Operation

The breast caps or front halves can be supplied in crates, cartons or straight from the cut-up lines onto a conveyor belt. Two or three loading operators, depending on input product, take the breasts and place them on a product carrier which passes by slowly in front of them. The product carriers then take the breasts through a sequence of automated deboning steps:

V A unique deskinning principle is implemented to remove the skin from the breast and harvest a high quality, undamaged skin.

V The back meat harvesting solution automatically removes back skin and back meat from the front half carcasses, separately from the fillet. This reduces trim loss, increases the yield and saves manual trim labor.

V Using the proven carousel principle, the wishbone is cut out of the breast precisely, resulting in minimum bone contamination and low meat loss.

V In the same carousel, the fillet is scraped loose from the breast cage. The carousel can be adapted easily for optimal performance with both matured and non-matured products.

V The breast fat rim remover ensures that the fat rim is automatically removed from the fillet, reducing trim losses (only applicable in combination with air chilling).

V An incising module splits the fillet in two halves, if required. V A sequence of modules can be integrated to

automatically harvest half and whole fillets, with or without tenders attached. End product requirements dictate the configuration used.

V In case of separate tender harvesting, a second carousel can be installed to automatically harvest unrivalled high quality tenders, automatically clipped or non-clipped. The presentation of these tenders is comparable or higher to manual harvesting.

V The keelbone modules further increase revenues from the deboning process. All remaining meat is removed from the keelbone. Harvesting this meat separately increases value significantly, and results in a clean keelbone cartilage (which can then be harvested from the carcass and sold, e.g. to the pharmaceutical industry or as an appetizer in Asian markets).

This new generation Rapid Plus breast deboner M4.1 has more compact and flexible design with an increased capacity up to 7,000 bph while reducing the footprint up to 16%. This allows TCO optimization and also opens up the possibility of integrating future extensions.

Keel bone cartilage cutting module (24)The keel bone cartilage cutting module removes the white cartilage part of the keel bone.
