Preparation of “Magiun de Topoloveni” Preparation: Traditionally documented since 1914; in order to preserve the

full nutritional value of fresh prunes, the plum jam Topoloveni is prepared in a double-walled boiler, at a controlled temperature, not exceeding 68 degrees Celsius, for 12-14 hours, in order to evaporate all the water. Due to this method of preparation of Topoloveni, this jam does not need any preservatives. You need four different types of plums, which have to be cooked for 10 hours without sugar, with very low heat, until the magiun sticks to the spoon. The magiun of Topoloveni is a thick, homogeneous, dark brown paste with a minimum of 55% dry matter content.

Plums used for the production of magiun of Topoloveni belong to various local varieties of Prunus domestica : Boambe of Leordeni, Bistriteana, Brumarii, Centenar, Dambovita, Grasa ameliorata, Grasa Romanesca, Pescarus, Pitestean, Silvia, Stanley, Tomnatici Caran Sebes, Tuleu gras, Tuleu timpuriu, Valcean, Vinata Romaneasca
