Lactoseisthethirdmajorcomponentofcow’smilkalongsidefatandpro-tein.Thesynthesisoflactoserequiresglucose.Ifthesupplyofglucosefromcarbohydratesinthefeedisinsufficient,theglycogenicaminoacidsareusedtoreplenishit.Soitispossibletosaveonaminoacidsifcarbohydratesreleaseglucoseinthesmallintestine.Thesesavedaminoacidscanthenbeusedtoproducemilkprotein.
Bergalac is nearly 100% rumen- stable BergaLacisahighlydigestiblefat/carbo-hydratecomplexinpowderformthatisnearly100%rumen-stable.Thebasisforitsproductionisarumen-stablepalmoilfraction.Thisisusedtoencapsulatecarbohydrates,whicharenotavailabletothecowuntiltheyreachthegut.Atthesametimethecombination
achievesadigestibilityof82%forthefatcomponentsofBergaLac.Thedigestibilityofthefeedfatasawholeisincreasedby8%,whichpermitsmuchbetterutiliza-tionoftheenergycontentofthefeed.Theexcellentdigestibilityandgoodflavourincreasethecows’feeduptake.Thisre-sultsinahighermilkyield,betterfertilityandenhancedlifetimeproductivity.

Intheearlyphaseoflactation,high-milkingcowshaveagapintheirenergysupplybecausetheyneedmoreenergyformilkproductionthantheycantakeupwiththeirfeed.Tofillthegapthecowshavetomobilizeenergyfromthereservesoftheirownbodies;thismayresultinmetabolicdisorders.Inordertopreventsuchdisorders,ad-ditionalenergyhastobeprovidedthroughthefeed.Theadditionalenergyrequire-mentformilkproductionmaybe500goffatormorepercowandday,dependingontheanimal’sindividualyield.Butthis

Inordertoachieveahighpricefortheirmilk,farmersmustkeepawatchonitsfatandproteincontent.Afurtherimportantqualitycriterionisthefatty-acidcompo-sitionofthemilkfat,asitisthenatureofthefattyacidsthatdeterminesthespreadabilityofthebuttermadefromthemilk.
The feed fat determines the fatty-acid composition of the milk fat and the body fat of the cow Inthecaseofdairycowsthisisthefatthatisavailabletotheanimalafterithaspassedthroughtherumen.Rumenbacteriareactsensitivelytounsaturated
fattyacids;theysaturateallunsaturatedfattyacidsfromthefeedtowhichtheyhaveaccess.Butthebacteriacanonlycarryoutthisprocesspartially.Iftheirhydrogenationcapacityisexceededthebacteriaareimpededbytheunsaturatedfattyacidsandreducetheiractivity.BergaFatF-100HUhelpstopreventreductionofthebacterialactivityintherumenandcarrytheunsaturatedfattyacidsintothegutunchanged;theretheyareabsorbedandalsousedinthesynthesisofmilkfat.Theresultisabutterthatiseasilyspreadatroomtemperature.Theseprocessesconstitutearealchallengetoanimalnutrition.Inthepast,rumen-stablefats
wereusuallyproducedbyfractionatingthesaturatedfattyacidsinordertoavoiddamagetotherumenbacteria.

Broilers from the Berg+Schmidt trial
Theeffectiveapplicationoffeedfattosuitaparticularanimalspeciesdependstoalargeextentonthefatty-acidpatternofthefat;thishasalreadybeendemonstrat-edinseveraltrials.Althoughthedigest-ibilityoftheunsaturatedfattyacidsinmonogastricanimalsismeasurablyhighinmanyofthesetrials,therestrictingeffectoftheunsaturatedfattyacids(e.g.linolicacid,C18:2)particularlyonthehealthandgrowthparametersofbroilersisdescribedindetail.Supplementingbroilerfeedwithfattoraisetheenergylevelisthereforeabal-ancingactofoptimization.Itisnoteasytodeterminethebirds’energyrequire-mentsandatthesametimefindexactlytherightfatty-acidcomposition.
Energy for broilers through an ideal fatty-acid balance Afatwithahighpercentageofpalmiticacid(C16:0)thatislong-chain,saturatedandatthesametimehighlydigestibleofferstheidealfatty-acidbalance.Itsuppliesthebroilerswiththe“right”energy.Lecithin-activatedfatpowders(e.g.BergaFatHTL-306/HTL-316withalecithincontentof6or16%respectively)contain75–85%palmiticacid(C16:0)andconstituteagoodbasisforoptimizingthebroilerfeed.Berg+SchmidtwasabletoconfirmthisinacomprehensivetrialconductedwithbroilersincooperationwiththeUniversityofGöttingen.Theobjective

Like no other process the fractionation of fats makes it possible to produce fat powders with a
precisely adjusted fatty-acid composition. Berg+Schmidt confirmed the superiority of the frac-
tionated and lecithin-activated fat powder BergaFat in a comprehensive trial carried out with
broilers in cooperation with the University of Göttingen.
Up to 1 euro-cent more profit per chicken BergaFat for fattening poultry: trials show it to be the superior addition to feed
ofthetrialwastodeterminetheeffectoffractionatedpalmfatinpowderformwithahighpercentageofpalmiticacid(C16:0)asaddedfeedfatincomparisonwithsoybeanoil.Theratingcriteriawerefatteningperformanceandcarcassquality.
Superiority of the BergaFat groups Throughoutthetrial(35days)thesuperior-ityoftheBergaFatgroupsoverthecontrolgroupwithaddedsoybeanoilinrespectofoverallperformanceandstateofhealthwasobservedandmeasured.

Besidesoverallperformanceandmeatqualitythetrialalsoexaminedtheroleofthelecithincontainedinthefatpowder.Theminimumdoseoflecithinwascalculatedonthebasisofitsdeoiledlecithincontentandinrelationtothefatcontentofthefeed.Thetrialconfirmedthatanaveragedoseofaslittleas0.35%deoiledlecithintothebroilerfeed(fromthefirstdayoffattening),inconjunctionwiththerightfatcomposition,resultedinafinalbroilerweightthatwasaround6%higherthanthatofthebirdsinthesoygroupwithoutaddedlecithin.
Higher final weight with lecithin Whereasthepercentageoffatinbroilerfeedhasnearlytripledinrecentdecades,theprogressivelyshorterlifespanandfatteningtimeofthebroilersleaveslessroomfornaturaladaptationofthedigestivesystem–withtheresultthatthebirds
areunabletodigestthelargefatcontentproperlyanduseitefficiently.
Optimized energy supply and better digestion Deoiledlecithinfacilitatestheemulsionand“preparation”ofthisfatandservestooptimizeitsdigestion.Thisinturnin-creasestheutilizationofenergyandpro-motesthedigestionofotheringredientsofthefeedthatsteerthebirds’growthinthedesireddirectionandenabledeliber-atecontrolofthefatteningprocess.
