Before using your bench mixerBeforeusingyourbenchmixerforthefirsttime,removeanypackagingmaterialandpromotionallabelsortags.Itisrecommendedtowashthemixingbowls,beaters,whisksanddoughhooksinwarmsoapywaterwithasoftcloth.Rinseanddrythoroughly.

Set-upBeforeassemblingyourbenchmixer,besurethepowercordisunpluggedfromthepoweroutletandthespeedcontroldialisinthe'Off'position.Positionthebenchmixeronalevel,drysurfacesuchasabenchtop.

1.Pressthe'TILT&LOCK'button,locatedontheneckofthebenchmixer.Whilethebuttonisdepressed,holdthehandle(Figure1)andeasetheheadofthebenchmixerback.Thebenchmixerheadwilllockintothistiltposition(Figure2).

2.Selectthedesiredmixingattachmentsdependingonthemixingtasktobeperformed:

–Beatersforcreamingbutterandsugar,whiskingcreamoreggwhitesplusmixingheavycakemixes.

–Whisksforlightbattersandpacketcakemixes.

–Doughhooksforkneadingdoughandotherheavymixtures.

3.Insertselectedattachment: Beaters–Takethebeaterthathas

apointier,curvedbottomandhasagreycolouredbandaroundthetopofthebeater–illustratedasbeater(A).Insertbeater(A)intotheleftsocketontheundersideofthemixerhead,theholeisidentifiedbyagreydotbesideit(Figure3).Takethebeaterwiththeangular/flatbottom,illustratedasbeater(B)andinsertintotheremainingsocket.

Note:Besurebothbeatersclickfirmlyinplace,youmayneedtotwistthebeaterslightlytoengageitinpositionpriortopushingitinplace.

Balloon whisks–Canbeinsertedintoeithersocketastheyareidentical(Figure4).Note: Besurebothwhisksclickfirmlyintoplace,youmayneedtotwistthewhiskslightlytoengageitinpositionpriortopushingitinplace.

Dough hooks–Takethedoughhookthatishookedatthebottomandhasagreycolouredbandaroundthetopofthedoughhook–illustratedasdoughhook(A).Insertdoughhook (A)intotheleftsocketontheundersideofthemixerhead,thesocketisidentifiedbyagreydotbesideit(Figure5).Takethedoughhookthatisstraightatthebottom,illustratedasdoughhook(B)andinsertintotheremainingsocket.

Note:Besurebothdoughhooksclickfirmlyinplace,youmayneedtotwistthedoughhookslightlytoengageitinpositionpriortopushingitinplace.Important: Theseattachmentshavebeendesignedwithasafetyfeaturesothattheycannotbeinsertedintheincorrectway.

4.Dependingontheamountofingredientsrequiredformixing,selecttheappropriatebowlsize.Ifyouhaveselectedthelarge4.2litrebowl,slidethebowlselectortothefarright(Figure6a).Ifyouhaveselectedthesmaller2.1litrebowl,slidethebowlselectortothefarleft(Figure6b).

5.Onceyouhaveselectedthebowlyouwishtouse,placeitonthebase.Gentlyrotatethebowlinaclockwisedirectionuntilitdropsintoposition(Figure7).Continuerotatinguntilthebowlclicksintoplace.Thebowlshouldfeelfirm.

Note:Themixerheadmustbetiltedbackwardsforthebowltobelockedontotheturntable.

6.Lowertheheadwiththeselectedmixingattachmentsinplaceintothemixingbowl.Todothispressthe'TILT&LOCK'button.Whilethebuttonisdepressedholdthehandle(Figure8)andeasetheheadofthebenchmixerdown(Figure9).

Using your Mixmaster® Bench Mixer 1.Positionthemixeronalevel,dry

surfacesuchasabenchtop.Ensurethemixingbowlisinplaceandthedesiredattachmentsareinserted.

2.Withthespeedcontroldialinthe'Off'position,plugthepowercordintoa230/240VoltACpoweroutlet.

3.Thespeedcontroldialturnsthebenchmixeronandoff,controllingthebeaterspeed.Turnthespeedcontroldialtotherightorupwardstocommencemixing(Figure10).

Clearlymarkedinstructionsforcorrectmixingspeedsforeachtypeofmixtureareshowninthe'MixingGuide'onpage8.

Tip:Startmixingataslowspeedandincreasespeedgraduallytopreventingredientssplashingoutofthemixingbowl.Whenaddingdryingredients,particularlyflour,lowerthespeedtemporarilyuntilingredientsarecombined.Tip:Whenkneadingyeastdough,usespeed1-5toachievebestresults.Formorespecificinstructionsfortheuseofthedoughhookssee‘Helpfulhintsforasuccessfuldough'onpage15ofthisbooklet.4.Whenmixingiscomplete,turnthespeed

controldialtotheleftordownwards,(Figure11)untilyouhavereachedthe'Off'positionandunplugthecordfromthepoweroutlet.

5.Holddownthe'TILT&LOCK'buttonandeasetheheadofthebenchmixerbackuntilthemixerheadislockedintothetiltbackposition(seefigures1and2onpage4).

6.Toremovetheattachments,placefingerslooselyaroundtheattachmentsandpresstheejectbuttonlocatedatthefrontofthehandle(Figure12).

Rotation of Mixing BowlsThemixingbowlsarenotrotatedbyamotor.Thebowlsarerotatedbymeansofthetipoftheattachment(beaterandwhisk)makingcontactwiththebowlandthemixturepassingingredientsthroughtheattachments.Note:Theconsistencyofsomemixturesmaypreventthebowlfromrotating.Inthiscaseyoumaychoosetogivethebowlagentleturntoensurethoroughmixing.Whenthedoughhooksareinserted,thebowlisrotatedbytheingredientspassingthroughthedoughhooksastheyturn.Note:Priortotheingredientsstartingtocombine,thebowlmayrequireagentleturntoassistintherotationofthebowl.

NOTES:Formostrecipes,itisbettertobeginyourmixingonaslowerspeeduntiltheingredientsbegincombining,thenmovetotheappropriatespeedrangefortheparticulartask.Generallythereisnoonesetspeedforanentirerecipe.Youwillneedtochangethespeedofthebenchmixerdependingonwhatstageoftherecipeyouareworkingon.Thisiscommunicatedintherecipesection.

Whenmixinglargerquantitiesyoumayneedtoincreasethebenchmixerspeedduetotheamountofmixingrequiredandthelargerloadonthemachine.Whenbuildinguparecipethatrequirestheadditionofdryingredients,suchasflour,slowthespeeddownwhilsttheseingredientsarebeingaddedtoavoidasnowstormeffect.Oncetheextraingredientsbegincombiningthenslowlyincreasetotheappropriatespeedfortheparticularmixingtask.

BeforecleaningyourMixmaster®ClassicBenchMixer,ensurethatthepoweristurnedoffatthepoweroutlet,thenremovetheplug.Wipeovertheoutsideareaofthebenchmixerincludingtheheadandbase,withadampenedclothandpolishwithasoftdrycloth.Wipeanyexcessfoodparticlesfromthepowercord.Sunbeamrecommendstowashthemixingbowls,beaters,whisksanddoughhooksinwarm,soapywaterandwipedry–useabrushifnecessarytoremoveanystickyfoodparticles.Thestainlesssteelmixingbowls,beaters,whisksanddoughhooksmaybewashedinthedishwasher.Note:Placeonlyonthetoprackofthedishwasher.Theturntablecanberemovedforthoroughcleaning.Thisshouldbedoneoccasionallytokeepyourbenchmixerclean.Sunbeamrecommendstowipetheturntableandthesurfaceunderneaththeturntablewithasoftdampcloth.Neversubmergetheturntableinwater,orplaceinthedishwasherasthiswillwashawaytheinternallubricant.

Measuring IngredientsCarefulandcorrectmeasurementofallingredientsisessentialforrecipesuccess(particularlybaking).AustralianStandardMetriccupandspoonmeasuresareusedinallrecipesinthebook.Allcupandspoonmeasurementsshouldbelevel.• Onemetrictablespoonisequalto20mls.• Onemetricteaspoonisequalto5mls.• Oneliquidcupmeasurementisequalto

250mls.

Thefollowingaresomehintsonmeasuringingredients.

Wet IngredientsAlwaysuseameasuringjugorifmeasuringsmallquantities,useastandardmetricmeasuringspoon.Placethemeasuringjugonalevelsurfaceandcheckthemeasurementateyelevel.

Dry ingredientsAlwaysuseastandardmetricmeasuringcuporstandardmetricmeasuringspoon.Shakegentlytoensuretherearenoairbubblesandlevelthesurfacewithaknifeormetalspatula.Nevertapthecuponthebenchorpackintheingredients(unlessspecified);thiswillgiveaninaccuratemeasurement.

Other ingredientsAlwaysweighingramsusingmetricscales.Toensureanaccuratereading,alwaysrememberto“tare”thescalesbacktozerowiththeemptycontainerbeforeaddinganyfood.

SubstitutesHerearesomesuggestionsforsubstitutingingredientsinrecipes:

15gcompressedyeast.

• Unsaltedbutterisbestforcakebaking,howeveritcanbesubstitutedwithsaltedbutterormargarineifnecessary.Margarinemayslightlyalterthetextureofthefinalresult.

• Whensubstitutingwheatflourwithglutenfreeflour,thebestresultsareusuallyachievedinrecipesthathaveasmallamountofflour.

• Icingsugarmixturecancontainwheatstarch(thispreventsitgoinglumpy).Ifyouhaveaglutenintolerance,pureicingsugarcanbeusedinstead.

• Milkcanbesubstitutedwithsoymilk.Itcansometimesalsobereplacedwithfruitjuiceactingastheliquidcomponent.

• Beforestartinganyrecipecarefullyreaditthroughfrombeginningtoend.

• Ensureyouhaveallingredientsandutensilsbeforeyoustart.

• Refrigeratedingredientssuchasbutter,creamcheeseandeggsshouldbeatroomtemperatureforbestresults(unlessotherwisespecified).Settheseoutaheadoftime.Ifyouforgettoremovebutterfromthefridge,usethecoarsesideofagratertogratethebutter.Thiswillassistthemixerandsoftenthebutterfaster.

• Alwaysadjusttheovenshelftothedesiredpositionandthenpreheatoventobakingtemperaturerecommendedintherecipe.Gettoknowyouroven.Mostovenshave“hotspots”anditmaybenecessarytoturnfoodorswapshelvesduringcooking.However,beawarethateverytimeyouopentheoven,thetemperaturedrops.Onlyopentheovenifnecessaryandbesuretoclosethedoorquickly.

• Breakeggsintoasmallbowlbeforeaddingtomixture.Thiseliminatesthechanceofcontaminatingmixturewithshellsorrotteneggs.

• Allrecipeshavebeencarefullydevelopedandtested,butshouldyoufinditnecessarytoaltertheingredientsortin,youmustallowforavariationincookingtime.Alwaystestfordonenessinbakedgoodsbeforeremovingfromovenorothercookingappliance.

• Duringmixing,ingredientsmaysplashtothesidesofthebowl.Pausethemixerandusearubberorplasticspatulatoscrapethebowl.NEVERUSEAKNIFE,METALSPOONORFORK,asthesecandamagethebeaterandbowl.Alightscrapingaftertheadditionofeachingredientassistsinachievingefficientmixing.

Tips for cakes, biscuits and slices• Whencooked,acakeshouldshrinkslightly

fromthepan.• Whentestingmostcakes(notsponges,

fruitcakesorcheesecakes),gentlytouchthesurface;itshouldfeelfirm.Atthisstage,removethecakefromtheovenandclosetheovendoortoretaintheheat.Insertathinskewerintothedeepestpartofthecake.Nouncookedmixtureshouldadheretoit.

• Testingcakedonenessshouldbedonequickly.Ifthecakeneedstobereturnedtotheoven,theovendoorshouldbeopenforaminimalamountoftime.Rapidtemperaturechangemaycauseanundercookedcaketosinkinthemiddle.

• Formosttypesofbiscuits,youcantestiftheyarecookedbygentlypushingthebiscuitonthetraywithyourfinger.Ifitmoveswithoutbreaking,thebiscuitiscooked.

• Donotoverbeatanymixture.Becarefulthatyouonlymix/blendmixturesforthespecifiedtime.Whenfolding,dosountiljustcombined.Overbeatingormixingcancausetoughness,closetexture,excessiveshrinkageoreffectrising.

• Curdlingcansometimesoccurwhenaddingeggstoamixture.Ifthishappens,continuewiththerecipeasitwillcomebacktogetherwhenthedryingredientsareadded.

• Ifcakesbegintooverbrown,coverthetoplooselywithfoiltoprotectitfromthetopelementoftheoven.

• Toobtainthegreatestvolumewhenbeatingeggwhites,besurethebowlandbeaterarecompletelycleananddrybeforeuse.Thesmallestamountofgreaseorwatercanpreventthewhitesfromaerating.

• Theterm“softpeaks”meansthattheeggwhitebarelysupportsitself.Whentheheadofthemixerislifted,theeggwhitemixturewillcurlandmayfallfromthebeater.

• Theterm“firmpeaks”meansthattheeggwhiteholdsitshape.Whentheheadofthemixerislifted,theeggwhitemixturewillremainpointyandfirm.

• Whenmakingpavlovaorothermeringues,alwaysusecastersugarasitdissolvesmucheasierthanothercoarsersugars.Sugarshouldbeginbeingaddedatsoftpeaks.Ifyouwaituntiltheeggwhitesreachfirmpeaksandaredryitwilltakelongertodissolvethesugar.

• Totestifsugarisdissolved,rubasmallquantityofmixturebetweenyourfingertips.Ifitfeelgrainy,continuebeatinguntilsmooth.

• Ingeneral,cakesshouldbecooledonawirerackafterthesuggestedstandingtime.Thestandingtimeistopreventthefreshlybakedcakefromsplittingorcrackingwhenremovedfromthepan.

• Fruitcakesandvariousotherheavycakes,suchasmudcakes,arebestcooledinthepan.Duetotheweightofthesecakes,turningoutwhilestillwarmwillcausethemtosplit.Coolinginthepanalsokeepsthemmoist.

• Spongesshouldberemovedfromthepanassoonastheycomeoutoftheoven.

• Mostbiscuitsarebestcooledonthebakingtray.
