour into jars.
