Cari soci,

Non sembra vero, ma anche quest’anno è volato. Tra meno di un mese sarà Natale e come ogni anno l’ICC lo festeggerà con il suo tradizionale potluck. Questo evento sarà riservato ai membri, per cui tutti coloro che vorranno partecipare a questa festa, potranno farlo diventando nostri iscritti. Associarsi significa non solo supportarci, ma anche beneficiare di tutti i vantaggi che l’ICC offre ai suoi membri. I nuovi corsi inizieranno presto sia presso la nostra sede storica di San Diego che in quella satellite di Encinitas. Sono molto felice di iniziare un nuovo anno perché il 2020 sarà pieno di sorprese e ci stiamo preparando per organizzare, per tutti gli amanti della cucina emiliana, un’esperienza unica nella Food Valley. Vi aspetto tutti alla nostra festa di Natale e se non siete ancora membri, fatelo subito. Buone Feste a tutti

Dear members,

it doesn't seem possible, but this year just flew by. In less than a month it will be Christmas and like every year the ICC will celebrate with its traditional potluck. This event will be reserved for members only, so all those who want to participate in this party can do so by becoming members. Joining means not only supporting us but also benefiting from all the advantages that the ICC offers to its members. The new courses will begin soon in Little Italy and in our satellite location in Encinitas. I am very excited to start the new year because 2020 will be full of surprises.  For all lovers of Emilian cuisine, we will be organizing an unique experience in the Food Valley. I am looking forward to seeing all of you at our Christmas party and if you are not yet a member, it’s not too late to become one now. Happy Holidays

ICC CLASSES IN ENCINITAS

Check out our North County location: classes for any levels and…so convenient!

In April 2019, we opened a new venue for our language classes in Encinitas at the San Dieguito Heritage Museum. We offer classes from beginning to advanced in grammar and conversation, as well as introductory classes for travelers and intermediate classes on the regions and traditions of Italy. Our classes are taught by veteran ICC teachers. Since April, we have had three sessions with nearly 100 students, most of whom are new to the ICC experience. 

Some people take classes to use in their travels, some take classes to advance their language skills, some take classes because they love the sound of the language, and some take classes simply to honor their roots and to find and keep in touch with their Italian cousins. Whatever their reasons, these classes offer them an opportunity to follow their passion conveniently near their homes in North County and in a lovely, pastoral setting with ample free parking.The next session starts January 6, with registration beginning December 1 at www.icc-sd.org. As an Italian immigrant, I wanted to recreate the feeling of my homeland, Sicily, here in my adopted home, San Diego. And for me that feeling is found in the old trattorias of my country. Warm, open, joyful, they are welcoming to all who enter. That feeling comes from the authentic food they serve, made by hand and using raw materials.

While my family now resides in California, my heart is in two places: Italy and North Park. That is why I decided to open Cori Pastificio here. To recreate the feeling of home, with a balance of classic and contemporary Italian food that is made from the heart–for my North Park community and San Diego at large.

Cori’s Menu Our seasonally driven menu will focus on artisanal pastas made to order with authentic ingredients, including ancient grains and wheat berries imported from Sicily. We will offer a selection of 6 sharable appetizers, 2 salads, 6 Sicilian-inspired vegan dishes, 8 freshly made pastas, and 2 desserts of the day. A selection of local and Italian beer will be available, along with a wine list that features small, innovative Italian wineries. Sample menu items include:

● Raviolini made from cocoa pasta stuffed with beef oxtail, parsnip root, and orange confit

● Traditional lasagna made with Bolognese sauce and bechamel

● Sicilian escargot roasted with tomato, mint, and garlic confit

● Romana salad comprised of purple mustard leaves, house-fermented garum, citrus, Grana Padano, and roasted seeds

● Crudo of local catch of the day, black olives, capers, cantaloupe extract, and extra virgin olive oil

The style of the restaurant will be that of a classic and comfortable Italian trattoria circa the 70’s, like the places my family dined in during my childhood and to which my earliest food memories are tied. Cori’s kitchen and pasta preparation area will be open so guests can interact with the chefs making their food. A small retail area will be present, where handmade and imported items, including our fresh, small-batch pastas and accompanying sauces, will be available for purchase. Cori is Sicilian dialect for “heart.” It was chosen to reflect the love and soul we are putting into the food and hospitality that awaits our neighbors and local families we very much look forward to serving. My wife and I are excited to welcome you to our new and exciting endeavor.

About Chef Accursio Lota

Accursio Lota has risen to international acclaim as Winner of the 2017 Barilla World Pasta Championship, and five-time winner of San Diego Magazine’s Readers’ Poll for Best Chef of San Diego (2014-2018). He is also an inductee into the San Diego Home & Garden Magazine Chef ’s Hall of Fame. In 2018, Chef Lota was one of only four chefs in the United States, and one of 14 chosen from across the globe for the coveted “3 Gamberi” status by Gambero Rosso, the Italian equivalent of three Michelin Stars. Over his 15-year career, worked at the Four Seasons in Milan, the Four Seasons in Santa Barbara, The Marine Room in La Jolla, and most recently Executive Chef at Solare. Under Lota’s leadership, Solare was voted Best Italian Restaurant three years in a row. In 2019, Chef Lota founded Lotaria Restaurant Group with his wife, Corinne Goria, a San Diego native.

Sono i prodotti dell’Emilia Romagna gli alimenti più copiati e contraffatti al mondo. Se il Parmigiano Reggiano, il parmesan, è tra i prodotti più copiati e contraffatti al mondo, non lo sono da meno il prosciutto di Parma e l’Aceto balsamico di Modena. Il dato emerge dal lavoro dell’Icqrf (Ispettorato centrale per il controllo della qualità dei prodotti

agroalimentari) che nel 2014 ha effettuato 60 segnalazioni ‘ex-officio’ in tutta Europa (dove appunto vige la tutela delle indicazioni geografiche) riguardanti pratiche imitative di prodotti Dop/Igp italiani, delle quali ben 40 relative a denominazioni dell’Emilia Romagna (in primis Parmigiano Reggiano, Aceto Balsamico di Modena e Prosciutto di Parma, appunto).

Un danno incalcolabile per il sistema certificato delle produzioni alimentari che a livello regionale vale oltre 2,5 miliardi di euro e che fa dell’Emilia Romagna la

prima regione in Europa per valore dei prodotti Dop/Igp (15% del valore complessivo legato al paniere di quasi 1.300 Dop/Igp a livello Ue).

Un sistema, quello dei prodotti Dop emiliano-romagnoli, che assorbe oltre il 90% del latte vaccino prodotto in regione, che sostiene l’economia di molte aree svantaggiate (il Parmigiano Reggiano rappresenta la prima Dop italiana per latte vaccino prodotto in montagna, circa 350.000 tonnellate contro le 77.000 del Trentingrana) e che concentra il 73% della produzione di prosciutti Dop italiani.

La rilevanza del mercato statunitense per queste due denominazioni (primo mercato estero di destinazione di Parmigiano Reggiano e Prosciutto di Parma) e la contestuale importanza della tutela delle indicazioni geografiche

oggetto di negoziato in ambito Ttip (l’accordo di libero scambio Usa-Ue) hanno rappresentato i motivi alla base di un recente studio della società di ricerche di mercato Nomisma su origine, italiansounding e tracciabilità dei prodotti agroalimentari.
