DEDICATION
This year’s Deerfield Valley Farmers’ Day Fair is dedicated to Leon Boyd.
Leon has been helping the Fair for 30-plus years. He started out in the beginning
setting up the week before the fair and keeping the grounds clean and picked up
during the fair and continues to do so to this day. He plays a large part in the
running of the horse pull – raking, running the loader and pinning throughout the
competition. He has played in the Country Jam for years and has been the
superintendent for the last few years. Leon continues to enter his sunset pictures in
the exhibit hall.
The Trustees of the Deerfield Valley Farmers’ Day Fair are deeply appreciative of
all his support and his help for the many years he has been helping us. Please join
us in thanking Leon for his many years of service.

3rd place: 8’’ Square Brownie Pan
YOUTH ENTRIES – BASIC WHOLE-GRAIN COOKIES Wheat and oats combine to make a cookie that's indistinguishable from one made
with white flour, except in color. You have a couple of options for the oats used in
this recipe. For a cookie with a craggy, oatmeal cookie-like appearance, use quick
oats. For a smoother cookie, one that looks more chocolate chippy, grind the oats in
a food processor, or substitute oat flour.
Ingredients:
1/2 cup butter
1/3 cup + 1 tablespoon granulated sugar
1/3 cup brown sugar, light or dark, packed
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1 large egg
3/4 cup King Arthur white whole wheat flour
3/4 cup quick rolled oats, ground in a food processor or blender if desired
2 tablespoons orange juice, optional*
2 cups chips, nuts, and/or dried fruit – your choice!
*use the optional orange juice if you're adding chips, nuts, fruit, etc. don't add the
orange juice if you're not using any add-ins.
Directions:
1. Beat together the butter, sugars, salt, baking soda, baking powder and vanilla till
well combined.
2. Add the egg, beating till smooth. Scrape the sides of the bowl, and beat again till
smooth.
3. Add the flour and oats, beating to combine.
4. Beat in the orange juice, then the add-ins.
5. Cover the cookie dough, and refrigerate until thoroughly chilled; at least several
hours, or overnight.
6. When you're ready to bake, preheat the oven to 375°f. Lightly grease (or line with
parchment) two baking sheets.
7. Drop the cookies by the traditional teaspoonful (about 2 measuring teaspoons,
about a 1" ball) onto the prepared baking sheets, spacing them about 2" apart. A
teaspoon cookie scoop works well here.
8. If the cookie dough has been refrigerated, bake the cookies for 13 to 14 minutes,
until they're a very light golden brown, and a bit darker around the edges. For
unrefrigerated dough, bake for about 11 minutes. For softer cookies, reduce the
baking time by about 2 minutes.
9. Remove them from the oven, and cool right on the baking sheets.
Yield: about 5 dozen small cookies (with 2 cups add-ins).
ADULT ENTRIES – FRUIT BREAKFAST CAKE This soft, almost soufflé-like breakfast dish is kind of a casserole, kind of a cake —
and definitely tasty! This one-bowl treat is simplicity itself to throw together first
thing in the morning.
Ingredients:
3 large eggs
heaping 1/2 cup sugar
6 tablespoons melted butter
1 cup small-curd cottage cheese or part-skim ricotta
1 cup sour cream (low-fat is fine)
1/2 teaspoon buttery sweet dough flavor or 1 teaspoon vanilla extract
3/4 cup king arthur unbleached all-purpose flour
1/2 teaspoon salt
1 1/4 teaspoons baking powder
1 1/2 cups berries or other fruit, fresh or frozen
cinnamon-sugar, for topping
Directions:
1. Preheat the oven to 350°f. Lightly grease an 8" round cake pan that's at least 2"
deep. If your 8" round pan is shallower than 2", use an 8" square pan, or 9" round
pan.
2. Beat together the eggs and sugar until smooth.
3. Add the butter, cottage cheese or ricotta, sour cream, and flavor/extract, beating
until well combined.
4. Add the flour, salt, and baking powder, stirring or beating gently to combine.
5. Pour the batter into the pan, and scatter the fruit or berries evenly over the top.
6. Bake the cake for about 50 minutes, until a tester inserted into the center comes
out clean.
7. Remove the casserole/cake from the oven, and sprinkle the top heavily with
cinnamon-sugar, if desired. Let it rest at room temperature for 30 minutes, to firm.
8. Serve warm, in wedges, squares, or rounds cut with a biscuit cutter.
Yield: 8 to 10 servings.
Remember: we are looking for your version of these recipes –
have fun, be inventive!

must attend.
For entry blank, fees and rules go www.dvfair.com. For additional infor-
mation, contact Mark or Amy Reynolds: 380.4772; email: [email protected].
Note: The Demolition Derby event has attracted car debris being left on the
field and around the dumpster, all throughout the year. A mindset has apparently
developed that since the Fair disposes of such large quantities of this type of trash
they won’t mind an extra battery, muffler, or bucket seat. The fact is, this
accumulation of trash takes its toll on our neighbors. Please help us keep the
grounds clean throughout the year.

to the Fair and any time you can volunteer at the fair to setup, operate,
and clean up when the fun is over. Visit our website from time to
time for breaking news on the upcoming fair at www.dvair.com. It’s
a great source of information about the fair, the events, and to get
