In the eyes of a devout food enthusi-ast, nothing says “Hawaii” more thana festive spread of “ono kine grindz,”

including a bowl of sticky poi with a lot oftexture, lomi salmon bursting withrefreshing flavor, hearty kalua pig and, ofcourse, you gotta have the lau lau!Imagine earthy and rich luau leaveswrapped snugly around morselsof savory pork (on some occa-sions, seafood) and then steamedto perfection. Lau lau is the mostprecise definition of “ono, youknow.”

And when you have good lau lau,you really don’t need all the bellsand whistles of certain side dishesto go along with it. But hey, I’m notcomplaining — bring on anotherhelping of squid luau, chicken longrice and haupia — that’s all just ic-ing on the cake.

So, because I’m in deep love withlau lau, this week, it was time tosatisfy this craving of mine anddelve in to these luscious local cre-ations at the following Ono, YouKnow establishments. Oh, wow, laulau … This is the perfect time to un-wrap layers of goodness!

As I perused the menu during my most

recent visit to OceanHouse, general managerDavid Nagaishi pointedout an entree on themenu that I had neverset sights on before. Fora unique taste of Hawaii,he highly recommended

Seafood Lau Lau.Priced at $33.50, Ocean House’s

Seafood Lau Lau is a true testamentto the eclectic flavors of the sea —an evolution of lau lau is how I wouldbest describe it.

“Lau lau is typically served withpork, but our Seafood Lau Lau isunique, as it consists of fresh mahimahi, shrimp, seared scallops, pur-ple sweet potato grown on Molokaiand authentic luau leaf,” Nagaishiexplains. “We sautee our lau lau ina soy sake garlic butter sauce, andthis sauce is so tasty — it reallybrings the dish together.”

For the experimentalist, SeafoodLau Lau receives top honor. Finally,the main entree is wrapped nicelyin ti leaf and served on a bed ofjasmine rice.

“Both locals and tourists love thisdish,” Nagaishi exclaims. “You haveto try it. It’s really good. We serveabout 25 orders a night. It’s defi-nitely a specialty here.”

As it continues to live up to itsreputation as the ultimate spe-cial occasion restaurant, Azure

Restaurant at The Royal Hawaiian, ALuxury Collection Resort, serves as theideal destination for celebratingValentine’s Day Feb. 14.

With the iconic pink palace and pictur-esque view of Diamond Head serving asbackdrops and gentle breezes passingthrough the open-air setting, diners takein the sights and sounds emanating fromthe glittering ocean and golden sands ofWaikiki Beach while enjoying a host oftantalizing creations prepared by execu-tive chef Jon Matsubara. Visitors fromaround the world continue to flock to therenowned locale, and local residents areencouraged to make the short trip intoWaikiki to enjoy the flavorful foray.

“When you come to eat here, you’resitting in King Kamehameha’s kapu va-cation spot, which he cherry-pickedback in the day,” explains Matsubara.“You can just sit and relax, and enjoy thesights, sounds and smells. You can’t beatthe overall ambiance, especially if thesun is setting and you’re with your lovedone, there’s so much to look forward to.We also offer impeccable service tocomplete the experience.”

Matsubara crafted the special four-course Valentine’s Day menu ($125 perperson, $160 with wine pairing) and cou-pled the offerings with wines selectedby general manager and sommelier MikeSwerdloff with the goal of presenting“really good food and special items” thatcomplement the luxurious setting. Dinersstart the evening with Chilled Hamachiserved with marinated ikura opal shiso,

Japanese horseradish and yuzu, andmay pair the appetizer with Taittinger laFrancaise champagne. The appetizer isfollowed by Tiger Prawns served along-side Hamakua Springs tomato, freshmozzarella, sea beans, Nashi pear andJapanese pickled plum.

“The starters offer very familiar flavors,but with a different presentation and anew take on some of the flavor profiles,”Matsubara explains. “We grill the prawnswith a garlic marinade and top themwith a white wine and butter sauce.”

The entrée course allows diners theoption of selecting from one of threetantalizing dishes. The Grilled Prime RibSteak is served with smoked bacon andsweet corn, Japanese horseradish andcrème fraiche potatoes along with asauce Bordelaise, and is paired withL’aventure Optimus 2010. Those cravingseafood are invited to reel in Kona Lob-ster Linguine with a spiced and roastedlobster sauce, brandy and saffron Thaibasil, abalone mushrooms, baby spinachand marinated tomato, which pairs withQupe Bien Nacido Cuvee 2010. HawaiianFresh Fish with Chinese flowering cab-bage, Hamakua Coast shiitake mush-rooms, Alaskan crab potatoes and an

aromatic bouillabaisse rounds out the maincourse selections, and is paired with JJPrum Wehlener Sonnenuhr Spatlese 2007.

“When people go out, we want to offersomething for everybody to enjoy,” saysMatsubara when describing the vast arrayof flavors presented in the entrée course.“One of my favorite dishes is the lobster lin-guine. The flavors are so good that I wantedto showcase it for Valentine’s Day. You can’tgo wrong with the steak, and we also offersomething lighter with the fresh fish.”

And, to complete the evening, the Valen-tine’s Day feast is capped with a trio of de-lectable desserts. The sweet sensations in-clude: Mini Pavlovas with Tahitianvanilla-infused whipped cream, marinatedKula strawberries and strawberry sorbet;Waialua Estate chocolate mousse domewith crushed Chambord-marinated rasp-berries; and Lilikoi Chocolate Tart with pas-sion fruit pearls. The final course is pairedwith Peter Lehmann Botrytis Semillon 2010.

“Azure is a special event restaurant, andthis Valentine’s Day menu was created tosatisfy the local palate — it’s not compli-cated, but it’s well-executed food that I re-ally like to eat, and local customers will en-joy,” Matsubara says.

Guests are encouraged to reserve theirtables for the special Valentine’s Day expe-rience as soon as possible, as the event willundoubtedly sell out.

In addition to the special Valentine’s Daymenu, Matsubara dazzles guests at AzureRestaurant with his culinary wizardry on anightly basis. The acclaimed chef hascrafted a menu that features local flavorsand ingredients while also incorporatingThe Royal Hawaiian and Starwood Hotels& Resorts’ mission of incorporating sustain-able practices.

The dinner menu includes savory seafoodselections, such as Smoked Swordfishpoached in aromatic duck fat and servedwith Kahuku Sea Asparagus and HamakuaTomato ($36) and Kona Lobster ($20),which is paired with Big Island avocado andsauce carotene.

Diners also may delve into other chef-rec-ommended entrees, including Crispy Breastof Duck ($36) served with a taro brandypuree, duck fat-charred Brussels sprouts anda port wine gastrique, and Hawaii RanchersButter Poached Filet & Foie Gras ($29),which is served alongside Hamakua mush-rooms and a black truffle Madeira sauce.

“We’re right on the beach, and you areable to watch Waikiki unfold before you,”says Swerdloff. “It’s very romantic, and asbeautiful a setting as you can get when thesun is setting. The atmosphere allows youto relax at the end of the day.”

Customers are encouraged to take ad-vantage of free validated valet parking atthe Royal Hawaiian while dining at Azure.

If you’re in search of an exciting newlate-night spot, look no further thanDon Day Yakiniku, which has been

heating up Honolulu’s night crowdswith irresistible Korean cuisine sinceAugust 2011.

Open from 5 p.m. to 2 a.m. daily, theeatery caters to everyone from casualdiners looking for a relaxing dinner tothose who want to hang out all night.With so many yakiniku restaurants to

choose from, Don Day siz-zles with unique featuresthat keep it a notchabove the rest.

Even though it’s situ-ated off the beaten pathbehind storefronts on

Keeaumoku Street, the restau-rant stands out as an oasis in acongested area with its spaciousoutdoor dining lanai in a pleasantgarden-like setting.

The tables feature durablecurved grill tops, which were tra-ditionally used in Korea to soakup flavor from meats and veg-etables, while letting any fat dripdown the sides. What’s more isthat Don Day is the only estab-lishment on the island to offeryakiniku dining outdoors, whichalleviates the smokey indoor en-vironment commonly associatedwith these types of restaurants.

Patrons can fire up meat or combi-nation platters at the table and enjoysalad, rice and up to eight side disheswith their meal. Owner Charlene Miura,along with daughter Yuri, who helps outat the restaurant, suggest grilling fer-mented kim chee as well, a healthy Ko-rean staple.

If you’re a grilling pro, you can takehold of the tongs, while a friendly waitstaff is ready to help any first-timers.

“A lot of people are not familiar withKorean yakiniku style,” says Yuri, “so we’llgo to the table and tell them about eachmeat. Then we’ll cut it and cook it forthem.”

In addition to each grilled sensation,Don Day offers a host of delectable a lacarte items. Among the most populardishes are fried or steamed Mandoo($10.95 for eight pieces), which are filledwith minced pork, ground beef, a varietyof vegetables, tofu and long rice. Regu-lars have come to know them as “fatmandoo” because of their notable size— and tastiness.

Another must-have is the traditionalKalbichim ($22.95), or double-cookedbraised short rib, served with potatoes,carrots and daikon. The meat initiallygains flavor when it is slowly cooked forhours. Then, once a customer orders thedish, it’s cooked again for an incrediblyrich short rib that falls off the bone.

The eatery also is known for its uniqueselection of soju cocktails in flavors suchas cucumber, lemon, yogurt and straw-berry. These fun and flavorful sips arethe perfect accompaniment to any meal.

If you haven’t been to Mitsu-Ken, you’ve been to Mitsu-Ken. By that I mean the long-

time Kalihi okazu is like othersof the same style, no tables,street-front ordering, goodprices and long lines. At leastthe good ones have long lines,and Mitsu-Ken can have somevery long lines.

Brad Kaneshiro opened Mitsu-Ken 20 years ago and borrowedthe best recipes from friendsand family to create a comfort-able menu that is as simple as itis tasty. The adobo came fromhis aunt on Maui, the Maki Sushifrom his mother-in-law and thegarlic chicken, oh my, the garlicchicken, from a good friend. Ev-idently a very good friend be-cause the garlic chicken is whypeople keep coming.

Yes, there are other things totry, in fact, many things to try.But to quote an online commen-tator, “Get the fried garlicchicken. Did you hear that?FRIED GARLIC CHICKEN!”

Not convinced?“OH, GARLIC CHICKEN, how I

LOVE you!”

Finally for the locals, you’d besurprised as to how many visi-tors to Oahu find this place, “Thischicken was broke 'da mouth!”

All this for $2.10.It’s not hard to understand the

affection. The chicken is crunchy,sweet, tangy, moist and the darksauce topping provides a perfectaccent of flavor. We’re calling it a

Three Bears meal and Goldilocksis the throng of customers whomake this a daily habit. It’s nottoo salty, not too sour and nottoo sweet. It’s just right.

And?My own visit began with the

chicken and included the GreenBean and Chicken Stir Fry($2.15) — yum; Chow Fun ($1.40)— outstanding; and the MakiSushi ($3.60 for an eight-slice

roll or 95 cents each) —huge!

Other options mayinclude Stuffed Ahi($5.50), Teriyaki Meat-balls ($1.75), ChickenKatsu ($2) or Nishime($2). Many of these canbe turned into a platelunch for just a few dol-lars more.

If there is a downsideto Mitsu-Ken it is that itcloses early. But that’snot really a bad thing.Mitsu-Ken is a family-runrestaurant and its hoursreflect the availability ofthe wives and cousinswho man the stations.Sherrie Kaneshiro, thebookkeeper, head of hu-man resources, and overall do-it-all, says theyhave thought about ex-

panding its hours, but the familycontrols of the family restaurantare too important. But change iscoming.

Mitsu-Ken is scheduled toopen in its new location, 2300 N.King St., across from New CityNissan, Feb. 15. Everything will re-main the same except the park-ing — they’ll have plenty.

A nice international twist tothe salad is found in the

proscuitto (salted and dry-cured ham leg) from Spain.

Color is key when it comes topresentation, so, of course, vibrantred tomatoes are a focal point of thesalad. Leong keeps it local utilizingfresh tomatoes from Wow Farm inWaimea on the Big Island.

In addition, truffle oil elevates thedish to a whole new level with itsearthy, floral essence thatprovides a depth to the salad thatis incomparable. A little truffle oilgoes a long way — a couple ofdrops is all you need.

Cheese, please! Yet, thischeese is nothing likeyou’ve ever tasted before.It’s housemade truffledmozzarella — somethingthat Leong created on hisown. “I used to use plainmozzarella in a lot of mysalads, but one day I wasthinking why can’t we addthings to it? So, I now adddiced truffles to this cheese and it is a greatenhancement to the salad.”

There’s more to the Tomato and Mozzarella Salad at 3660 on theRise than meets the eye. This relatively new starter made itsdebut on the restaurant’s menu about four months ago, and

according to chef de cuisine Lydell Leong, this healthy salad has beena hit among dinner patrons, boasting an impressive culmination of fla-vor profiles that are pleasing to the palate.

As the dish’s sole creator, Leong believes it’s essential to highlightlocal ingredients, which he exquisitely intertwines into the salad withsimple elegance.

Micro basil is a prominent componentto the dish. Locally sourced, micro

basil is basically tiny seedlings ofherbs and greens, which provide the

perfect taste. According to Leong,micro basil differs from mature basilbecause it doesn’t give off a strong,pungent aroma. “The taste of microbasil is perfect and sweet, which is

why I can add a nice handful of it tothe dish. It doesn’t outshine the other

delicate flavors in the dish.”

While micro basil is delicious onits own, Leong has decided totoss it with a blend of Kona seasalt and truffle oil. Interestingfact about Kona sea salt is thatit's not your average table salt.In fact, it originates from seawater and has a pure andunadulterated taste. It also addsa bit of crunch and texture tothe dish, as the granules are ofvarious sizes.

This premier salad was made on awhim, according to Leong. “A localfarmer came to me with micro basiland at that moment I happened tobe stretching mozzarella cheese andalso talking to a farmer on the BigIsland about tomatoes. At thatmoment everything culminatedtogether and resulted in this dish. Itall fell right on to the plate.”

It’s all in the details: Balsamicreduction drizzle is heated in the

In many ways, Larry’s Bakery repre-sents an era of bake shops that hasgone by. While mom-and-pop

shops may have carried similar bakedgoods in the past, those types of bak-eries are hard to come by these days.But luckily for nostalgic dessertenthusiasts, Larry’s Bakery still carriesa number of menu items that it hadwhen it opened back in the 1960s.

“A lot of the things that we have inthe showcase daily are things that wehad before,” co-owner Iris Yafuso says.“And a lot of times you don’t see it inother bakeries because these are allmy dad’s recipes.”

Yafuso’s father is the famed Larryhimself — and she says that he was

behind many of the tasty treats thatmany remember from their youth. Andthanks to Yafuso and her older brotherLance, people still can enjoy many ofthose treats today, as well as a rangeof newer items.

One example of a tasty recipe fromthe past that has been brought backis the Butter Log ($5), a sweet, deca-dent roll.

“The Butter Log is to die for!” Ya-fuso says.

The Jelly Roll ($5), which featuresstrawberry jelly rolled with shreddedcoconut on the outside, is anothertasty blast from the past.

“The Jelly Roll is really an oldrecipe,” Yafuso explains. “That wasdone in the 1960s, and it was sopopular.”

Today, the treat is especially popu-lar with people who remember it fromthat era.

“People from that generation …

Most mornings, the crew at Larry’sBakery gets up at 3 a.m. in order toprepare all of the fresh baked

goods for the day. Brother-and-sister team of Iris and Lance Yafusoco-own the bakery, and a large part of their dedication comesfrom the desire to keep their father’s legacy alive.

Their father, Larry, opened the bakery in the 1960s. The shopwas a huge success then, and has continued to attract new gener-ations of customers. When Larry passed away, the Yafusos’ mothertook over the company. The Yafusos have fond memories of work-ing in the bakery after school and during summer breaks as kids.

Although Iris went on to attend college and baking schoolbefore returning to help out with the family business, her mostvaluable lessons were learned right here in the bakery.

“We are still using my dad’s old recipes, giving it a flair,” sheexplains. “But really, a lot of the stuff is just bringing back his old stuff.

“A lot of the things that we do bring back tend to attract peoplewho used to come here.”

As a family-run establishment, Larry’s Bakery has a tight-knit staff.“We are lucky to have our crew with us. A lot of the crew con-

sists of family or friends, classmates of ours from high school andcollege,” she states.

While Larry’s maintains its foundations, it also embraceschange — another trick of the trade that Larry passed down.

“I remember one thing that my dad said was, ‘you have tochange with the times,’” Yafuso says.

would buy one and they would come back and say,‘You are not going to believe I ate the whole thing,’”she says. “They just started reminiscing of whenthey had it long ago.”

That’s not the only thing the customers are rav-ing about. Yafuso says that people have been “goingcrazy” for Loaf Cake ($6), which includes PineappleMacadamia Nut, Chocolate and Lilikoi flavors. Ya-fuso adds that these items also can be purchasedfor fundraising.

Larry’s Bakery has plenty of new items, too. Whilekeeping true to its roots, Larry’s also is up-to-datewith current trends, such as decorated cookies andwhat cartoon character to put onyour child’s birthday cake.

And when special occa-sions roll around, Larry’s isalways rolling out newitems.

Also, once again, choose from chickenlong rice or squid luau and a bowl of poi orrice to complete your meal. And at last, ahot commodity lies in the Lava Rock Plate($8.50) — a smaller plate for the not so bigappetite — which features pork lau lau andstew gravy with rice, a nice portion of lomisalmon and a slice of haupia.

Shiro’s Saimin HavenA saimin sanctuary of sorts, Shiro’s

Saimin Haven holds the secret to some of

the tastiest noodles I’ve ever tasted, whichmakes the quality of life just that muchbetter. With more than 60 saimin optionsto select from, the noodles are made fromscratch and the broth is, of course, a se-cret recipe. Yet, do realize that there areactually close to 200 local creations onthe menu, meaning there’s a whole lotmore than simply saimin at this Aiea din-ing establishment.

Yes, even lau lau is a given here, and ac-cording to manager Bryce Fujimoto, it rankshigh among the list of diners’ favorites.

“Lau lau started off only as a special,but customers loved it so much that nowwe make it a point to have it availableevery day,” he says.

Lau Lau with Beef Stew ($9.25) seemsto be the most highly requested item, yetLau Lau with Lomi Salmon ($8.50) andLau Lau with Kalua Pork ($9.65) don’t fallfar behind, and they all are served withhot vegetables and your choice of starch,be it white/brown rice, french fries ormashed potatoes.

And the specials for which lau lau firstmade a name for itself are still on themenu. If you dine here on Fridays or Sat-urdays, treat yourself to the Hawaiian Platewith Rice ($9.30) or the Hawaiian Platewith Poi ($10.40). Both Hawaiian Platesboast a slew of local classics, includingpork lau lau, chicken long rice, lomi salmonand two scoops of rice or one scoop ofrice and poi.

I asked Fujimoto what exactly makesShiro’s lau lau unique and oh, so flavorful,and he eagerly dished the specifics aboutthe top-notch lau lau flair.

“What really brings a great taste to ourlau lau is the combination of pork butt,pork belly and butterfish. Not many peo-ple serve butterfish in their lau lau. Also,the wetland taro brings a nice flavor tothe luau leaf,” he shares.

year to cleanse the body and tohonor the Buddhist tradition thatnothing living should be killed onthat day, ensuring good luck andfortune in the coming year.

At Golden Palace SeafoodRestaurant in Chinatown, you canenjoy traditional jai any day of the

year (whether or not you thinkyour body needs cleansing) — andfor those who don’t eat meat orfish, that’s something to celebrate.

“We keep it completely vege-tarian,” says manager Gary Lamof Golden Palace’s quite afford-able Jai ($6.95), a bowlful of sym-bolism containing long rice, tofu,mushrooms, snow peas, babycorn, bok choy and carrotsamong many more savory flavorsand textures.

Jai isn’t the only “completelyvegetarian” dish you’ll discover onthe Golden Palace menu. BlackMushrooms with Oyster Sauce($6.95) is self-explanatory, withthose meaty, moist ’shrooms tak-ing the spotlight and served sim-ply on a bed of lettuce. Hmmm,oyster sauce?

“Our oyster sauce doesn’t con-tain any oyster," notes Lam, who

adds that one of his favoritedishes is Garlic Sauce Stir-FriedChinese Broccoli ($5.95). It’seasy to see (or rather, taste)why, since the garlic adds justthe right pungent kick to thecrisp-tender broccoli, a crucif-erous vegetable that tops thelist of super-good-for-you foods.

Braised Tofu with Vegetables($6.75) is a favorite among cus-tomers, in which the fried tofucubes are combined with choisum, carrots, mushrooms andmore. It’s a regular on most Chi-nese restaurant menus andGolden Palace does it just right.

Chinese New Year’s Day comesaround only once a year, but youcan celebrate a new day everyday at Golden Palace.

The new Mamaya offers thesame delicious, local Japanese

dishes as the original locationwith a few particularly invitingenhancements. Now locatedwithin the walls of its own store,the Pearl Kai Mamaya establish-ment offers significantly moredining space for patrons to sitand enjoy their meal.

One of the main features ofthe new restaurant is its full-blown deli station, which allowscustomers to create custombentos. “Our deli items arefreshly made each day from thehighest quality ingredients,”says division manager MonetteGuevarra-Lastino.Side dishesavailable onthe deli lineinclude lo-cal favoritessuch as

FriedNoodles ,Mochiko Chicken,Tofu Steak andEggplant withTeriyaki Glaze ($7.75 perpound).

Past the deli line, Mamaya alsoboasts an impressive poke sta-tion where consumers can pickfrom freshly made Spicy Ahipoke, Oyster Sauce Ahi poke,Shoyu Ahi poke and others.Prices are reasonable with themini Poke Bowl at $5.75 and a

regular Poke Bowl at $7.50. For those whomay not have the

fers a variety of pre-made deli-cious bento boxes such as MisoButterfish ($9.95) and MochikoChicken ($7.50), two of the mostpopular dishes on the menu.

Additionally, customers maychoose to try any of Mamaya’spopular Donburi bowls (startingat $5.75) or Musubis (starting at$1.30). “With so many tasty op-tions, there is something foreveryone no matter what yourtastes are,” says Guevarra-Lastino.

Mamaya’s dedication to con-tinually improving the flavor andquality of its menu items has re-sulted in the creation of severalsignature ingredients. “We offera special multi-grain rice chock-full of ingredients such as wholeoats, red rice, rye berries for cus-tomers who want a healthierrice option without compromis-ing on taste,” says Guevarra-Lastino.

Other Mamaya-exclusivefoods include a special

miso sauce and honeymustard dressing,which the chefs useto marinate manydeli and bento items.“Rather than usestore-bought sauces,we prefer to use ourown,” says Noguchi.“People always askwhere they can buythem, but they arespecially made forMamaya.”

Equally as important as fla-vor and quality, cleanliness isalso a top priority at Mamaya.Whereas many restaurants la-bel their bento boxes with asell-by date, Mamaya’s bentolabels indicate a sell-by time.From the moment the chefprepares any bento, its contentstays on the table for only fourhours before it is thrown away.“This ensures every dish is asfresh and flavorful as possible,”explains Guevarra-Lastino.
