record, but what can I say? Nomatter how much I try to resist, ifit has sugar and constitutes as adessert, this girl is all over it!Don't believe me? Well, here’sproof: Let’s go back toWednesday night when I downedthree humungous pieces of redvelvet ice cream pie — just me,myself and I! I can't eat just one.They were delicious!

And since I was already on asugar high this week, I decidedwhy not continue and go all outwith a Filipino favorite: halo-halo!Say hello to this fun-filled dessert,which features a mixture of shaveice, evaporated milk, and variousboiled sweet beans and fruit.

In Tagalog, the term halo-halois translated to “mix-mix,” and thesecret (no surprise) is in the mix-ing technique. The presentation ofthis dish is always eclectic, vibrantand massive, to say the least, butto experience halo-halo in itspurist form, you need to take thetime to stir all the colorful contentstogether with your spoon. It’s only

then that all the flavors and tex-tures come together perfectly.

The ice cream is only the surfaceof the dessert, and as it melts andblends with the tropical fruits andbeans underneath, you are leftwith the good stuff ready to beslurped up and enjoyed. Finally, sipevery last drop of ice cream andmilk, and you’ll be in halo-haloheaven!

Toru Makino is a legendin the dining scene,both here at home and

across the globe. He openedTodai Restaurant, an upscaleinternational sushi andseafood buffet establishment,in December 1999 in Waikikiand later ended up selling theeatery. Most recently, Makinoreclaimed ownership of Todai,along with his business part-ner Han Kim, and togetherthey are eager to, once again,treat diners to an impeccabledining experience — one thatis all-you-can-eat, by the way.

Dining Out recently paid avisit to this 450-seat restaurantand sat down with Makino andTodai’s executive chef RichardLee among platters of primerib, endless morsels of sweetand succulent shrimp, and somuch more. It wasn’t long be-fore we delved right into theendless and delicious possibil-

ities that are sure to entice allpalates.

DO: Mr. Makino, now thatyou’ve returned to Todai,you're offering some unbeat-able deals. Correct?

Makino: Yes! I’m excited tobe back! Todai was very popu-lar when it first opened backin 1999, and we hope to drawin crowds of locals and touristslike we did in the past. Our all-you-can-eat buffet appeals toeveryone and we’ve rolled backthe prices to what they werewhen we first opened therestaurant more than a decadeago. For a limited time, the costfor kamaaina during lunch is$10.98 (Monday-Friday) and$13.98 (Saturday and Sunday),and dinner is priced at $23.98.We also have a special deal forkeiki ages 10 and under, whichis half off $23.98. During

lunchtime, seniors also onlypay $8.98 when they bring intheir Dining Out coupon. Andif you dine on your birthdaywith a party of four or more,you receive a complimentarybirthday meal (must presentID).

DO: The buffet spread is im-maculate. With more than 100items on the buffet line, whatare some must-haves?

Makino: Everything here isvery good, but we’re wellknown for our prime rib, Kauaishrimp and sweet shrimp.

Lee: I’ve worked with Mr.Makino for several years now,and I consider him to be a mas-ter chef. It’s an honor to beworking with him as executivechef here at Todai. I have toagree with him, our prime rib isincredible. I go through aboutfour to six prime ribs per day.

The prime rib is slow-roasted, seasoned with a spe-cial blend, extra-virgin olive oil,garlic, salt and pepper. The realtrick, however, is in the roastingprocess. We blast the meat ata high temperature to developthat nice crust that prime ribshould always have, and thenwe bring the temperaturedown and let it sit for up tothree to four hours, that way itdevelops the texture and tastethat makes our prime rib so de-licious. It’s also important forus to support local, so that’swhy we serve Kauai shrimp. It’ssome of the best shrimp you’llever have.

Other top buffet items are,of course, snow crab — every-one comes here for that — aswell as fresh, steamed clams. Ican’t keep enough clams onthe buffet line. It seems likeevery 15 minutes I’m puttingout another couple hundredclams. Then, we have tempurafrom our tempura bar, whichcustomers absolutely love. Weaverage about 2,000 pieces aday and it’s Mr. Makino’s spe-cialty. It’s made out of lovestraight from his heart. And ifyou’re a fan of sushi, we havemore than 30 kinds of sushi tochoose from.

DO: That's enough to makemouths water. And there’smore?

Makino: Yes. No one willleave here hungry. Todai alsooffers its patrons endlessamounts of barbecue chicken,teppanyaki, beef sukiyaki, crab

cakes, orange chicken,spicy barbecue pork,poke, pizza and more. Inaddition, we also have asalad bar and an udonnoodle station. We alsohave many draft beers topair with your meal.

DO: What about dessert?No meal is complete without asweet treat.

Makino: We have a dessertbar that offers 10 decadent se-lections to choose from — themost popular being cheese-cake. There also are crepes,tiramisu and a chocolate foun-tain, which the children reallyenjoy.

DO: Delicious! On top ofthat, there’s also nightly enter-tainment. Please explain.

Makino: Every night from 6to 8 p.m., Makino Ring of Firewill perform for our patrons.Makino Ring of Fire is a Poly-nesian dance troop, and theywill most certainly add to thedining experience at Todai. Lo-cals and tourists will love them!

DO: Chef Richard, you’veworked with Mr. Makino for anumber of years. What haveyou learned from him and whatis something unique that youbring to Todai?

Lee: I’ve learned a lot fromMr. Makino, such as flavor en-hancing tricks, skills to perfectmy Japanese sushi making, aswell as different Japanese culi-nary techniques. I also willbring more homemade-style

dishes to the restaurant. I’m in-troducing a Tofu Caprese,which is a unique twist on thetraditional caprese, and I’vealso created a Furikake CaesarSalad and a few homemadedressings. I like rustic and vi-brant cuisine. I want everyoneto like our food and appreciatethe passion that we have forTodai. We’re going to makethings pop. No where else canyou get such tasty food atsuch a great value.

DO: It sure seems like greatthings are in store for therestaurant. What are yourthoughts on this new era forTodai?

Makino: I’m very happy! It’snice to be back here! We’re al-ready gearing up for Mother’sDay (May 12). The restaurantwill be open all day from 10a.m. to 10 p.m. and the buffetwill be priced at $24.98 perperson for lunch and dinner.Parking also will be free for thefirst hour-and-a-half at theparking structure behind therestaurant.

Lee: Now that Mr. Makino isback, there are going to be alot of nice improvements goingon. Todai is his baby, and we’regoing to run wild with somenice, new flavors and really up-date things around here.

When it comes tofood, it’s alwayseasy to get too

comfortable with ordering thesame dishes from the samerestaurants. Luckily, LungFung Chinese Restaurant cur-rently has three specials thatwill re-awaken your taste buds.

“I’m always thinking of waysto make things new … to makesure customers aren’t feelingbored,” says manager Eddie Ma.

The restaurant has beenopen for more than 10 years(which Ma credits to the loyaltyof its customers’ support) andcontinues to serve 90 percentauthentic Cantonese food. Theother 10 percent, Ma says, is afusion with local food andother familiar flavors.

General Tso’s Chicken($9.95) has been a special therestaurant has offered forabout six months, after populardemand by many customers.Cut chicken is deep-fried withflour and glazed with a sweet-and-sour sauce with spicy chilito give it an extra kick.

They’re cooking up astorm at MonsoonIndia in Waikiki,

where flavor is an under-statement when it comesto the mouthwateringarray of authentic appetiz-ers, breads, soups, curries,biryanis and kababs, whichare as exotic on the palateas their names imply.

And when it comes tosatisfying those of us who

choose not to eat meator fish, Indian food shines.

Monsoon India's extensivemenu has a whole sectiondevoted to “VegetarianDishes,” and there are meat-less delicacies scatteredacross the rest of the menu,so there’s plenty to choosefrom here, and co-owner Im-ran Khan recommends acouple of his favorites toDining Out readers.

“Our roasted eggplant isvery popular,” says Khan, re-ferring to Baingan Bartha($15.95). “It’s fire-roasted,we cook it in a clay oven,then we cook it with onionsand tomatoes.” The result isso rich in flavor that you’llbe tempted to lick the plateclean. It’s richly spiced butnot too hot, so if you like itfiery, just tell your server.

“One of the most healthydishes on our vegetarian

menu is Sookhi Sabzi($14.95),” saysKhan, who notesthat sookhi trans-

lates to “dry,” butthat only means there’s no

sauce or gravy. The curryflavor is there in all its gloryto enhance the seasonalvegetable mix that includescarrots, cauliflower, greenpeas and potatoes — and,adds Khan, “the vegetablesare very fresh, no frozenvegetables.” Both dishesare served with rice.

Japanese Restaurant Aki is a relatively new dining oasis that isboth relaxed and contemporary. Located on the mauka side ofthe block between Ala Moana Center and Walmart on Makaloa

Street, the establishment opened its doors to the public in Februaryand specializes in modern Japanese fare.

Manager Aki Hirose says the restaurant is bustling during dinnertime,with a number of diners ordering the famous Tan Tan Nabe. This hotpot dish loaded with a variety of meat and vegetables cooks on atabletop burner, and is popular among both locals and tourists.

“Many restaurants serve nabe,but I think we’re the only placethat offers Tan Tan Nabe,” says

Hirose. “Nabe is very popularnow, and because of that we

were inspired to offer this dish.”

It’s all in the broth. According to Hirose, thetan tan broth is thick in consistency, as it

brings the majority of flavor to the dish. It’scomprised of sesame oil and a blend of secret

spices, which results in a taste that perfectlyportrays sweet and spicy.

At the end of the meal,patrons are presented

with a choice of rice($3) or ramen ($4) to

enjoy with the leftovernabe broth.

The nabe’s main source ofprotein is derived from

tender strips of pork bellyand ground pork, which

Hirose says are locallysourced.

Exquisite sake pairings add newdimensions to Tan Tan Nabe. “For theladies, I recommend Yama YuzuShibori Premium Sake. It has a sweetflavor. Guys typically enjoy a drysake, such as Hakkaisan TokubetsuJunmai,” Hirose says.

In the heart of Stadium Mallin Salt Lake sits YakinikuCamellia Buffet, a do-it-

yourself carnivore lover’sexperience. The location hasproved perfect for those liv-ing on the Leeward side, aswell as town dwellers.

Normally one would thinkthat meat dominates themenu, but, according to man-ager Kris Kim, patrons stayfor the sweets at the end.

After a hearty meal at Ko-rean restaurants, they servesikhye, a Korean rice dessertdrink.

“This is one of the tradi-tional Korean desserts for af-ter the meal,” Kim says. “It’ssweet, but there’s a cinnamonflavor, and customers love it.”

The sikhye is used to com-plement the self-serve icecream and contains bits ofrice kernels that add textureto the liquid. While the cin-namon adds great flavor tothe sikhye, it also aides in thedigestion process. Perfect af-ter a heavy meal.

“People make ice creamfloats, and they use this tomake the float Korean style,”

Kim explains. Another dessert addition

that pairs well with the icecream is the azuki bean andmochi treat. The azuki beansadd a hint of sweetness withthe added texture of themochi balls. And it’s beensaid that azuki beans alsoaide in digestion and hearthealth.

And atop ice cream, thecreamy texture of the beanspairs well with the dairydessert.

The azuki bean mix-ture and sikhye arepopular during lunch,and dinner comes withthe addition of freshfruit and Jell-O.

“The fresh fruit al-ways changes,” Kimsays. “But we alwaysserve pineapple. Peo-ple love to cook it afterthey finish yakiniku. Itpairs well with sake.”

And everyoneknows that pineapplepairs well with icecream, as well.

All sweet meal end-ings are included in the

buffet price ($14.95 lunch;$24.95 dinner).

The menu at Asahi Grill covers alot of ground. From localfavorites including loco moco,

to American breakfast classics such asBanana Hotcakes and Japanese don-buri, Asahi Grill truly has somethingfor everyone.

“All of our chefs are very good,” says

manager Victoria Sayno, adding thatthe chefs have added their own influ-ences and flair to the original menuover time.

On its menu, Asahi Grill claims to bethe “original home of the famous oxtailsoup.” With a claim like that, how couldyou pass it up? For a taste of this fa-

strong base of regular customers.“I love the restaurant business because of the people I meet,”

says Asahi manager Victoria Sayno, who has been working in theindustry for more than 20 years. “And (here) especially, we knowa lot of our regular customers.”

It seems, then, that Sayno has found the perfect work environ-ment at Asahi Grill, as the restaurant attracts a number of cus-tomers from all over the world.

Those regular customers include tourists from the Mainland, aswell as from countries such as China, Japan, Taiwan and Canada.Sayno says that many international customers who frequently stayin the Islands always make sure to include time for Asahi Grill ontheir travel itinerary.

“The word is spreading,” Sayno says. “It’s pretty amazing.”The restaurant, of course, is a favorite among locals, too. Sayno

says that a lot of downtown workers stop by for a quick breakfastor lunch. And many locals tell their visiting friends and family thatAsahi Grill is the place to go for quality local eats.

Sayno enjoys introducing new flavors to her customers from afar.Many customers from Canada, for example, have tried Oxtail Soup— and loved it.

“They eat it, and they go,‘Where have I been? I havenever tasted this foodbefore,’” Sayno says.

“I hope everyone willcome and try our food.”

mous flavor, try the original Famous OxtailSoup ($13.95), or Oxtail Ramen ($9.95). OxtailRamen features cilantro, green onion, twopieces of oxtail, and fishcake — all in Asahi’ssignature broth.

“Our oxtail recipe is originally from China,”Sayno says. “It is really special. The broth isfilled with peanuts, celery and Chinese herbs.And we boil the soup for a long time.”

For more signature Asahi creations, try theeatery’s Bulgogi Don ($9.75). While this teriyakibeef dish might be standard fare for Koreanrestaurants, the creative chefs at Asahi haveadded their own signature flair to the sauce.

“It is a secret sauce that the chef created,”she says. Sayno was adamant about keepingthe recipe a secret — so you’re just going tohave to try the dish to experience the creation.

Asahi seems to be an expert at taking a clas-sic dish and adding its own taste — and an-other example of that is Steamed Fish Fillet(Basa) ($9.95), which is flavored with gingerand a savory sauce.

Open for breakfast, lunch and dinner, AsahiGrill has a good way for diners to start theirday: The Asahi Breakfast ($9.95), which comeswith your choice of mahi mahi, salmon, saba,opakapaka or steak, with tossed salad, rice,miso soup, and one egg.

With all of these options, it likely will be dif-ficult to choose just one dish. Thanks to theCombination Lunch ($15.95), you can have twoitems from a list that includes Spicy Chicken,Garlic Chicken, Teriyaki Chicken, Kalbi, ShrimpTempura, Grilled Salmon, Grilled Saba, or But-terfish. These items range from about $9 to$14 individually, so you’re getting a good deal.

“We just want to make our customershappy,” Sayno says.

Kenny’s, at the promptingof its health-conscious cus-tomers, now offers more

so locals can enjoy the en-tire fish, skin and eyes in-cluded. “It’s really good pre-pared nitsuke style, steamedin regular or sugar-freeshoyu sauce. A lot of times,the only thing left is thebones,” says Hutchinson.Reef fish, a specialty and alongtime favorite at Kenny’s,change daily based on thefresh catch.

Other more healthy op-tions include Kenny's Fa-mous Chinese ChickenSalad ($11.45), a signaturedish for its tangy sesameseed dressing that can beenjoyed sugar-free; Ka-maaina Chopped Steak($17.49), thinly cut, wok-seared New York steak withvegetables and optionallysugar-free teriyaki sauce;and the Boca Burger "Orig-inal Vegan Veggie Burger"($9.25), which features agrilled Boca brand veganburger patty and the usualburger fixings, although ve-gans may consider order-ing it without the bun.

It’s not easy being thechef, cook or server atWolfgang’s Steakhouse.

The long history of out-standing food and fine serv-ice has created a level ofexpectation that demandsnothing but a first rate din-ing experience. This is truewhether ordering from themain, bar or appetizer menu.If it says “Wolfgang’s” it hasto be delicious, and it is.

The Happy Hour menu atthe famed steakhouse wouldbe a bargain regardless ofquality, that the dishes areserved with owner WolfgangZwiener’s and executive chefJames Donahue's high stan-dards make it an even moreremarkable deal.

A great steakhouse has tohave a great burger andHamburger Sliders ($7) aremade from finely chopped100 percent Prime Black An-gus beef. The two 3.5 ouncepatties are seared crispy intheir 1600 degree infraredovens, are wonderfully juicyand so concentrated with fla-vor you’d think Wolfgang’sstaff simply put a bun on oneof their aged New Yorksteaks. Each burger is servedon a sweet roll and topped

with pickles and a Russiandressing made of relish,onion, tarragon, ketchup,mayo and red peppers. It’s aperfect combination. Thecool and slightly acidicdressing is a nice comple-ment to the hearty beef fla-vor, which is tied togetherwith the sweetness of thebun. Served with blanched,fried and lightly salted shoe-string potatoes, the dish issimply outstanding.

Perhaps even better, de-pending on your preference,is Ahi Tartar ($7). Sashimigrade ahi is tenderly dicedand tossed with Maui sweetonions, chives and a gingerwine vinaigrette dressing. Thecombination is served on abeef steak tomato with dicedcucumber and topped withfresh avocado. Hungry yet?The best way to encounterthis fantastic dish is to pile theahi, crisp cucumber and juicytomatoes on the toasted cros-tini and enjoy. Each bite is in-credible. The slightly spicyginger vinaigrette is a perfect

complement to the butteryahi. Not only flavorful, but thedish is a definite palatecleanser for the next recom-mendation: the Taste of NewYork combo.

At $34.95 the dish is out-side the price point of theother happy hour offerings,but is no less of a bargain.Big enough for two, the siz-zling 12-ounce New Yorksteak comes with mashedpotatoes, creamed spinachand a slice of the world fa-mous Junior’s Cheesecake.Great flavor at a great price.Wolfgang’s dry-aging tech-nique improves marbling bybreaking down the interiorfats while concentrating theflavors and producing a won-derfully tender cut of meat.The potatoes, made withhalf-and-half, are creamywithout being heavy, whilethe spinach provides a nicevegetable pairing to thestarch. And the cheesecake?Forget about it. There is areason tourists and displacedNew Yorkers stock up on thisamazing dessert beforeheading elsewhere, Junior’sCheesecake is amazing!Enough said.

hen Gilbert Sakaguchiopened his firstMagoo’s pizzeria onthe famous Waikikistrip more than 40

years ago, he had no idea what successthe business would bring.

“Even for a small space, they wouldsometimes do more than 400 deliveriesin one day,” says Marshall Sakaguchi,son of the business owner.

Today, longtime and new customersalike can enjoy Magoo’s gourmet, brickoven pizza at its new food truck of thesame name.

“We decided to utilize a food truck inorder to keep overhead costs low,” saysSakaguchi. “It allows us to focus moreon maintaining high quality ingredientsand maximizing the flavor of every dish.”

Since opening last month, Magoo’s al-ready has cultivated an impressive fanbase.

“People come up all the time andcomment on how they used to orderpizza from the original location back inthe 1970s,” says Marshall. “Eating herebrings back a nostalgia that other busi-nesses can’t reproduce.”

Favorite pizzas include Magoo’s “Fa-mous Combination” Pizza (starting at$9.50), a sizzling symphony of pepper-oni, mushroom, pork sausage, bell pep-pers and black olives. For those looking

to satisfy varying tastes, Magoo’s Pot-pourri Pizza (starting at $9.50) is a tastyoption, as each quarter of the pizza of-fers different toppings.

One of Magoo’s most valuable tradesecrets is the pizzeria’s homemade sauce.

“Our pizza sauce is completely madefrom scratch and consists of almost 20different spices,” explains Marshall. “Onlymy father and uncle know the exactrecipe.”

Diners also will notice Magoo’s pizzacrusts are never too thick or paper-thin.

“We make it a point to always preparefresh dough for each day and neverfreeze it,” he says. “Because of that, thepizza crust always has the perfect thick-ness — a medium between thin andhand-tossed.”

The food truck also boasts an impres-sive array of hot and cold sandwiches.Stand-out choices include Hot Ham andMushroom Sandwich (starting at $7.95),as well as the famous Pastrami Sand-wich (starting at $7.85).

“Our ingredients are all fresh and in-dividually prepped,” Marshall says. “Evenour meat, including the pastrami, is of ahigher grade and has just the rightamount of fattiness to give it thatsmoky, rich flavor.”

In the coming weeks, Magoo’s alsowill be serving a number of comfortfood dinner options, such as the clas-sic Chicken Dinner ($9.50), a dry-rub,oven-roasted chicken with a choiceof rice or french fries, as well as a po-tato salad made with crab, olives and

red potatoes. Another popular dinneroption is Fish and Chips Dinner($9.50), which includes a rusticallyprepared white fish with homemadetartar sauce.

As a small business, Magoo’s offersadvantages that one would not nor-mally receive at a larger chain pizzeria.Customers oftentimes will see the cooksconstantly opening and closing the ovenevery two to three minutes, ensuringthat each pizza is rising and sizzling atthe ideal rate.

“This isn’t fast food,” says Marshall.“We have to pay constant attention toeverything we make if we want the qual-ity to be right.”
