The 'Moka' was invented in 1933 by Alfonso Bialetti, combining modern technology with the Italiantradition for elegance and craftsmanship. The coffee machine is simple and compact, yet capable ofmaking an excellent 'espresso like' coffee at home.

The claim of Bialetti was that "without requiring any ability whatsoever" one could enjoy "anespresso at home almost like one at the bar". The idea was to bring the coffee bar into the privacy ofone's own house and the tradition remains the same as of today.

Coffee brewed with 'Moka' is not as creamy as the espresso you can enjoy at the bar but it is equallyflavorful and equally satisfying at the end of a meal. It is therefore strongly suggested, for acomplete true Italian meal, to acquire a 'Moka' for your own home.

To make coffee:

1. Fill the lower chamber with just under one cup of water, or just below the edges of the container.

2. Fill the coffee basket with finely ground espresso coffee to the top and press down lightly (do notover-press or you will burn the coffee!).

3. Assemble the pot and put on medium-high heat and leave for a few minutes. Soon you will hear a"gurgling" noise as the steam bubbles mix with the up streaming water. Once you hear this noise...

4. Remove from the heat and let all the coffee collect.

5. Serve in small coffee cups and drink straight, adding sugar at will or a few drops of milk to make'macchiato'.
