Welcome to the spring magazine, we’re supposed to be enjoying warmer weather and saying goodbye to the winter blues. However we know that’s not always the case with the British weather which is why Thomas Cook have featured some fantastic getaways to give you the perfect Spring pick me up.

The launch of the brand new Hive website at the beginning of the year brought even more fantastic discounts to our Hive Card including the RAC and most recently Pizza Express! So if you haven’t already make sure you pick up your Hive Card!

After a fantastic start to the year I am now pleased to announce that a new edition will be moving to The Park. The Elliott Hudson College which is part of The GORSE Academies Trust will be joining us this September.

The college, which was set up last year, will be moving from its existing base across the road at Phoenix House and moving into the MC2 building, or as some of you may know it better, the old HSBC building.

With The Gorse Academies Trust aiming to drive their high level students into attaining places at first class universities this will be an excellent opportunity for the company’s onsite to develop business relationships with the students and to enable potential working prospects for them.

We hope you are as excited as us for the college to move onsite, which will see an innovative educational establishment move alongside large private sector employers enabling them to grow and achieve their ambitions of integrating education and the workplace.

1. Soak the beans overnight. Cook in clean boiling water until tender and refresh.

2. In a separate pan heat the oil. Add medium diced onions, carrot, celery and fine diced chilli, garlic, ground cumin, oregano and bay leaves.

3. Add tinned tomatoes & stock. Bring to the boil and reduce to a simmer until thickened, remove bay leaves.

4. Add the beans and chopped coriander.

5. Add lime juice, chopped spring onions & season to taste.

6. Finally garnish with a little chopped coriander & chilli.

Mexican Bean, Chilli & Lime

50g Pomace oil

300g Spanish Onions

200g Pinto beans

200g Kidney beans

30g Green chilli

150g Carrot

150g Celery

2 Limes

2500g Water

20g Garlic

15g Ground cumin

400g Chopped Italian tinned tomatoes

5g Dried oregano

1 Bay leaf

10g Coriander

20g Spring onions

4g Salt & Pepper

25g Knorr vegetable bouillion paste

SERVESEIGHT

PEOPLE


1. Preheat the oven to 180oC.

2. Cook the quinoa in boiling water for roughly 12-15 minutes until the grain & core are separated.

3. Mix the sweet chilli sauce & orange juice together.

4. Grill the salmon with a light coating of olive oil until almost cooked & then finish in the oven for 6 minutes at 180oC.

5. Place the quinoa on the plate & arrange the tomato & broccoli around it.

6. Top with the salmon & orange segments.
