MAIN TOPIC C.K.V
Demand Ventilation
WHAT IS DEMAND VENTILATION?A Simple definition may read as follows:
Under partial cooking loads with no demand from the appliances, exhaust and make up air is reduced to preset acceptable minimum quantities and conversely increased when cooking load and appliance activity dictate.
COST IMPACTSASSOCIATED WITH COMMERCIAL KITCHENS
Over $2 billion per year spent in the United States on energy consumption in commercial kitchens
Transposed per capita that number could equate to over $ billion spent In Canadian kitchens
DEALING WITH THE ISSUES
NFPA 96 Code
ASHRAE
University of Minnesota
Minimum Velocities Reduced
THE SOLUTION
The use of Demand Ventilation
- improves energy efficiency- improves kitchen comfort- improves fire safety- improves occupant health
C.K.V. ANIMATION
PLAY
FEATURES AND BENEFITS
Provides electrical savings of between 6674% on kitchen exhaust and make-up air motorsProvides natural gas savings of between 3842% on dedicated make-up airImproves energy efficiencyImproves fire safetyIncreases the operational life expectancy of exhaust and make-up air fansReduced noise levels - lends to a better working environment

FINALLY
It is important to note that currently government utilities and industry are working tirelessly at providing incentive rebates for the implementation and installation of Demand Ventilation in commercial kitchens.
An example of this can be seen with Enbridge Gas and Union Gas both providing cash incentives.
