Effect of protein standardization on the properties of milk and milk products
• Legislation IDF is considering draft standards covering concentrated and dried milks. These draft standards propose that the protein content of milk products may be adjusted (within limits imposed by practical constraints and a minimum protein content in the solids-not-fat) by the addition and/or withdrawal of milk constituents in such a way as not to alter the whey protein to casein ratio.
