INTRODUCTION

This Drinks Bible has been lovingly put together with input from heroes across the Coaching Inn Group.

Most companies run an 'employee of the month' award, however, we don’t feel this goes far enough. Every month we go out of our way to find our own heroes and their heroic acts can range from creating memorable moments to even saving a life. We love the heroes that work with us so we asked their valued opinions when it came to putting this menu together:

Basil Basil Fulton from the White Hart Hotel in Boston loves the Warner Edwards Rhubarb Gin, paired perfectly with mint and a slice of orange.

Craig Francis from The Golden Lion Hotel in St Ives is particularly fond of a Coconut and Pineapple Daiquiri, explaining the tropical flavours are the perfect complement for a warm summer’s day.

Marni Birchall from The Castle Hotel in Conwy has chosen our refreshing Le Altane Prosecco as her favourite tipple.

Simon Wood from The Kings Head in Richmond enjoys a nice whiskey as his nightcap and can recommend Jack Daniels over ice.

Whether you like your Martini shaken or stirred, your gin with lemon or lime or your Pinot Noir chilled, we have a drink for everyone.

The wines on our list have been very carefully selected by wine experts from within our group as well as industry tasters. The result is a beautifully balanced list with a wine for all seasons and every occasion; all of which pair perfectly with the dishes on our menus.

Particular favourites are the Dashwood Pinot Gris with bold fruity flavours and notes of pear drop sweets, and the Kleine Zalze Pinotage which has a natural smokiness that complements the deep fruity and spicy flavours.

We know and love gin as you can see from our gin range as well as our list of recommended gin and tonics, however, we the Coaching Inn Group predict the next big thing will be rum so why not try one of ours with a fiery Ginger Beer?

CHAMBORD

Chambord is inspired by a unique black raspberry liqueur produced in the Loire Valley in France on the late 17th Century. It was introduced to King Louis XIV during one of his visits to the Chateau of Chambord during his reign.

Its distinctive orb-shaped bottle has been a symbol of the French monarchy for centuries. The exquisite jewelled lid and gold detailing on the shoulders further emphasize Chambord’s royal inspiration.

It is made with the world’s finest raspberries, Madagascan vanilla, citrus, honey and XO Cognac that are all chosen to make the delicious black raspberry liqueur. They are carefully blended in a unique 3 step process that lasts 6 weeks. Every step is carefully overseen by the Maitre Liquoriste. These super premium ingredients sit Chambord in a much more superior place to a standard Cassis.

APEROL

Aperol was launched in 1919 at the Padua International Fair. Created by the Barbieri brothers, Aperol soon became one of the Italians’ favourite aperitifs.

It is light on alcohol at only 11% ABV, but has a rich, complex taste deriving from the infusion of a blend of high quality herbs and roots. The original recipe has remained unchanged and a secret to this day. In the immediate post‐war period and in later years, Aperol became popular all over Italy, particularly with young adults, people with an active lifestyle and women. Nowadays Aperol is distributed in dozens of countries worldwide.

The name says it all: Aperol is the perfect aperitif. Bright orange in colour, it has a unique taste thanks to the secret recipe which has never been changed, with infusions of selected ingredients including bitter and sweet oranges and many other herbs (including rhubarb) and roots in perfect proportions. Aperol’s strength is in its low‐alcohol content.

BOMBAY SAPPHIRE

At Bombay Sapphire, their spirit of innovation and inspiration is not only embodied in their gin but in their Master of Botanicals himself, Ivano Tonutti.

Travelling to the four corners of the world he’s developed personal relationships with each and every supplier, some going back decades. As Ivano himself says, this absolute attention to detail is “simply about maintaining the standard of care behind our gin”.

Creating the finest gin possible takes the highest quality raw ingredients. They use up to 12 precious botanicals suspended above the spirit in perforated copper baskets during distillation. That way, as the heated spirit vapours rise, they’re gently infused with all the rich aromatic flavours our botanicals release.

While ordinary gins boil their botanicals directly in the spirit to achieve their flavour, the wonderfully distinctive taste of Bombay is created using the Vapour Infusion process. They still use their original Carter head stills – Tom and Mary – from the 1830s, but now have added two state-of-the-art 12,000 litre copper pot stills – Henry and Victoria – to their refurbished original stills.

From the heat of their Moroccan cubeb berries to the spice of their West African Grains of Paradise, every one of the ten precious botanicals are chosen to bring their own special something to this gin. Uniquely distilled, they come together to give Bombay Sapphire its tantalising, smooth and complex taste.

OLMECA REPOSADO

Olmeca was launched in 1967 and now has a presence in 80 countries worldwide.

Making tequila requires time, know-how and the right ingredients. Olmeca tequilas use only hand-selected ripe agave from the Los Altos region. These are slowly roasted in traditional brick ovens for three days, crushed, fermented and distilled in copper pot stills. Each aged Olmeca tequila (Reposado and Añejo) is matured in small barrels previously used for bourbon.

Olmeca is a quality Premium Tequila. Its expert and unique production process combines hand-picked Agave plants, traditional brick ovens, cultivated yeast and distillation in copper pot stills.

Olmeca Reposado is a fruity, sweet and citric tequila that has smoky and slightly woody aromas. It is sweet and slight honey flavoured with a smoky hint of black pepper. Olmeca Reposado is aged for 8 months in 200 litre white American oak ex-Bourbon casks.
