DESCRIPTION

The amazing story of wine prides itself by the vine itself. The nature of a vintage is a silhouette of flowering and ripening time; unpredictable and never affected by precisely the same ratios of the sun and the storm. On its natural way to the wine cellar, the family’s care and work are a major contribution to the vine in giving the best that was intended for the grapes. Then the wines rest in their cellar. In a while they will become the quality vintage which is known around the world.

Beli pinot (Pinot Blanc)

Essential line White, dry In Sales: 2005, 2006

This wine manifests the primary aromas and the elegance of the Pinot Blanc, interpreted by maturation in used wooden barrels. The wood ageing contributes to the complexity although, of course, the wine remains Pinot Blanc.

We perceive stone fruit, yellow fruit (quince); the mouth feel is more discrete, with an abundance of freshness.

Ageing: 18 months, 11 of which in used wooden barrels.

Food: Pinot Blanc is a true food-friendly wine. It gets along well with almost all dishes. Having said that, it is difficult to find better wine for sea bass in salt. It also goes very well with sea bass carpaccio.

Triton

Essential line White, dry In Sales: 2005, 2006

The idea of Triton is to make a pleasurable wine with a somewhat more diverse aroma profile. An attractive wine, yet more firm, by no means light. The blend of varieties is always different. It is based on Chardonnay and Sauvignon Blanc (70%). The rest consists of either Pinot Gris or Pinot Blanc, depending on the vintage. Chardonnay provides the structure, Sauvignon Blanc its freshness, fragrance and grassy notes, Pinot Gris adds spice and elegance, while Pinot Blanc soothes it.

A diverse, multilayered aroma offers an experience of oriental cuisine, with grass and asparagus notes. It feels rather firm, oily and full in the mouth.

Ageing: 18 months, 11 of which in used and new wooden barrels.

Food: Pasta with Mediterranean, spicy or oriental sauce, also white meat.

Duet

Essential line Red, dry In Sales: 2005, 2006

Our standards of red wine start here. Duet is a wine, which offers something to drink and the pleasure at the same time. Although it is not too demanding, it is serious enough. It holds fruitiness as well as spiciness.

It is reminiscent of blackberries, red cherries and a little of pepper. A wine of medium body and a more complex character of robust reds from the Goriška Brda region holding a soft texture and nice length, it has an ageing potential of up to five years.

Ageing: 24 to 30 months; matured in oak barrels of which a third are new.

Food: Suitable for all occasions, it can be offered with appetizers and with most main courses.

Rebula (Ribolla Gialla) Premium line White, dry In Sales: 2002, 2006, 2007

Ribolla Gialla is well-known as high-yielding. Most frequently, it is a basis for simpler, everyday wines. Selective work in 25 to 35-year-old vineyards and a selection of grapes at harvest enable us to show its nobler face. We pay more attention to mineral notes and saltiness offered by the soil of the Goriška Brda region, rather than its aroma profile. Ribolla is the pride of the Goriška Brda.

The nose is matured and youthful at the same time. It offers discrete roasted notes and an aroma of yellow fruit. It has a firm, full mouth feel with a longer aftertaste. It wins us over with distinct acidity, saltiness, and a mineral note, which cleans the mouth. After three or four years and with the development of tertiary aromas, it becomes even more complete and excellent than it was in its youth

Ageing: Somewhat less new wood (15 to 20%) as with other wines from the Premium Line.

Food: Fish and appetizers which do not carry too intensive aromas. It cleans the mouth very well when a dish is not overly aromatic. It is easy to drink; natural friends with the Goriška Brda salami sausage.

Sivi pinot (Pinot Gris) Premium line White, dry In Sales: 2002, 2004, 2006, 2007

As a variety, it can be a trifle reserved, almost indifferent, unless we bring it to its extreme. We pick it when it is fully ripe, but not overripe. It preserves the freshness that is not always present in Pinot Gris from the Goriška Brda region. When young, it feels somewhat unformed, always full-bodied and firmer. A rare style in our parts: you either grow fond of it or not. It is more reminiscent of the Alsatian style than of anything else.

It offers hazelnut, also flowery notes as well as some of the typical spicy notes of Pinot Gris.

Ageing:

Food: More substantive dishes with sauces, such as gnocchi or seafood risotto, also chicken.

Chardonnay Premium line White, dry In Sales: 2002, 2004, 2007

A variety which shows what a region is capable of – a litmus test, a reference point. In our vineyards, it nicely reveals the influence of the Mediterranean and the Alps and offers some exotics, enough body as well as classic continental freshness.

It offers the nose some buttery, mineral notes and finely integrated spices from maturation in wood. The mouth feel is full, firm, massive and at the same time balanced with a firm structure. It has an ageing potential of up to ten years. Some vintages from the end of 1990s are at their best at the moment.

Ageing:

Food: Frog-fish, more intensive fish taste. Also grill dishes, for example octopus.

Sauvignon Premium line White, dry In Sales: 2004, 2006, 2007

A deviation from classic style of fresh Sauvignons, primary aromas are of secondary importance. In our house, we see it as concrete, complex wine; the character of Sauvignon Blanc is less expressed although it is clear and recognizable. It shows its best after a few years, when it gains complexity. Sauvignon Blanc that grows in the Goriška Brda soil is often concentrated, which allows freedom in shaping its structure and body.

Rather than grassy notes, we perceive apricots and white peaches, also some smoky notes, which are a result of oak ageing. On the palate, it offers even more character than on the nose.

Ageing:

Food: Pasta with truffle, herbal omelette. Also, fish that is larger, tastier, possibly wild and by no means portioned.

Malvazija (Malvasia)

Premium line White, dry In Sales: 2007, 2008

Malvasia is the daughter of the Mediterranean. The fact that this variety also ripens in these parts indicates that the Mediterranean influence extends deep into the continent, well into Goriška Brda region. The style of Malvasia wine from the Goriška Brda region is surprisingly more structured, firm and robust compared to wines from the littoral region, which are more elegant and spicy. The mineral content of this wine is typical of the area.

The deeper golden-yellow colour indicates the high level of ripeness of the grapes. The wine’s bouquet is intense, surprisingly fruity and even overripe. The aroma of dry and fresh peaches and apricots blends with balsamic notes of Mediterranean maquis. It feels dry and robust in the mouth with distinct character of dry apricots. Its longer salty aftertaste and mineral content cleans the palate well. Malvasia definitely shows its varietal character. However, it is more the style of the Edi Simčič winery that is emphasized than are its varietal characteristics.

Ageing:

Food: Goes well with more intense appetizers, which are prepared with Mediterranean spices, e.g. rosemary, bay leaves or with a main course that has a more firm structure such as a frog-fish dish.

Triton lex Premium line White, dry In Sales: 2006, 2007

A harmonic balance of international and local varieties – Chardonnay, Sauvignon Blanc, Ribolla Gialla – a third of each. Precise and careful selection is the key to more complex, deep, clean wine. Firmly structured and incredibly easy to drink for its size. Chardonnay and Sauvignon Blanc make it powerful and concentrated, whereas Ribolla Gialla soothes them, making the wine more approachable, mineral, with a local character. At the same time, it expands the wine and enhances its complexity. The potential of ageing is up to ten years.

The bouquet is sumptuous, multilayered, with soft ripe yellow fruit, oak notes and a touch of herbs. On the palate it is full, firm, rich, and somewhat tannic due to extended maceration. Mineral.

Ageing:

Food: For all occasions, also with meat dishes, for example veal or lamb, if we wish to carry out the whole meal with only white wines.

Kozana Premium line White, dry In Sales: 2006, 2007

100% Chardonnay from a single site in the village Kozana. We managed to bring out what had been known for a while – this 25-year-old vineyard is so special, so different, that it deserves its own wine. The upper layer of soil is shallow, underneath there is a rocky bed which gives minerality to the wine. The elevated position preserves freshness. A wine with depth, breadth and length. A true expression of the vineyard and its position as it is produced in the same manner as our Chardonnay “riserva”. Its ageing potential is at least 10 years, perhaps more.

The nose is subtle, typical of a young Chardonnay, with some spices coming from ageing in new oak. Full-bodied, buttery texture and lively acidity which penetrates through and balances it. A never-ending stimulation of senses.

Ageing:

Food: Tuna fillet, already resembling meat, but still fish, with a soft pepper side dish. It cleans the mouth very well.

Duet lex Premium line Red, dry In Sales: 2002, 2003, 2004, 2005

Merlot (80%), Cabernet Sauvignon (10%), Cabernet Franc (10%); from selected vineyards that are 15 to 35 years old. Careful selection, 14 days of maceration, and 36 to 42 months of maturing in 100% new oak barrels yields an open, clean wine, reminiscent of Bordeaux wines, which will not and can not be hidden. The ageing potential is 15 years.

It has intensive ruby red colour with complex nose of black currant, fine tobacco, liquorice and intense spicy note. Tannins are firm; some vintages take some time to soften up. Always complex and elegant.

Ageing:

Food: Game, deer, beefsteak Florentine style, rare or medium steaks.

Kolos Premium line Red, dry In Sales: 2003, 2004 - magnum

Ten years ago, this was just a dream. At that time, our goal was Duet Lex, which now is always obtainable. However, vineyards can offer even more. Produced and matured in the same manner as Lex, and with the same blend of varieties. What makes it different? A selection of the best barrels. The result is a great tannin structure that is sweet and shows extra quality. If Lex is elegant, Kolos is colossal, muscular, powerful. With more tobacco, powerful aromas and less fruity notes. Production: only in the best vintages.

Deep ruby red colour. The nose is intense, with dark red and black fruit with roasted and spicy notes. Blackcurrant, tobacco, blackberry, smoke and even resin are sensed most frequently. It is muscular, tannic, not in the least shy, with intensive character that fills the mouth and leaves a long aftertaste. It is a very individual wine, a right choice for those who love intense and opulent wines. Suitable for long maturation.

Ageing: It goes on the market a few months after Lex.

Food: It needs not be accompanied. If we desire it, we try the same dishes as with Duet Lex, only with more intensive flavours. Kolos can handle them. Roe deer and mouflon are more aromatic than red deer.

Edijev izbor (Edi’s selection) Premium line White, sweet In Sales: 2004

Ribolla Gialla (70%), the rest are Chardonnay and Sauvignon Blanc. A selective harvest of healthy grapes, picked when fully ripe. Dried on the loft until March or April. Only healthy grapes are chosen, with no botrytis bunch rot. Maceration lasts for two to three days. Fermentation is stopped between 12% and 14%. Production: eight times a decade. Potential of ageing is at least 15 years.

Its colour is more intensive, amber-like. The bouquet reminds us of caramels, almonds, coffee, tobacco, dried figs, shortly it is joined by parmesan; also added is a thin layer of wooden notes. Very sweet, dense, concentrated with a long aftertaste of coffee.

Ageing: It matures three years in new barrique barrels.

Food: Sweets, such as potica (nut roll with different fillings), gibanica (kernel cake), apple pie. Also, aged cheese without distinctive moulds.

Bosa rosa Premium line Red, sweet In Sales: 2007

The varieties used are the same as in Duet. The grape harvest is carried out similarly as with Edi’s selection, only with a month or two shorter drying period. There are two to three weeks of maceration. Bosa rosa preserves its ruby colour and many primary aromas. Its alcohol level is 12–14% abv. A rather unusual wine style. Production: three to four times a decade.

It has deeper garnet colour. The nose reminds us of black currant, caramel, oak ageing. What makes it balanced and easy to drink is an abundance of sugar, tannins and acids.

Ageing: Three years in new barrique barrels.

Food: Chocolate sweets, soufflés. It also goes very well with cherry pie, in combination with fruit that is not sour or bitter.
