Email: [email protected] From the Editor’s Desk D iane Bain has been a faithful, dedicated employee for over the past 2 decades. She is recognized for her exceptional quality of resident care, compassion, and teamwork. She is truly a diamond in the rough, and without her, our facility could not function as smoothly as it does. Not only is she always available to the residents, but she gives herself fully to all of the staff in the facility as well. You will never hear her say, “That’s not my job”. Whether it’s mopping a floor, working the tray line, or assisting the doctors when they come to the facility, she is always ready and willing with a helping hand. There have been several occasions where we have been short- handed and Diane, off the clock, would do- nate her time to assist in whatever area she was needed. During emergency situations that have occurred during her years of ser- vice, she has been the facility’s “Johnny on the Spot!” Even if it meant getting out of bed in the middle of the night, during the dead of winter, to come all the way from home to provide whatever assistance the facility needed to get through the situation and make sure the residents were safe. She possesses all of the qualities that most em- ployers only dream of their employees to have, and she does her job with such dignity and grace that she makes it look like it is easy, which we all know it is not! Because of her incredible abilities during her 20 plus years of service, she has frequently been the recipient of the facility’s Employee of the Month award. Diane is one of the foundation blocks of this facility which without, we could not stand as tall and proud was we do! Diane Bain has been a faithful, dedicated employee for over the past 2 decades. She is recognized for her exceptional quality of resident care,

compassion, and teamwork. She is truly a diamond in the rough, and without her, our facility could not function as smoothly as it does.

Not only is she always available to the residents, but she gives herself fully to all of the staff in the facility as well. You will never hear her say, “That’s not my job”. Whether it’s mopping a floor, working the tray line, or assisting the doctors when they come to the facility, she is always ready and willing with a helping hand. There have been several occasions where we have been short-handed and Diane, off the clock, would do-nate her time to assist in whatever area she was needed. Healthy Makeovers Caesar Salad

Ingredients:• 4 ounce(s) Italian bread

• 1 clove(s) garlic, cut in half

• Nonstick olive oil cooking spray

• 1/4 cup(s) light mayonnaise

• 1/4 cup(s) grated Parmesan cheese

• 3 tablespoon(s) fresh lemon juice

• 1 tablespoon(s) olive oil

• 1 teaspoon(s) anchovy paste

• Coarsely ground black pepper

• 1 package (18 oz) romaine lettuce, torn into bite-size pieces

________________________________________

Directions1. Preheat oven to 400 degrees F.

2. Cut bread into 1/2-inch-thick slices. Rub bread slices, on both sides, with cut sides of garlic. Cut bread into 1/2-inch cubes; place in jelly-roll pan. Spray bread liberally with cooking spray. Bake 10 minutes or until golden-brown and crisp. Cool croutons in pan.

3. Meanwhile, in large salad bowl, with wire whisk, mix together mayonnaise, Parmesan, lemon juice, olive oil, anchovy paste, and 1/4 teaspoon pepper.

4. Add lettuce and croutons to dressing in bowl; toss to coat.

Martha Stewart’s Outrageous Chocolate Cookies

Ingredients:• 8 ounce(s) semisweet chocolate, roughly chopped

• 4 tablespoon(s) unsalted butter

• 2/3 cup(s) all-purpose flour, spooned and leveled

• 1/2 teaspoon(s) baking powder

• 1/2 teaspoon(s) salt

• 2 large eggs

• 3/4 cup(s) (packed) light-brown sugar

• 1 teaspoon(s) vanilla extract

• 1 package(s) (12-ounce) semisweet chocolate chunks ________________________________________Directions1. Preheat oven to 350 degrees F. Heat chopped chocolate and butter in a microwave-safe bowl in 20-second increments, stirring in between, until almost melted; do not overheat. In another bowl, whisk together flour, baking powder, and salt.

2. In a mixing bowl, beat eggs, brown sugar, and vanilla on high speed until light and fluffy. Reduce speed to low; beat in melted chocolate. Mix in flour mixture until just combined. Stir in chocolate chunks.

3. Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake, rotating sheets halfway through, until cook-ies are shiny and crackly yet soft in centers, 12 to 15 minutes. Cool on sheets 10 minutes; with a thin metal spatula, transfer to racks to cool completely.

Are You a Tiger?February 14 is celebrated around the world as Valentine’s Day, but it is also the first day of the Chinese New Year this year! The Chinese base their yearly calendar on the phases of the moon, and name each year after a different animal. There are twelve animals in all, and they follow a cyclical, 12-year pattern. Their order is: rat, ox, tiger, rabbit, dragon, snake, horse, sheep, monkey, rooster, dog, and pig. This year, 2010, is the Year of the Tiger.

All people born during this year are born under theTiger sign, and they are said to take on the characteristics of this animal. The Tiger is known as a brave protector and is admired by the Chinese for its ability to ward of the three main tragedies of the household: fire, thieves, and ghosts. Tigers are also sensitive, given to deep thinking, and capable of great compassion.

There are many legends that explain the origins of the Chinese zodiac and its twelve animals. One popular story is that the rat was given the responsibility of inviting other animals to meet with the Jade Emperor, the ruler of Heaven in the Taoist religion, for a banquet. At the banquet, the Jade Emperor would choose twelve animals for the Chinese zodiac. The cat was a good friend of the rat, but the rat tricked the cat into believing the banquet was a day later. The cat then slept all day and missed the banquet, was forgotten, and was left out of the zodiac. From this point on the cat vowed to be the rat’s natural enemy, and that is why the cat always chases the rat.

Another legend claims that the Jade Emperor held a race to determine the order of the animals. The rat, being the cleverest, came in first, followed by the others. However in order to win, the rat pushed the cat into a river and the cat did not finish the race, offering another reason why the two are sworn enemies.

If you know someone who is a Tiger sign (maybe even you are!), enjoy their unselfishness and good company. Like that famous Tony the Tiger says, “They’re Grrrrreat!”

Valentine’s Day in ChicagoValentine’s Day is a time for giving chocolates and flowers to loved ones, but on February 14, 1929, the infamous Chicago gangster Al Capone had other things in mind.

During Prohibition, Al Capone and his gang ran a lucrative business selling bootleg alcohol, although his business card said he worked as a used furniture dealer. On that Valentine’s Day morning, Capone assigned his hit men, disguised as Chicago police, to rub out his enemies. Al Capone himself was in Florida – a perfect alibi – and the rival gang leader, Bugs Moran, who was supposed to be the prime target, showed up late and thereby escaped unharmed. With seven dead, the event came to be known as the St. Valentine’s Day Massacre.

The incident attracted so much attention from local and federal police that both gangs suffered tremendously. Capone finally went to jail in 1931, and Moran died penniless years later, both proving that crime doesn’t pay.

A Reminder to Be KinderIf someone surprises you with a random act of kindness on February 17, don’t be surprised. Be inspired, because this is Random Acts of Kindness Day. Scientific studies have proven that acts of kindness are healthy for you. The rush of happiness, followed by a period of calming lightness after performing a kind act is known as the “helper’s high.” This releases the body’s natural painkillers, endorphins.

Attending a club regularly, volunteering, even entertaining friends or strangers has the happiness equivalent of getting a college degree or doubling your income. Spreading kindness is easy. Bring flowers to a friend, write a thank you note, leave an extra big tip, give a bag of groceries to a homeless person, give up your parking spot to another driver, or just smile more.

Fun with Food Cooking GroupPerspective:A person living in a normal community based arrangement engages in the delight of speculating, gathering, comparing, shopping, preparing, and enjoying a home cooked meal. Life enrichment programs at Bryn Mawr Care are in keeping with a “normal living arrangement.”

Objective:1. Participants will engage in the critical thinking process of preparing health recipes that may include gathering ingredients, comparing prices, reviewing calorie content and the preparation and enjoying of that recipe.

2. Participants will have a multi-sensory experience while pre-paring the recipe

3. Participants will gain strong community living skills geared toward increased independence.

Variation for group:Schedule a guided tour of a grocery store.• Bring related healthy living articles to the group.• Consider container gardening in the summer time to grow • own herbs, tomatoes, etc.
