One good habit that we can get into as an individual is being accountable for daily routines. In your in-house mailboxes you will find a Wellness Tracking Sheet. I encourage you to keep track of your daily exercises, daily fruit and vegetable intake, water intake, and additionally your energy level during the day. Resident Spotlight Employee Spotlight

Guess that State Park

My name is Bob; I grew up in a small rural 1 bedroom farmhouse in South Dakota and started my general education in a 1 room country school in the same small town! In 1951, I moved to MN to pursue my college career to become an educator. I was able to experience many exceptional schools including Bethel University, the University of MN, and St. Thomas, where

I received my Doctorate degree. After college, I become a principal for Independent School District 197. I retired 31 years later! I have been an active Gideon since 1971. I have traveled all over the world, paying my own expenses! I was proudly married for 67 years and have a daughter and son! Some of my favorite past times include gardening, crafting, and bird watching at the lake. When you see me in the halls, you will be greeted with a great big smile!

My name is Jill B. I grew up in White Bear Lake and now live in Vadnais Heights with my husband Tony and our dog Oliver.

In 2013, I was crowned the North Wind Princess for the St. Paul Winter Carnival, and made

over 300 appearances to many cities in MN and WI, as well as Florida, Georgia, South Dakota and even Canada, spreading the goodwill of the city of St. Paul! Currently, I serve on the board of directors for the Ambassadors of the St Paul Festival and Heritage Foundation. January is my busiest and most favorite time of year!

• Located less than 5 miles from downtown St. Paul, this is a great place for birders and nature enthusiasts.

• The more than 750 acres of oak woods, old fields, creeks and second-growth woodlands provide habitat for a variety of wildlife.

• The animals that can be found include warblers, horned owls, pileated woodpeckers, white-tail deer, red fox, and raccoon.

Craft Corner

Outings

We have a great variety of craft stations located in the Itasca Craft Room. Come make gifts for your apartment, families, or donate them to our community’s holiday decoration!

We have had some wonderful attendance to our outings in the past few months! We have enjoyed exploring the great state of Minnesota including trips to the arboretum, casino, plays, fall color tours, History Museum, and much more! It is important to remember that our outings are first come first serve basis. If you sign up and decide not to go, please let us know as soon as possible so that we can offer that spot to another resident! I look forward to many more great outings with our community!

Embrace the World Recipe:Swedish MeatballsFrom the Embrace the World Sweden recipe book

• 1/3 C porridge oats or breadcrumbs

• 2/3 C ml meat stock

• 14 oz ground beef

• 9 oz ground pork (minimum 10% fat)

• 1 medium egg

• 2 1⁄2 Tbsp plain flour

• pinch of salt

• 1 tsp ground allspice

• 1⁄2 tsp ground black pepper

• 1⁄2 tsp ground white pepper

• a dash of Worcestershire sauce or soy sauce

• 1 small onion, grated

• butter and oil, for frying

• mashed potato, to serve

Stirred lingonberries

• 1 1/2 C frozen lingonberries

• 1/2 C caster sugar

Cream gravy

• meat stock

• 1 Tbsp plain flour

• a good glug of light or whipping cream

• salt and ground black pepper

If using oats, soak them in the meat or chicken stock for 5 minutes.

Mix the ground meat with a good pinch of salt for a couple of minutes in a food processor to ensure it’s blended thoroughly. Add the eggs, flour, spices and Worcestershire or soy sauce to another bowl and mix with the soaked oats or breadcrumbs and grated onion, then add this to the meat mixture. You’ll have a sticky, but mold-able, mixture. Leave the mixture to rest for 20–25 minutes before using.

Heat up a frying pan with a small knob of butter or oil and shape one small meatball. Fry it until done and then taste it. Adjust the seasoning according to taste and fry another meatball to test it until you get it just right.

Shape the individual meatballs in your hands – it helps if your hands are damp. Each meatball should be around 1 inch in diameter, or larger if you haven’t got time.

Melt a knob of butter in a frying pan with a dash of oil and carefully add a few meatballs – make sure there is plenty of room for you to swivel the pan round and help turn them so they get a uniform round shape and do not stick. You’ll most likely need to do this in several batches. Cooking time is usually around 5 minutes per batch. Keep in a warm oven until needed. When your meatballs are done, keep the pan on a medium heat. Ensure you have enough fat in there, if not, add a knob of butter to the pan. Add a tablespoon of flour and whisk, then add a splash of stock and whisk again as you bring to the boil. Keep adding stock until you have a good creamy gravy, then add a good dollop of light or whipping cream and season well with salt and pepper. The color of the gravy should be very light brown.

To prepare the lingonberries simply add the caster sugar and stir. Leave for a while and then stir again, until the sugar dissolves and the berries have defrosted. Store leftover stirred lingonberries in the fridge.

Serve with creamy mashed potatoes.
