The nose of the Pinot Gris

Reserve is characterized by

aromas of pear and nuanced

by notes of almond and hazel-

nut. The palate the mouth is

mellow with butterscotch fla-

vors due to partial oak aging

and malolactic fermentation.

An overall mineral taste is left

as a final impression which

reflects, to perfection, the character of the cobble-

stone soil.

Serve chilled with fish, salads, fresh vegetables, as-

paragus and fresh fruits.

The nose of the Syrah is a mixture of black currant, bay leaf and thyme. Aged 35% in

new oak, the smokey mouth gives way to an intense spicy black pepper finish.

recommend a variety of cheeses, such as cheddar, goat, aged gouda, gruyere, and

camembert. Enjoy it now or cellar for up to 5 years.

black currant color. Aromas of

prune, raisin and smoked oak,

with a touch of licorice notes.

On the palate, this full bodied

We also recommend a variety of cheeses,

Time to turn our toes purple. We are excited

to host our annual grape stomp and wine club

pick up party. The grape stomping competition

will run at 1, 3, & 5 pm. Bring your partner and

compete for title of stomping champion. This

year in addition to our grape stomping compe-

tition we will be hosting the Bento Food Con-

cession from 11-2 pm. Entertainment will be

provided by 2 Loud Productions. Be prepared

for a wild and fun afternoon.

In the Winery . . . “Yellow Fever is coming up” For many of us, the end of summer signifies the end of the sunny days. Since my

childhood, it has symbolized, the agitation of my grandfather and father preparing

the cellar for the upcoming harvest. We jokingly call it the “Yellow fever” at home

because it describes the impatience and excitement of grower’s waiting to taste the

newly fermented juice, which displays a beautiful gold color.

This harvest will be my third at Del Rio and I have a new assistant, Jonathan

Maldonado, helping me run the daily duties in the cellar. A new intern from France,

a young graduate from enology, Nicholas Caillaux will be working with us this

vintage and sharing his knowledge in winemaking.

I have also been often complimented from many of you for the quality of the wines

and I am very grateful. I will continue to produce high-quality award-winning

wines to be enjoyed for you all.

• 1 pound fresh asparagus, trimmed and cut into 1 inch pieces

• 1/2 cup pecans, broken into pieces

• 2 heads red leaf lettuce, rinsed and torn

• 1/2 cup frozen green peas, thawed

• 1/4 pound smoked salmon, cut into 1 inch chunks

• 1/4 cup olive oil

• 2 tablespoons lemon juice

• 1 teaspoon Dijon mustard

• 1/2 teaspoon salt

• 1/4 teaspoon pepper

Bring a pot of water to a boil. Place asparagus in the pot, and cook 5 minutes, just

until tender. Drain, and set aside. Place the pecans in a skillet over medium heat.

Cook 5 minutes, stirring frequently, until lightly toasted. In a large bowl, toss to-

gether the asparagus, pecans, red leaf lettuce, peas, and salmon. In a separate bowl,

mix the olive oil, lemon juice, Dijon mustard, salt, and pepper. Toss with the salad or

serve on the side.

DirectionsDirectionsDirectionsDirections In a large soup pot heat 3 tablespoons of

olive oil over medium heat. Add the

onions, garlic, rosemary, and thyme and

saute until the onions are tender, about

2 minutes. Toss the beef cubes in salt

and pepper and flour. Turn up the heat

to med-high and add the beef to the pot.

Cook until the beef is browned and

golden around the edges, about 5 min-

utes. Add the Marsala wine. Using a

wooden spoon, gently stir up all the

brown bits off the bottom of the pan.

Add the butternut squash and sun-

dried tomatoes and stir to combine.

Add enough beef broth to just cover the

beef and squash. Bring the stew to a boil

over high heat, then reduce the heat to

low and simmer, covered, for 1 hour.

Season the stew with additional salt and

pepper to taste. Sprinkle with the

chopped parsley. Serve with crusty

bread alongside.

• 2 tablespoons all-purpose flour

• 1 cup Marsala wine

• 1 pound butternut squash, trimmed and

cut into 2-inch cubes

• 1/4 cup chopped sun-dried tomatoes

• 3 to 4 cups beef broth

• 2 tablespoons fresh chopped flat-leaf

parsley

• Crusty bread, for serving

Vineyard Hikes

This is your opportunity to see Mother Na-

ture at its finest before the big crush begins!

Jolee and Jennifer will be hosting a guided 3

mile hike through the vineyard every Sunday

and Wednesday throughout September. We

will meet in the tasting room parking lot.

Please arrive a bit early as we will be leaving

on time.
