When a potato has more catalase, it means that it produced the
catalase in order to decompose hydrogen peroxide, thus the more
catalase a potato has, the more hydrogen peroxide it has in the
body.

More hydrogen peroxide means more metabolic reactions, and more
catalase would mean greater cellular activity
