Last October, New Bamboo was reborn as the Red Lotus with a menu that includes Malaysian, Indian and Chinese cuisine. Portola Valley customers seemed to like the New Bamboo’s Chinese food, so why not stay with it? “It wasn’t enough,” says Mr. Klein. “There’s a lot more sophistica- tion in the community now. We needed something special.” Mr. Klein, a Portola Valley resident, is a food pro. He founded the Pollo Rey fast food chain and was a found- ing partner in Tartine bakery in San Francisco. His present roster of restaurants includes Cafe Cacao, located in the Scharffen Berger chocolate factory in Berkeley and Pizzaiolo in Oakland. The Red Lotus is still a work in prog- ress, says Mr. Klein, who has hired Mari- gene Mabalot as his general manager. Ms. Mabalot acts as hostess and helps with serving in the small store front restaurant. We noticed her presence immediately in a recent visit to Red Lotus. She was gracious and helpful in recommending dishes — a big improvement over service on an earlier visit. If you’re not familiar with pan-Asian cuisine, ask for recommendations. We found our server’s suggestions on two occasions excellent, with one exception: mango shrimp spring rolls. At dinner last week, we started with spring rolls (4 rolls for $6), which were filled with shrimp, mango, banana and cucumber. They were way too sweet, especially when dipped in the accompanying gin- ger aioli. Balanced with hot chilies, the sweet- ness might have worked. Instead, it was like eating dessert before the meal. We enjoyed the complimentary start- er plate of roti (unleavened griddle- baked Indian bread) served with a curry dipping sauce. My dinner partner said her family, on an earlier visit, liked the chicken satay with peanut sauce ($6 for 5 sticks) and the “potstickers 2-ways,” fried and steamed ($6). Entrees were better, especially our serv- er’s suggestion of sea bass served in a clay pot with Asian greens and asparagus in a miso broth ($17). I ordered wok-shaken beef tenderloin ($24), thinking it would be prepared like the signature shaken beef at San Francisco’s Slanted Door. Not so. The beef was cut into medal- lions, very tender and rare, served on a mound of Szechuan fries and water- cress that ran together, making the fries soggy. These were “sharing plates” with generous portions of red meat and seafood. Steamed rice, brown rice or coconut rice is extra. For dessert our hostess insisted we try the mango pie. It was a good choice. The mango custard filling was topped with slivers of fresh mango. The des- sert menu is being revamped, but will continue to include mango pie, J. We needed something special.” Mr. Klein, a Portola Valley resident, is a food pro. He founded the Pollo Rey fast food chain and was a found-ing partner in Tartine bakery in San Francisco. Bravo Fono restaurant, a landmark at Stanford Shopping Center, has

closed after 27 years in busi-ness. Owners Laszlo and Pau-lette Fono said they are closing the restaurant because their lease had expired. The Hungarian-born Fonos came to Stanford Shopping Center after many success-ful years in the restaurant business. They founded the Magic Pan creperie chain in

1965 and turned America on to crepes. The first Magic Pan was located at Ghirardelli Square in San Francisco, and then expanded nationwide. The Fonos sold the Magic Pan restaurants to Quaker Oats in the mid-1980s. When they opened Bravo Fono in 1980 there were very few places in Palo Alto to have an espresso or a Europe-an-style meal, says Ms. Fono. “We opened Bravo Fono out of our vision to share the food we grew up with and experi-

enced in our travels.” At one time the Fonos had their own mini-restau-rant empire at the Stanford Shopping Center. In addition to Bravo Fono, they owned Babbo’s, Cafe Andrea and Madame Paulette’s. Babbo’s is still going strong, across from Sigona’s Market. It is a popular spot for lunch and dinner, both indoors and at outdoor umbrella tables. Ms. Fono says Babbo’s will con-tinue to serve some of the Bravo Fono favorite dishes. A

rind shrimp curry ($13), a lus-cious combination of shrimp, long beans, eggplant, tomato and okra. It paired well with char kuey teow ($8), a dish of noodles shrimp, fish cake, sprouts, eggs and scallions. The menu has a lot of items I’m eager to try, such as wok roasted rack of lamb ($26) and many curries: Indian lamb bri-yani ($13), Malaysian chicken curry ($9), and Indonesian beef rendang ($11) among them. If you go for lunch, I recom-mend choosing from the a la carte menu. We found it much better than the $8 lunch spe-cials. Our lemongrass chicken, kung pao shrimp and Mongo-

lian beef on the specials were all too sweet and seemed to be made with the same sauce. The specials also include salad and choice of potsticker or vegeta-ble spring roll — a lot of food for the money. Ms. Mabalot says they feature the specials because they are popular with the lunch crowd that used to frequent the New Bamboo. A better choice would be soup or salad, such as Royal Thai salad or wor wonton soup served with a choice of potsticker or spring roll for $7. Service has improved from my first visit to Red Lotus, but dishes need to be cleared more promptly. Dessert was brought to our table before entree dishes had been removed. I’d like to see Red Lotus add

more Singaporean favorites, such as Hainan chicken rice: chicken boiled, chopped into pieces, and served over steaming rice with its broth, accompanied by a dish of fresh gingery chile sauce. This is Malaysian com-fort food. The other Singapore must-have, chile crab and rice, would be a nice addition, too. Southeast Asian cuisine is a welcome addition to the local dining scene. With a few chang-es, the Red Lotus could become our hometown version of Straits or the Slanted Door. A

Pairing food and wine is like two people on a date — some pairs will be

dynamite and others a disaster. Food and wine, like people, need good chemistry. The partners’ personalities should complement one another.

Matchmaker, makeme a match Zinfandel is the bold but dumb jock, looking for a quick night on the town with hot barbecue ribs. They make a delicious but quickly forgotten affair. Attempting to match a mighty zinfandel with a delicate salad of spring greens with tarragon vinaigrette is a recipe for failure. Cabernet sauvignon is the corporate executive type seek-ing a mate who shares similar intensity, aff luence, and com-mand for respect, making it an ideal candidate for beef tenderloin au poivre or grilled veal. Jesse Cool, owner of the Flea Street Cafe in Menlo Park, suggests pairing an Ahlgren cabernet sauvignon “Bates Ranch” with Coleman pasture-raised lamb. Chianti (sangiovese) is a needy wine — often better with a mate than without. Exhibiting more body than pinot noir, it needs a partner who can handle its full figure. Pasta with red sauce or porto-bello mushrooms are classic pairings. Intellectual but high-main-tenance pinot noir matches poached salmon with dill. Her twin sister, red Burgundy, is the gold-digger seeking out roasted pheasant or duck con-fit. Richer versions may require a complex and demanding dish, such as lamb Wellington. Syrah is not afraid to speak her mind — powerful and full-bodied, this outdoorsy type is often peppery, with blackberry fruit and gamey character. She’ll meet her equal in mesquite-smoked ribs. Chardonnay is Miss Con-geniality. She needs an easy-going partner, otherwise she’ll be overwhelmed. Hook her up with pan-roasted quail with apple reduction. A close run-ner-up in the Miss Congenial-ity category is rosé — with her easy-going personality, she gets along with almost every-one. “Silver Mountain rosé is one of my favorites,” says Ms. Cool, a big fan of dry rosés.

Bold, brash, and exotic viognier has a thing for spicy Asian companions. (The most remarkable versions of this wine come from the French city of Condrieu.) John Sand-ers, the wine director of Marche in Menlo Park, sug-gests seared Nantucket scal-lops in carrot sauce and white truff le oil paired with Con-drieu, from Philippe Faury. “The minerality of Condrieu is a perfect match for the scal-lops,” he says.

Some resist courtship Unfortunately, some Califor-nia wines exhibit classic “Type A” desire for control that can spell doom for a relationship. They come on strong with high alcohol and excessive oak, overpowering potential partners. These wines can be difficult to pair since they are often made to be consumed alone. I suggest they be appreciated as self-reliant and solitary individuals, unencumbered by suitors. For a few contentious char-acters, pairing is no picnic. Mr. Sanders admits, “I find vegeta-bles often difficult. For roasted artichokes I would suggest a Gruner Veltliner. It is also her-baceous in and of itself.” Although asparagus can frustrate experienced match-makers, Ms. Cool doesn’t balk. She recommends a Sauvignon Blanc with chilled Asparagus Mimosa.

Wine personals It’s only a matter of time before the back labels of bottles contain personal ads: “Nubile Napa Valley merlot seeks down-to-earth play-mate for picnic rendezvous. Must be hearty, enjoy fine dining, and be tolerant of my fruit-forward personality and medium body. A well-sea-soned and beefy physique is a plus. Insipid candidates need not apply.”

Art exhibit explores ‘guilty pleasures’

“Creampuff,” a 42-by-42-inch oil painting by San Francisco artist Nanda Palmieri, will be on view at the Spur Projects art gallery in Portola Valley through March 17 as part of the “Guilty Pleasures” art exhibit.

‘Women’s Work’theme of show Women artists who work or live in San Mateo County are invited to submit artwork to the third annual juried women art-ists’ exhibit, “Women’s Work,” which opens March 2 in the Caldwell Gallery, 400 County Center in Redwood City. The exhibit is sponsored by the San Mateo County Arts Commission, Peninsula Arts Council, and the San Mateo County Commission on the Status of Women. Its theme focuses on women’s place in the work world and the meaning it brings to living. Artwork will be accepted for consideration between 8:30 and 11:30 a.m. Thursday, March 1, at the Caldwell Gallery. Art-work must be a minimum of 20 by 30 inches, framed and wired, and ready for installation. Each artist may submit up to three wall-hung pieces of art in any medium. There is a non-refundable $10 fee for each entry. “Women’s Work” will be on display from March 2 through March 30. Awards of $100 each will be given to the top three final-

“Guilty Pleasures,” a painting and video exhibit described as a “cocktail of imagery about food, sex and power,” will be on dis-play at Spur Projects art gallery in Portola Valley from Thurs-day, Feb. 15, through March 17.
