WISE COUNTY

Food handler’s course setBY TANYA [email protected]

Foodborne illnesses can be prevented by following simple food safety prac-tices. The Wise County E x t e n s i o n offi ce pro-vides a food p r o t e c t i o n management training program that seeks to reduce the risk of food borne illness.

The “Texas Food Establish-ment Rules” (TFER) were revised and updated and became effective Oct. 11, 2015. A major change in the revision now requires all food employ-ees to complete an accred-ited food handlers training program within 60 days of

employment. The Texas Cot-tage Food Law also requires that anyone who operates a cottage food business have a food handler card.

Food service employees and those who operate a cottage food business can attend a two hour food han-dler’s class, accredited by the Texas Department of State Health Services, on Wednesday, April 12, from 2 to 4:30 p.m. at the Wise County Extension offi ce, 206 S. State Street, in Decatur.

This two-hour course will now be required for all food service employees to help promote the service of safe food. The certifi cate is good for two years and is valid anywhere in the state. Par-ticipants will learn about good personal hygiene, cross contamination and time and temperature abuse.

Call the Extension offi ce

at 940-627-3341 to sign up. The registration fee is $20 and covers course materials and an offi cial food handler card. Registration deadline for the food handler certi-fi cation course is Tuesday, April 11. Space is limited.

Individuals with disabili-ties who require auxiliary aide service or accommoda-tion in order to participate in the event are encouraged to contact our offi ce within fi ve working days prior to the program. Texas A&M AgriL-ife Extension Service edu-cational programs are open to all people, without regard to race, color, sex, disability, religion, age, national origin or genetic information or veteran status.

The class is taught in Eng-lish, but Spanish handouts are available if requested in advance.

The Food Protection Man-

agement (FPM) Training Program is brought to you by the Texas A&M AgriL-ife Extension Service, in cooperation with the Texas Department of State Health Services and the county commissioners.

Three ways to keep FOMO from controlling your life

BY GERRY [email protected]

Have you seen the great Bob N e w h a r t video where he is a psy-chiatrist try-ing to help a patient get over her fear of being bur-ied alive in a box? It’s a few years old, but it cracks me up every time I see it. Go to Youtube and search for “Bob Newhart stop it.” It is six minutes well spent.

This is my third (and fi nal, for now) installment on the topic of the FOMO (fear of missing out) epidemic that has been running rampant through our culture. You can read the fi rst two at drgerrylewis.com/fomo1 and drgerrylewis.com/fomo2.

I’ve talked about the prev-alence of the ailment, admit-ted my own struggles, given some history of the term, and even pointed out that many of the opportunities that come to us are really good opportunities.

Last week, I even included the passage of scripture that I can use to justify my over-commitment and my inabil-ity to push the no button.

“Be very careful, then, how you live — not as unwise but as wise, making the most of every opportunity, because the days are evil. Therefore do not be foolish, but under-stand what the Lord’s will is.” (Ephesians 5:15-17)

Make the most of every opportunity. My biggest fear is that I will miss out on an opportunity that God sent me. So, is FOMO simply a descrip-tion of a fully devoted follower of Jesus wanting to fully live the life to which we are called?

The answer to that is a resounding no.

If we will take a moment and look at the phrase within the context of just the three verses referenced, we can get three clues on how to keep FOMO from controlling our lives.Q Pay attention to your life patterns. The phrase “be careful” means to look at or pay attention to some-thing. How you live refers to the patterns or habits of your life. Is your lifestyle one of consistent awareness and wise choices? When a new opportunity arises, pay attention to how it may affect the rhythm of your life.Q Pay attention to your life seasons and challenges. The phrase translated making the most of every opportunity may also be translated rescu-ing your season. Some trans-

lations say redeeming the time. A good opportunity may knock at a bad time. Having a strong sense of purpose for this season of life will help us prevent the burnout and disappointment that inevi-tably comes from trying to do everything. When a new opportunity arises, pay atten-tion to how it may undermine your current focus. Q Pay attention to the revealed will of God. Under-standing the Lord’s will is not nearly as mysterious as it sounds. Most of the time, when the Bible mentions God’s will, it is in reference to the development of Godly character, as described in the Bible, not to the completion of tasks. When a new oppor-tunity arises, pay attention to how it may affect the progress you are making in becoming the person God made you to be. You can fi nd more about my thoughts on God’s will at drgerrylewis.com/backporch.

Our lives matter so much to God that He does not want us living in fear of what we are missing, but in peaceful fulfi llment of our identity as His children.

Large junipers not easily movedBY NEIL [email protected]

Dear Neil: I planted red-cedars as a screen back in January. The plants are about eight feet tall, and now I’m start-ing to lose sev-eral of them. Can I save them?

Those are large redcedars. Hopefully they were in con-tainers with all of their roots intact when you planted them. Junipers are rather diffi cult to dig and relocate from nature successfully if you’re working with specimens larger than

12 to 15 inches tall. Small ones are easily moved, and they take off and start grow-ing almost immediately. Mor-tality rate of the taller ones is much higher than you would want. The only other likely possibility would be if you allowed them to get too dry at some point this spring.

Dear Neil: I saw a photo of Chinese fringe tree (Chionan-thus retusus) after it was rec-ommended to me for my small front yard. It looks beautiful. How well will it do in Texas?

There are two species of fringetrees – the one you mentioned and its Ameri-can cousin Chionanthus vir-ginicus, commonly known as Grancy Graybeard. The Amer-ican species is native from

East Texas eastward to the Atlantic Ocean. It’s the taller of the two species, growing to 20 or 25 feet tall. It blooms in early spring before its leaves emerge. Chinese fringe tree is shorter, and it fl owers after the leaves have come out. It tends to be a bit showier. Both are adapted to acidic and slightly alkaline soils, but from I-35 west in Texas they will be diffi cult to grow due to highly alkaline soils and irrigation water. They can be grown in full sun in ideal con-ditions, but they’re also fi ne understory trees beneath tall shade trees, much as we grow Japanese maples.

Dear Neil: What are the best screening shrubs in the 8- to 12-foot range? Are

there three or four you could recommend?

My own preference for most of Texas in that size range would be Willowleaf holly, also known by the (need-lessly) threatening name of Needlepoint holly. Oakland hollies are frequently used for screens of that size. Nel-lie R. Stevens hollies grow to be somewhat taller than that. Yaupon hollies could be trained into screens, but it’s diffi cult to fi nd large speci-mens that have been grown as shrubs. Elaeagnus, glossy abelia and even waxleaf ligus-trum would fi t those sizes. Waxleaf needs to be used in the southern two-thirds of Texas due to winter injury. The others are all winter-

hardy in all of the state. Dear Neil: Is there any

remedy for the fungus that is killing our redtip photinias?

That’s Entomosporium fun-gal leaf spot, and sadly, no. There is no prevention and no cure. It has reduced redtips to a plant we no longer can recommend.

Dear Neil: We have sev-eral large rosemary plants that really took a hit this win-ter. Can they be salvaged, or should we take them out?

If they’re brown, they’re not going to come back. They’re frequently hurt in the north-ern half of Texas, but this past winter got them almost to the Gulf Coast. Taller varieties seem to be slightly more toler-ant of cold than the spreading

types. You’ll be much hap-pier either planting vigorousnew plants now or replacingthem with some other har-dier species. Most folks aredoing the former, since rose-mary plantings have servedthem well for many years. Theproblem is that you just don’tknow which winter the nextextremely cold spell will rollin.

Dear Neil: Every time I try a pride of Barbados plant itgrows tall and very leggy, fall-ing over. The ones I see in otherlandscapes are full and bushyand full of fl owers. Whatshould I do differently?

I’d be willing to bet that theothers’ plants are in full sun-light and that yours have had

The medical condition known as “premenstrual syndrome” (PMS) produces symptoms ranging from mood swings, fatigue, irritability, and depression to tender breasts and food cravings. It is estimated that up to 85% of menstruating women experience some of these symptoms related to their period, but only about 2%-10% experience severe symptoms. In severe cases especially, women will want to do everything they can to mitigate their symptoms. Many therefore seek to avoid excessive consumption of caffeine, which has been thought to increase the risk of developing PMS. However, a recent large study suggests that women who drank fi ve daily cups of coffee were no more likely to develop PMS over 14 years than women who consumed almost no caffeine. While nearly all women have some PMS symptoms, a few women experience symptoms that seriously interfere with their quality of life. The doctors at WISE OBSTETRICS & GYNECOLOGY, P.A. recommend women come in for a consultation to evaluate their symptoms in order to differentiate PMS from other disorders. Our services include routine offi ce gynecology and surgical management of gynecologic problems as well as care for pregnant women with routine and complicated pregnancies. To learn more, please call 940-626-8008. We are located at 2451 South FM 51, Suite 300, Decatur.

P.S. Symptoms of PMS occur during the last two weeks of a menstrual cycle (the two weeks before a woman’s period).

more shade. Lanky growth and poor fl owering are always the outcomes when there’s too much shade.

Dear Neil: What can I use to kill clover in a St. Augus-tine lawn? Some of the prod-ucts labeled to control it only wounded it, while they dam-aged the St. Augustine.

Apply a broadleafed weed-killer. Your local independent retail garden center sells broadleafed weedkiller prod-ucts containing only 2,4-D. They will be less likely to burn St. Augustine, although it’s still a good idea to spray only when daytime tempera-tures are no warmer than 85. Pump sprayers put out

fi ner droplets, and they can be used with much better precision, applying the herbi-cide only to the weeds. If you notice that the spray beads up and rolls off the clover leaves, add one drop of liquid dishwashing detergent per gallon of spray to help it stick to the leaves.

Dear Neil: I have enclosed leaves and a photo from my ligustrum shrubs. The leaves are spotted and they have been falling off for several weeks. What is causing this? What can I do to stop it?

This is freeze damage from the extreme cold spell of early January. Waxleaf ligus-trums develop an odd waffl e-like pattern in their leaves.

Those leaves then drop as spring begins. Actually, even healthy waxleafs will drop their old leaves at that time as their new growth is being produced. What will really tell the tale is if the plants rebound and look good in a few more weeks. If the stems in portions remain brown and crisp, you will need to replace them.

Q Have a question you’d

like Neil to consider? Mail it to him in care of the Wise County Messenger, P.O. Box 149, Decatur, TX 76234 or email him at [email protected]. Neil regrets that he cannot reply to ques-tions individually.
